SAUSAGE-FILLED CREPES

I first made this recipe 30 years ago, when my children were young. It's still one of their favorites and is always requested on special occasions. -Karen Collins, Westminster, Colorado

3 large eggs
1 cup whole milk
1 tablespoon canola oil
1 cup all-purpose flour
FILLING:
1 pound bulk pork sausage
1/4 cup chopped onion
3 ounces cream cheese, cubed
1/2 cup shredded cheddar cheese
1/4 teaspoon dried marjoram
1/2 cup sour cream
1/4 cup butter, softened
Minced fresh parsley

Steps:

  • In a small bowl, combine eggs, milk and oil. Add flour and mix well. Cover and refrigerate 1 hour., Heat a lightly greased 8-in. nonstick skillet; pour 3 tablespoons batter into the center of skillet. Lift and tilt pan to coat bottom evenly. Cook until top appears dry; turn and cook 15-20 seconds longer. Remove to a wire rack. Repeat with remaining batter, greasing skillet as needed. When cool, stack crepes with waxed paper or paper towels in between., Preheat oven to 375°. For filling, in a large skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. Add cheeses and marjoram. Cook and stir until cheese is melted. , Spoon about 2 tablespoons of filling down the center of each crepe. Roll up and place seam side down in a greased 13x9-in. baking dish. , Cover and bake 40 minutes. Combine sour cream and butter; spoon over crepes. Bake, uncovered, 5 minutes or until edges are lightly browned and sauce is heated through. Sprinkle with parsley.

6 beaten eggs
2 cups milk
2 tablespoons oil
2 cups flour
1 teaspoon salt
2 lbs bulk hot smoked sausage
1 cup onion (chopped)
1 cup shredded processed cheese
2 packages cream cheese (3 oz.)
1 cup sour cream
1/2 cup melted and cooled butter

Steps:

  • Crepes Batter:Combine eggs, milk and oil in bowl. Add flour and salt, beating well until smooth. Pour 2 tablespoons batter into greased 9-inch skillet. Tilt. Cook on one side and invert onto plate. Repeat to make 20 crepes.
  • Place 2 tablespoons sausage filling down center of each crepe and roll up. Layer rolled crepes in large bsaking dish. Bake at 375 degrees for 30 minutes, covered. Spoon topping over crepes and bake, uncovered, 5 minutes longer.
  • Sausage Filling:Remove casing and crumble in skillet.
  • Add onion and cook until done. Drain and add cheese and cream cheese, stirring until melted and ingredients are well blended.
  • Topping: Mix butter and sour cream together.

1 small onion, chopped
3 ounces cream cheese, cubed

Stir in the cream cheese, Monterey Jack cheese and marjoram; set aside., In a large bowl, combine the milk, eggs and oil. Combine flour and salt; add to milk mixture and mix well. Filling:
1 pound sausage
1/4 cup chopped onion
1/2 cup shredded processed cheese (or cheddar)
3 ounces cream cheese
1/4 teaspoon dried marjoram
Crepe Batter:
3 beaten eggs
1 cup milk
1 tablespoon cooking oil
1 cup all-purpose flour
1/2 teaspoon salt
Topping:
1/2 cup dairy sour cream
1/4 cup butter/margarine, softened

Steps:

  • FILLING: Cook sausage and onion in a skillet, drain. Add cheddar & cream cheeses and marjoram, mixing well. Set aside while you prepare the crepes. CREPES: Whisk together milk, eggs and oil. Add flour and salt. Beat smooth. Using stove on medium-high to high heat, pour roughly 2 tbsp of batter into a greased 6-inch skillet, tilting skillet to cover with batter. Flip once the top side is no longer runny. Repeat until you have 16 crepes or run out of batter. Place 2 tbsp filling down the center of each crepe, roll up and put in baking dish. Cover and chill (This is important! Preferably, prepare and stuff the crepes the day before you serve them and refrigerate them overnight). About an hour before you want to serve the crepes, bake covered for 40 minutes at 375°. Finally, mix topping ingredients (sour cream and butter), spoon over crepes. Bake uncovered 5 more minutes.

3 eggs, lightly beaten
1 cup milk
1 tablespoon vegetable oil
1 cup all-purpose flour
1/2 teaspoon salt
2 lbs bulk breakfast sausage
1/2 cup green onion, chopped, including tops
3/4 cup cheddar cheese, shredded
2 (3 ounce) packages cream cheese, softened
1/2 cup sour cream
1/4 cup butter or 1/4 cup margarine, melted
paprika

Steps:

  • In small bowl, combine eggs, milk and oil.
  • Stir flour and salt together; add gradually to egg mixture and beat until smooth.
  • Let batter rest at least 1/2 hour before making crepes.
  • Then, pour about 2 tablespoons batter into lightly greased 6-inch hot crepe or fry pan, tilting so that batter will cover pan evenly.
  • Brown lightly on both sides.
  • Stack with waxed paper in between and keep warm.
  • You should get 16-20 crepes.
  • In large fry pan, brown sausage, crumbling into small pieces; drain.
  • Add onion and cook lightly over low heat.
  • Stir in both cheeses, adding cheddar last.
  • Place 3 T of filling in center of each crepe.
  • Roll up and place in a 7 1/2 by 12 by 1 3/4 baking dish.
  • Cover with foil and bake at 350 degrees for 15-20 minutes.
  • Meanwhile, blend the sour cream and melted butter well.
  • Uncover and spoon mixture over top and bake additional 5 minutes.
  • Sprinkle with paprika.

1 package Double 8 Cattle Company Fullblood Wagyu Beef Breakfast Sausage
2 tablespoons Grapeseed Oil
3 tablespoons Butter
1 Sweet Onion (medium diced)
2 teaspoons Kosher Salt
12 Cremini Mushrooms (medium-size mushrooms sliced thin)
1 cup Heavy Cream
1/2 cup Dry Sherry
1/2 cup Parmesan Cheese (shredded)
2 cups Crepe Batter: All Purpose Flour
2 tablespoons Sugar
2 pinches Kosher Salt
4 Eggs
2 cups Milk (divided)
4 tablespoons Vegetable Oil
1/2 cup Chives (minced)
1 Butter (for cooking)

Steps:

  • PREPARING THE CREPE BATTER: In a large bowl, mix the all purpose flour, sugar, and kosher salt together.Whisk in the eggs and a 1/4 cup of milk to form a smooth paste.Whisk in the remaining milk and the vegetable oil. Don't over-mix. Fold in the minced chives.Allow the crepe batter to rest for 30 minutes.
  • PREPARING THE FULLBLOOD WAGYU BEEF BREAKFAST SAUSAGE AND CREAMY MUSHROOM MIXTURE: Heat a large saute pan over medium-high heat. Add in the grapeseed oil and Fullblood Wagyu beef breakfast sausage. Using a wooden spoon, break up the sausage into small pieces. Once the sausage is cooked, remove it from the pan. Reserve. Place the same pan (don't wash) over medium heat, and melt the butter. Once the butter is melted, add in the diced sweet onions and kosher salt. Saute for 5-7 minutes until the onions are trans-lucent and starting to caramelize. Add in the sliced Cremini mushrooms and dry sherry. Cook for 12-15 minutes or until the mushrooms are softened and most of the liquid is absorbed. Stir occasionally while the mushrooms are cooking. Add in the heavy cream and the cooked Wagyu beef breakfast sausage. Reduce down for 5 minutes on medium heat (until you have a sauce consistency).Fold in the shredded Parmesan cheese
  • PREPARING THE CREPES: Strain the crepe batter if needed. Heat a small crepe pan or 6-inch nonstick skillet over medium heat. Add 1 teaspoon of butter to the pan, and melt the butter.Pour a 1/4 cup of batter into the pan. Rotate the pan to disperse the batter, filling the bottom of the pan with a thin layer of batter. Allow the crepe to cook for 1 minute. Then, flip the crepe over, and set the other side. Place the crepes between sheets of parchment paper until ready to serve.Repeat the process until all of the crepe batter has been used
  • FINAL STEPS: Fill the crepes with the warm Wagyu beef breakfast sausage and mushroom mixture. Then, roll the crepes (like a burrito).Or, fold the crepes into quarters, and top them with the Wagyu beef breakfast sausage and mushroom mixture. Serve hot, and enjoy!

2/3 c flour
2 eggs,beaten
1 Tbsp vegetable oil
2/3 c milk
SAUSAGE FILLING
1 lb sausage
1/4 c chopped onion
1/2 c cheddar cheese
1/2 tsp marjoram
TOPPING
1/2 c sour cream
1/4 c butter,softened

Steps:

  • 1. Grease bottom of skillet with oil and put 2 T. of crepe mixture and brown on one side, turn and brown other side. Remove from skillet.
  • 2. Brown sausage and onion and marjoram. Drain off grease. Put meat mixture in crepe and roll up. Place in greased oven proof pan or dish and bake for 30 min. at 375. After 30 min. remove and top with topping, return to oven cook for 5 min.
