There is a lot more than just sausage, cream cheese, and hash browns in this recipe. There is also ground beef and some veggies and potatoes. It should be a down home treat.

1 lb lean ground beef
1 lb sage sausage
16 ounces cream cheese
8 ounces mushrooms
1 large onion
1 tablespoon minced garlic (or more to taste)
2 -3 celery ribs
2 carrots
4 potatoes
1 lb frozen hash browns
cheddar cheese, and Swiss shredded cheeses

Steps:

  • Saute sausage with celery and carrots.
  • In a separate pan, saute ground beef with mushrooms, onions, and garlic.
  • The point it to impart different flavors in the ground beef and sausage.
  • Once the vegetables are tender and the meats are cooked, combine with softened cream cheese.
  • Meanwhile, slice the potatoes into slices and blanch for 4-5 minutes, until just slightly soft.
  • Layer the bottom of a casserole dish with the potato slices.
  • Top with cream cheese/meat mixture.
  • Repeat layers until all ingredients have been used.
  • Bake at 350°F for 30 minutes.
  • Meanwhile, prepare the hash browns according to the bag on the skillet. You'll probably have to do two or more batches to do it all.
  • Take the casserole out and top with hash browns and shredded cheeses.
  • The hash browns will most likely be in a circle shape from your pan, so just break it up where need be to fit it on top of the casserole.
  • Throw in the broiler for five minutes or until cheese has melted and hash browns have somewhat melded to the casserole.

2 pounds hot breakfast sausage
1 (2 pound) package frozen hash brown potatoes
2 cups shredded Cheddar cheese
1 (7 ounce) can green chile peppers
8 large eggs
2 cups milk
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon onion powder
½ teaspoon garlic powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch dish with cooking spray.
  • Cook sausage in a large skillet, stirring occasionally, until no longer pink, 6 to 8 minutes. Drain fat and transfer to a bowl.
  • Cook and stir hash browns to the same skillet until lightly browned, about 8 minutes. Place hash browns in the baking dish; top with sausage, shredded Cheddar cheese, and green chile peppers.
  • Whisk eggs, milk, salt, pepper, onion powder, and garlic powder in a bowl. Pour over hash brown mixture.

This very simple casserole is made with sausage, cream cheese, and crescent roll dough. If you have hectic mornings, you can bake it at night and just cut and reheat portions the next morning in the microwave.

1 pound bulk pork sausage
8 ounces cream cheese, softened
2 (8 ounce) cans refrigerated crescent rolls

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease the bottom of a 9x11 inch baking dish.
  • Cook the sausage in a skillet over medium heat until crumbly and beginning to brown; drain. Stir the cream cheese into the cooked sausage.
  • Roll the dough from one can of crescent rolls into the bottom of the prepared baking dish without separating. Bake in the preheated oven for 5 minutes.
