FRENCH TOAST-SAUSAGE CASSEROLE

An easy, overnight breakfast casserole that puts the sausage right in with the French toast!

1 roll (16 oz) maple-flavored bulk pork breakfast sausage
1 round uncut loaf (16 oz) Hawaiian bread, cut into 8 slices
8 eggs
2 cups half-and-half
1 cup milk
1 tablespoon granulated sugar
1 teaspoon ground cinnamon
1/8 teaspoon salt
1 teaspoon vanilla
1/3 cup powdered sugar
Real maple or maple-flavored syrup, if desired

Steps:

  • In 10-inch nonstick skillet, cook sausage over medium heat 8 to 10 minutes, stirring occasionally, until no longer pink; drain.
  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In baking dish, arrange 4 of the bread slices, cutting as needed to fit dish. Spoon sausage over bread. Top with remaining 4 bread slices.
  • In large bowl, beat eggs, half-and-half, milk, granulated sugar, cinnamon, salt and vanilla with whisk until well blended. Pour evenly over bread. Cover; refrigerate 8 hours or overnight.
  • Heat oven to 350°F. Uncover baking dish. Bake 40 minutes or until golden brown and set. Sprinkle with powdered sugar. Serve with syrup.

1 package (16 ounces) penne pasta
1 pound bulk Italian sausage
1 tablespoon butter
1 tablespoon olive oil
1 medium onion, finely chopped
1 medium carrot, finely chopped
1-1/2 teaspoons dried oregano
1 teaspoon salt
1/2 teaspoon pepper
1 small zucchini, halved lengthwise and sliced
1 cup chopped fresh mushrooms
6 garlic cloves, minced
1 can (15 ounces) tomato sauce
1 jar (14 ounces) pasta sauce with meat
2 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 350°. Cook pasta according to package directions for al dente; drain and transfer to greased 13x9-in. baking dish. Meanwhile, in a large skillet, cook sausage over medium heat until no longer pink, 6-8 minutes, breaking into crumbles; drain and remove from pan., In same skillet, heat butter and oil over medium-high heat. Add onion, carrot, oregano, salt and pepper; cook and stir 5 minutes. Add zucchini, mushrooms and garlic; cook and stir 6-8 minutes longer or until vegetables are tender., Stir in tomato sauce, pasta sauce and sausage; pour over pasta. Sprinkle with cheese (dish will be full). Cover casserole with a piece of foil coated with cooking spray. Bake 10 minutes. Uncover; bake until golden brown and cheese is melted, 15-20 minutes longer. Let stand 10 minutes before serving.

Take 'sausages and beans' from its modest midweek meal status and elevate it to an elegant one-pot casserole that's special enough for entertaining

3 tbsp olive oil, plus an extra drizzle (optional)
8 large pork sausages
1 onion, finely sliced
sprinkle of golden caster sugar
1 tbsp red wine vinegar
1 tbsp tomato purée
½ tsp smoked paprika
400g can chopped tomatoes
100ml red wine
2 bay leaves
400g can butter beans, drained but not rinsed
50g fresh breadcrumbs
2 garlic cloves, finely grated
handful of parsley leaves, roughly chopped

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Heat 1 tbsp of the oil in a shallow ovenproof casserole over a medium heat and gently fry the sausages for 5-8 mins, or until brown on all sides. Transfer to a plate using tongs. Tip the onions into the pan and fry for 5-8 mins until beginning to turn golden. Drizzle in a little more oil if the onions start to stick. Sprinkle in the sugar and cook for a minute before stirring in the vinegar, tomato purée and paprika to form a paste. Tip in the tomatoes, then pour the wine into the tomato can, swish it round, and add to the pan. Stir in the bay leaves and beans, then arrange the sausages on top so they're half-submerged in the sauce but still a little exposed.
  • Bring the mixture to a simmer, then bake in the oven for 20 mins. Meanwhile, make the topping. Mix the breadcrumbs with the garlic and parsley, then season and stir in 1 tbsp oil. Scatter the topping over the casserole, then drizzle with the remaining 1 tbsp oil and bake for 10 mins more until the breadcrumbs are golden and crisp. Leave to stand for a few minutes, then take to the table and serve from the dish.

This is our special occasion recipe - we use it for Thanksgiving and Christmas morning as it is easy to prepare the night before, my daughter is having her in-laws over this week and requested it for them. So maybe it is impress the MIL too. :) there are many variations of this recipe this one seems to work best for us.

1 (8 ounce) package pork sausage (can use hot, also sub ham or bacon)
1/2 teaspoon salt
6 eggs, beaten
1 -1 1/2 cup half-and-half
6 -8 slices Texas toast thick bread
8 -12 ounces shredded cheddar cheese

Steps:

  • Brown sausage and drain.
  • Place Texas toast in greased 9x12 casserole dish.
  • In a medium bowl mix eggs with salt and half and half.
  • Pour mixture evenly over bread.
  • Top with browned sausage and shredded cheese.
  • Cover and refrigerate overnight.
  • Take out of refrigerator in the morning while you are preheating your oven to 350 F bake for 45 minutes or until browning on the top.
