A hearty variation on the traditional green bean casserole that can be used as a main dish or a side.

1 (16 ounce) package pork sausage
2 (10.75 ounce) cans condensed cream of mushroom soup
1 cup milk
1 tablespoon soy sauce
1 clove garlic, minced
ground black pepper to taste
2 (16 ounce) packages frozen cut green beans
1 (2.8 ounce) can French-fried onions

Steps:

  • Crumble the pork sausage into a large skillet over medium-high heat. Cook and stir until evenly browned. Drain grease, and set aside.
  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13 inch baking dish with nonstick cooking spray.
  • In a large bowl, stir together the cream of mushroom soup, milk, soy sauce, garlic, and pepper. Mix in the sausage, then add the green beans, and stir until evenly coated. Pour half of the mixture into the prepared baking dish. Top with half of the fried onions. Spread remaining green bean mixture over the onions.
  • Bake for 30 minutes in the preheated oven. Remove from the oven, and sprinkle the rest of the fried onions over the top. Return to the oven for 5 to 10 more minutes, or until the onions are toasty, and green beans are cooked to your desired doneness. Let rest 5 minutes before serving.

1 and 1/2 lbs sausage kielbasa or smoked sausage (sliced 1/4 inch thick)
2 lbs creamer potatoes or small red potatoes (washed and sliced in half)
Green beans
1/8 cup vegetable oil
1/4 cup butter
1 cup chopped onions
3 garlic cloves minced
1 tsp Slap Ya Mama seasoning
1 tsp garlic powder
1 tsp pepper
1/2 tsp red pepper flakes
1/4 cup water

Steps:

  • Preheat oven to 200C/400F
  • Add potatoes to a sealable food bag and add the oil, seasoning, pepper and red pepper flakes - shake the bag to coat completely
  • In a pan, fry the sliced sausage along with the water until most of it has evaporated, Remove the sausage and let cool
  • Now add the sausage to the food bag. Melt butter in a pan and cook the onions and garli. Allow this to cool also and then add to the food bag
  • Finally, add the green beans to the food bab also and give it a shake so all ingredients are well combined. Empty the bag into a 9x13 baking dish
  • Cover with foil then cook in the oven for 40 minutes

8 ounces kielbasa or 8 ounces beef sausages
3/4 cup chopped onion
1 teaspoon minced garlic
1 (16 ounce) can diced tomatoes with juice
1 teaspoon dried thyme leaves
1/2 teaspoon crushed red pepper flakes
1 (19 ounce) can cannellini or 1 (19 ounce) can other white beans, rinsed and drained
1 (10 ounce) package frozen chopped spinach, thawed and drained

Steps:

  • Preheat oven to 350 degrees F. Lightly grease a 2-quart baking dish.
  • Brown sausage (no need to add fat) in a large deep skillet. Drain fat to save calories.
  • Stir in onion, garlic, then tomatoes. Cover and cook over medium heat about 10 minute or until onions are tender.
  • Add remaining ingredients; stir to mix. Transfer to prepared dish. Can be covered and refrigerated up to 2 days if desired. Bake covered 30 minute or until hot. Makes 4 servings (or 1 serving for a very hungry teenage boy).

1-1/2 pounds bulk spicy pork sausage
1 medium green pepper, chopped
1 medium onion, chopped
1 can (31 ounces) pork and beans
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (15-1/2 ounces) black-eyed peas, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (15 ounces) chickpeas, rinsed and drained
1-1/2 cups ketchup
3/4 cup packed brown sugar
2 teaspoons ground mustard

1 medium onion, chopped
2 (19 ounce) cans white kidney beans, rinsed and drained
3/4 cup chicken broth
1/4 cup dry white wine
2 tablespoons snipped fresh thyme (or 1 teaspoon dried thyme)
2 cups torn escarole or 2 cups fresh spinach
1/4 cup shredded parmesan cheese
