Steps:
- Heat approximately 1 tablespoon of olive oil in a large frying pan.
- Brown the sausage in the oil until you get a nice color on the outside and you no longer see any"pink".
- Remove the sausage and drain on a paper towel.
- Keep the heat going on the pan and add onions and peppers (do not add any additional oil).
- Cook the onions and peppers approximately 5 minutes or until onions start to become translucent.
- During this time, slice the sausage down the middle, do not cut all the way through, just enough so you can open the sausage and"fan" them out.
- Add salt and pepper over the onion/pepper mixture and turn heat down to simmer.
- Place sausage on top of onions and peppers and cover.
- Simmer for approximately 15 minutes or until sausage is cooked through.
- Serve on Italian Bread.

- For the sandwiches: Heat the olive oil in a large skillet over medium-high heat. Add bell peppers and saute 5 minutes, until tender. Remove half of the peppers from skillet and set aside.
- Add onion and saute 3 minutes, until soft. Add sliced chicken and sausage and balsamic vinegar. Cook 2 minutes to heat through. Season, to taste, with salt and black pepper.
- Using tongs, arrange mixture on rolls. Refrigerate remaining bell peppers for another recipe.
- For the potato salad: To make the potato salad, place potatoes in a large saucepan and pour over enough water to cover. Set pan over high heat and bring to a boil. Boil 8 minutes, until fork tender. Drain and while still warm, transfer to a large bowl and add onions, cooked bacon, vinegar, and oil. Season, to taste, with salt and black pepper.
PASTA WITH BELL PEPPERS, PESTO AND SWEET ITALIAN SAUSAGE
Wonderfully refreshing recipe made with all fresh ingredients. Great any time of the year. My whole family loves this dish. I like to serve with fresh steamed brocolli, sprinkled with garlic powder or parmesan cheese.

- Remove casing from sausage links. Heat skillet, and add links. Break up meat while cooking (like ground beef consistancy) Cook until nicely browned.
- Place on paper plate with paper towel to soak up extra grease. Place aside until needed.
- Wash tomatoes and slice up into workable size. Place in food processor.
- Peel garlic cloves and place in processor with tomatoes.
- Cut lemon in half, squeeze juice from one half on top of tomatoes and garlic on food processor.
- Wash basil and cilantro. Place herbs in food processor as well.
- Process until all tomatoes are chopped up - NOT until smooth. You want a little chunkiness. Sauce will be a little watery. (I have thought about adding a small can of tomato paste or something here to thicken the sauce and make it more like what you would get out of a jar, however I have never tried it so I'm not sure how it would work/taste.).
- Wash and cut up pepper. Cut into slices and then cut the slices in half.
- Place tomato sauce in pan and add in meat. Heat for 5-10 minutes over medium heat until warm. Add in pepper for a few minutes and cook until desired firmness. (I only put them in for about 2-3 minutes as I like them just warm, and still crunchy.).
- Mix sauce with warm pasta, stir in pesto and serve ENJOY!
ITALIAN SAUSAGE AND BELL PEPPERS
This is a quick and versatile recipe that is one of DH's favorites. I like it because it makes enough for two dinners and a lunch for the two of us. I like to serve it over polenta, but pasta or rice are great, too. It's happy in a slow cooker as well.

POLENTA CASSEROLE WITH SAUTEED BELL PEPPERS AND SAUSAGE
From Cook's Illustrated 'Cover and Bake' cookbook, but I found it on Salt Lake City Desert News website --Sounds good. I know the original recipe calls for from scratch polenta, but this sounds easier. Not sure about cooking time.

- Heat the oven to 400 degrees. Slice the polenta in half-inch slices and cover the bottom of a 9-by-13-inch casserole dish. Press together to make one layer.
- Heat the oil in a 12-inch skillet over medium-high heat. Add peppers, onion and 1/2 teaspoon salt; cook until peppers are soft, about 5 minutes. Add sausage and cook until the meat loses its raw color, about 5 minutes. Add garlic, thyme and red pepper flakes, cook about 1 minute.
- Add tomatoes and juice; bring to a simmer and cook, stirring occasionally, about 5 minutes. Take off heat and stir in the vinegar. Season with salt and pepper to taste.
- Spread sausage mixture evenly over the polenta and sprinkle with cheese. Bake in middle rack of oven until the polenta is heated through, about 20 minutes. Cool 10 minutes. Sprinkle with parsley before serving. Serves 6 to 8.
FLATBREAD WITH SAUSAGE, BELL PEPPERS, AND ASIAGO
Steps:
- 1. Set a pizza stone on the center rack. Preheat oven to 450°F, or higher if possible.
- 2. Sprinkle some flour on the work surface.
- 3. Divide the dough into halves or thirds, depending on how thin or thick you like your flatbread. Work the dough, rolling it into a ball, then flattening it into a circle with the palm of your hand. Press with your fingertips from the center outward, widening the circle. Start pushing this small circle into an oblong or rectangular shape, always leveling the thickness of the dough, so that the dough is about 14 by 6 inches.
- 4. Sprinkle some cornmeal on a pizza peel or the underside of a cookie sheet. Pick up the dough and, in one deft movement, transfer it to the peel.
- 5. Drizzle 1 tablespoon of the olive oil over the surface of the flatbread. Sprinkle half (or one third if making three flatbreads) of the Asiago evenly over the dough and then scatter one half or one third (if making three flatbreads) of the sausage and pepper over the surface.
- 6. Pick up the peel and open the oven door. Gently slide the flatbread onto the stone; a few shakes of the peel and the dough should slide right off, thanks to the cornmeal.
- 7. Bake the flatbread until the surface is bubbling and the bottom of the crust is turning a dark, golden color and crisping nicely, 15 minutes or less. Use the peel to remove the flatbread from the oven, cut into slices, and serve. While the first flatbread is baking, ready the next one. Bake it as you enjoy the first one. Repeat until you've used all the dough and other ingredients.
SAUSAGE, BELL PEPPERS, AND ONIONS
Caught this recipe on Every Day Italian and looked so good I had to try it. It is absolutely delicious! The sauce is slightly sweet and the onions caramelize really nicely. The original recipe puts the final product into crusty Italian buns, but I prefer it with pasta. I have tried this recipe with chicken instead of sausage, but make sure the pieces are small enough that they cook evenly and stay moist. Don't worry about the time it takes - it is SO worth it!

- Heat the oil in a heavy large skillet over medium heat. Add the sausages and cook until brown on both sides. Remove from the pan and drain.
- Keeping the pan over medium heat, add peppers, onions, salt, and pepper and cook until golden brown, about 5 minutes.
- Add the oregano, basil, and garlic and cook 2 more minutes.
- Add the tomato paste and stir. Add the Marsala wine, tomatoes, and chili flakes, if using. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the browned bits. Bring to a simmer.
- Cut the sausages into 4 to 6 pieces each, about 1-inch cubes. Add the sausage back to the pan and stir to combine. Cook until the sauce has thickened, about 20 minutes.
- Serve with pasta, or in Italian buns.

SMOKED SAUSAGE, BELL PEPPERS AND TOMATOES
A colorful, savory dish that is good with crusty bread or rice. Supposedly a Hungarian dish, try using differently colored peppers, sweet Hungarian paprika and Hungarian smoked sausage called debrecini sausage. But it should be a good dish if you sub with other very mild paprika and kielbasa.

- Heat oil over medium high heat in a wide non-stick skillet. Cook bacon and onion until onion turns yellow, about 3 minutes.
- Reduce heat to medium, add garlic and bell pepper, and, stirring frequently, cook until bell peppers are tender-crisp, about 8-10 minutes.
- Remove skillet from heat and wait until cooking subsides or paprika might burn and give a bitter taste. Add paprika and red pepper flakes. Add more pepper flakes if you like it hot. Stir until all is evenly coated with paprika.
- Mix in tomatoes, return to heat. Reduce heat to low and cook covered 5 minutes.
- Carefully mix in sausage and cook covered over low heat 15-20 minutes.
- Taste with black pepper. There should be enough salt from bacon and sausage. Serve.
PAUL'S SAUSAGE, BELL PEPPERS, AND ONION HERO

- Preheat the oven to 350 degrees F.
- Heat a skillet over medium heat and add the oil, then add the sausage and saute until brown. Add the marinara sauce, bell peppers, onion, salt and pepper and saute until the ingredients are incorporated and hot, about 5 minutes.

- Divide stuffing into three bowls.
- In three small fry pans: Brown a cup of favorite sausage and drain on paper toweling.
- Sauté a cup of minced onion in butter or cooking spray.
- Sauté a ½ cup of minced celery in a bit of butter or cooking spray.
- Preheat oven to 350°F.
- Stuffed Peppers: Add browned sausage, 1/3 cup sautéed onions, ½ tsp oregano and/or dried basil to 1/3 stuffing mixture.
- Add 1 (8-ounce) package cream cheese, softened.
- Mix well and stuff pepper halves.
- Place on a baking sheet, and bake in the preheated oven 20 to 25 minutes, until stuffing is lightly brown and bubbly.
- Stuffed Onions: Brush onions with olive oil.
- Add 1/3 cup sautéed onions, ½ cup sautéed celery, ½ tsp poultry seasoning to 1/3 stuffing mix.
- Top onion slices with a mound of stuffing and place on a baking sheet.
- Drizzle a bit of butter on top and sprinkle w/ grated cheese.
- Bake 20-25 minutes.
- Stuffed mushrooms: Remove stems from mushrooms.
- Chop stems fine.
- Coat mushroom caps with oil and set aside.
- Add 1/3 cup sautéed onions, and chopped mushroom stems to stuffing mixture.
- Stuff caps with mixture.
- Place mushrooms on baking sheet.
- Drizzle tops with a bit of butter and a sprinkle of grated cheese.
- Bake 20-25 minutes.

ROASTED SAUSAGE AND BELL PEPPERS

- Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the bell peppers and onion and cook, stirring, until softened, about 5 minutes. Season with salt and pepper. Remove the vegetables from the skillet and set aside.
- Heat the remaining 1 tablespoon oil in the same skillet over medium-high heat. Add the chicken and cook until golden brown, 3 to 5 minutes. Add the sausage and vinegar and cook for 1 minute to heat through.
- Using tongs, arrange the chicken mixture on the open rolls, top with the fried peppers and serve.
MUSHROOM AND PORK SAUSAGE STUFFED BELL PEPPERS

- Dice the onion, garlic, and mushroom and saute w/ butter until onions are translucent. Put mixture in bowl w/ cooked rice and set aside. Brown sausage in same pan as mushroom and onion mixture. Add to bowl w/ mushroom and rice mixture. Cover and put in fridge until cool. Meanwhile, put crushed tomatoes and tomato paste in sauce pan, season w/ S&P, garlic powder, onion powder and italian seasoning to taste. Simmer until heated through and nice and thick. Halve bell peppers length wise and remove innards. Set aside . Remove stuffing mixture from fridge and mix in beaten egg. Pre-heat oven to 325 degrees. Pour tomato sauce in to a baking dish large enough to accommodate peppers. Stuff peppers w/ stuffing mixture and arrange in baking dish. Place baking dish in center rack of oven and bake for 30 minutes. When time is up remove dish and spoon tomato sauce over each pepper and return to oven for another 30 minutes. I added an italian 3 cheese blend after 20 minutes and baked another 10 to melt the cheese and form a nice crust but that is optional.
STUFFED BELL PEPPERS WITH SAUSAGE AND RICE

- Remove sausage from casing and place in a 2 quart sauce pan.
- Fry until browned.
- Pour off any extra grease.
- Add water, drained tomatoes, and rice mix to sausage in 2 qt pan.
- Bring to a boil.
- Turn down to allow mixture to simmer for 10 minutes or until waters is evaporated and rice is cooked.
- While simmering, halve peppers and place in a large pot of boiling water for 5 minutes.
- Remove and place in casserole dish with reserved tomato liquide on the bottom.
- Add 3/4 cup of the cheddar cheese to the rice mixture and remove from heat.
- Stir until combined.
- Spoon rice mixture into pepper halves.
- Top with remaining cheese.
- Place in preheated oven at 350 degrees until cheese is melted.

- Place a large skillet on the stove and turn the heat to medium.
- Add the sausage, then cook until crumbly and brown. Discard any excess grease.
- Add the elbow macaroni, bell peppers, water, and marinara sauce. Stir until well mixed and allow the mixture to boil.
- Turn the heat down to low, then cover and simmer everything for about 20 minutes. Make sure to stir from time to time.
- Add the half and half, then stir until well blended.
- Sprinkle a generous amount of cheese and stir again until well combined.
- Remove the skillet from the stove, then cover and let it rest for at least 2 minutes or until the cheese is melted completely.
- Garnish each serving with your preferred herbs.
- Serve and enjoy!
