RASPBERRY ROSE SCONES



Raspberry Rose Scones image

1 (20-ounce) package biscuit mix
1/4 cup rose water
2 (15-ounce) cans red raspberries, drained (reserve both liquid and raspberries)
1 cup raspberry liquid (from canned raspberries)
1 1/2 cups fresh raspberries
2 tablespoons sugar
Lemon Cream Cheese Spread, recipe follows
1/3 cup lemon curd
16 ounces cream cheese, softened
1 teaspoon rose water

Steps:

  • Preheat oven 375 degrees F. Combine the biscuit mix, rose water, and 1 cup of the drained raspberry juice. With a wooden spoon, mix the ingredients together thoroughly to make a dough. Gently knead into the dough 1/2 of the drained raspberries and the fresh raspberries, being careful not to squish them. (Reserve remaining canned raspberries for another use.) Spray 2 (8-inch) loaf pans with non-stick spray, then divide the dough mixture between the pans. Transfer to the oven and bake for 20 minutes. Remove loaves and set on cooling racks. Sprinkle some sugar on the top of loaves while they are still hot. When cool, slice loaves and serve with Lemon Cream Cheese Spread.
  • Whip all ingredients together and chill in the refrigerator.

MINTY CHIP FRAPPE

1/2 cup evaporated milk
1/4 cup mini-chocolate chips
1 cup ice

  • Combine all ingredients in a blender. Blend on high speed until smooth and frothy. Serve in a tall glass.

1/4 cup brewed coffee (recommended: Folgers Gourmet Supreme Roast Coffee), double strength, cooled
2 tablespoons heavy cream
2 large eggs, lightly beaten separately
1 teaspoon vanilla extract
3 1/2 cups baking mix
1/2 cup sugar
3/4 cup white baking chips
3/4 cup chocolate chips
1 tablespoon heavy cream
White decorating sugar or sanding sugar

Steps:

  • Preheat oven to 350 degrees F.
  • In a small bowl, combine coffee, cream, 1 egg, and vanilla extract; set aside.
  • In a large mixing bowl, combine baking mix, sugar, white baking, and chocolate chips.
  • Add wet ingredients to dry ingredients and work into a crumbly dough. On a lightly floured surface, form dough into a 9-inch disk (approximately 1/2-inch thick). Cut into 12 wedges and place on ungreased cookie sheet. Set aside.
  • In a small bowl, combine 1 tablespoon cream and remaining beaten egg. Brush tops of scones with egg mixture and sprinkle with sanding sugar.
  • Bake for 18 to 20 minutes or until golden brown. Serve warm with butter!

STOVETOP SCONES

This recipe won't heat up your whole kitchen because these scones are made stovetop. Even better, they're semi-homemade.

4 cups baking mix (recommended: Bisquick)
4 tablespoons sugar
1 egg
1 cup milk
1 tablespoon vegetable shortening

Steps:

  • Preheat a cast iron skillet or griddle over medium-high heat.
  • Combine the baking mix, sugar, egg and milk in a medium bowl. Mix gently. Form a ball and knead the dough gently on a floured surface for 5 to 8 strokes, until the dough holds together. Pat or roll the dough to form a 6-inch circle. Cut the dough into 12 wedges.
  • Grease pan with shortening. Turn down to medium heat and add the wedges of dough.. Cook for 4 to 5 minutes, adjusting the heat and repositioning the wedges until they're an even pancake-brown. Flip and cook another 3 to 4 minutes.
  • Serve with raspberry jam and sweet butter.

I love the decadence of scones, love coffee, and love chocolate chips! I'm not a huge fan of Sandra Lee on the Food Network, but these scones looked pretty darn good for Semi-Homemade ones made with Bisquick! :) They tasted even better!!! (However, I do think the 3/4 cup of white chocolate chips made this a little too sweet...so I replaced the white with an additional 3/4 cup semi-sweet ones. I also felt that the dough needed an additional teaspoon of vanilla extract. I found the coffee flavor to be far too weak using double strength coffee, so I substituted 4 1/2 tsp instant espresso powder dissolved in 1/4 cup hot tap water. ) Enjoy with coffee or hot chocolate for a sinful breakfast!

1/2 cup butter, softened
1 tablespoon instant coffee
1/3 cup light brown sugar, packed
1 large egg
1/4 teaspoon almond extract
4 tablespoons water
1 box moist chocolate devil's food cake mix
1 cup slivered almonds, toasted
1 stick butter, softened
4 cups powdered sugar, divided
1 1/2 teaspoons instant espresso powder
1/2 cup chocolate syrup

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a 9 by 13-inch baking pan with nonstick cooking spray.
  • In a large mixing bowl, combine butter, coffee, and brown sugar. Beat with an electric mixer on medium speed until light and fluffy. Add egg, almond extract, water, and cake mix and beat until smooth. Stir in almonds.
  • Turn batter into prepared pan and smooth to edges. Bake for 30 to 35 minutes until tester comes out clean. Cool completely before icing.
  • For icing: In a small mixing bowl, beat butter with powdered sugar, adding the sugar 1 cup at a time, until light and fluffy. Beat in espresso powder and chocolate syrup until smooth.
  • Ice brownies and cut into squares.

3 teaspoons instant espresso coffee powder or granules
1 cup whipping cream
2 1/2 cups Gold Medal™ all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup cold butter, cut into pieces
1 cup bittersweet chocolate chips
1 tablespoon whipping cream
1 tablespoon turbinado (raw sugar) or granulated sugar
Whipped cream and additional chocolate chips, if desired

Steps:

  • Heat oven to 425°F. Line cookie sheet with cooking parchment paper. In small bowl, stir coffee powder into 1 cup whipping cream; set aside.
  • In large bowl, mix flour, 1/2 cup sugar, the baking powder and salt. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like coarse crumbs. Stir in chocolate chips and reserved whipping cream mixture just until dry ingredients are moistened and dough leaves sides of bowl and forms a ball.
  • On cookie sheet, pat dough into 9-inch round. With sharp knife dipped in flour, cut round into 8 wedges, but do not separate wedges. Brush with 1 tablespoon whipping cream; sprinkle with 1 tablespoon sugar.
  • Bake 25 minutes or until golden brown. Immediately remove from cookie sheet; carefully cut to separate wedges. Serve warm and top with whipped cream and additional chocolate chips.
