3 1/4 cups salted peanuts
1 1/2 cups flour
3/4 cup brown sugar
1/2 teaspoon salt
1/2 cup butter, softened (no subs please!)
1/2 cup corn syrup
2 tablespoons butter
1 tablespoon water
1 cup butterscotch chips

Steps:

  • Preheat oven to 350 degrees F.
  • Line a 15 x 10-inch baking sheet with parchment paper.
  • Combine all crust ingredients, and press into bottom of the pan.
  • Bake for 10-12 minutes (do not over bake).
  • Remove from oven then sprinkle the peanuts evenly over crust.
  • In a saucepan combine the topping ingredients; bring to a boil then cook for about 2 minutes until smooth (stirring constantly).
  • Pour the hot mixture over the nuts, and return to oven.
  • Bake for 15 minutes or until until golden.
  • Cool completely before cutting into bars.

1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup butter, softened
3/4 cup granulated sugar

1 box (4-serving size) butterscotch instant pudding and pie filling mix
2 eggs
1 teaspoon vanilla
2 cups mini pretzel twists, coarsely crushed
1 cup semisweet chocolate chips
1/2 cup milk chocolate toffee bits
1 teaspoon coarse sea salt

Steps:

  • Heat oven to 350°F. In medium bowl, mix flour, baking soda and 1/2 teaspoon salt; set aside.
  • In large bowl, beat softened butter, granulated sugar and brown sugar with electric mixer on medium speed about 1 minute or until fluffy; scrape side of bowl. Beat in dry pudding mix. Beat in eggs, one at a time, just until smooth. Stir in vanilla. On low speed, beat flour mixture into sugar mixture until well blended. Stir in crushed pretzels, chocolate chips and toffee bits until blended.
  • Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet. Sprinkle each cookie lightly with coarse salt.
  • Bake 9 to 11 minutes or until light brown. Cool 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 15 minutes. Store covered in airtight container at room temperature.

BREAD PUDDING:
7 c chopped potato bread
2/3 c chopped macadamia nuts
1/2 c shredded coconut
1/2 c butterscotch chips
4 eggs
1 (12 oz.) can evaporated milk
1 (14 oz.) can sweetened condensed milk
2 Tbsp light brown sugar
1 tsp vanilla extract
1/4 tsp ground nutmeg
1/4 tsp ground cinnamon
1/4 tsp salt
2 Tbsp butter, cut into small pieces
SALTED BUTTERSCOTCH SAUCE
1/2 c butter
1/2 c light brown sugar
1/4 c light corn syrup
1/2 c heavy cream
1/4 tsp kosher salt
CARAMELIZED BANANAS:
3 Tbsp butter, divided (as needed)
3 Tbsp light brown sugar, divided (as needed)
4 bananas (not too ripe), peeled, sliced
1 vanilla ice cream, if desired

Steps:

  • 1. To make bread pudding: Preheat oven to 350 F. Spray a 13x9 pan with nonstick cooking spray. Set aside. In a large bowl, toss together bread, nuts, coconut, and butter scotch chips. Spread on pan. In a medium bowl, whisk together eggs, evaporated milk, condensed milk, light brown sugar, vanilla extract, nutmeg, cinnamon, and salt. Pour over bread mixture in baking dish, making sure bread is completely soaked in egg mixture. Cover; let sit 30 minutes. Dot with small pieces of butter. Bake, uncovered, 45-55 minutes or until top is crisp and golden brown.
  • 2. To make butterscotch sauce: In a medium saucepan, over medium heat, melt butter. Stir in light brown sugar, and corn syrup. Bring to a simmer. Cook, stirring, until thick, syrupy and golden in color, about 10 minutes. Remove from heat; stir in cream and kosher salt. Cover to keep warm.
  • 3. To make caramelized bananas: In a large, nonstick skillet, over medium high heat, melt 2 tablespoons butter and 2 tablespoons light brown sugar. Once butter-sugar mixture becomes bubbly, add bananas. Cook, flipping once, about 2-3 minutes per side, or until caramelized on both sides. Remove to a plate. (May need to work in batches to avoid overcrowding bananas. If so, add 1 tablespoon butter and 1 tablespoon light brown sugar to skillet before adding second batch of bananas.)
  • 4. To serve, top bread pudding with bananas and spoon butterscotch sauce over top. Serve immediately. If desired (to make this an even more decadent dessert), serve with vanilla ice cream.

1 tablespoon light corn syrup
3 tablespoons water
1/4 cup heavy cream
2 tablespoons unsalted butter
1 teaspoon sea salt (the flaky kind, plus more for garnish)
1/2 teaspoon pure vanilla extract
2 tablespoons pure maple syrup (preferably grade B)
1/2 cup dark brown sugar, packed
1/4 cup water
1 teaspoon kosher salt
2 1/2 cups half-and-half
1 egg, large
2 egg yolks, large
3 tablespoons cornstarch
1/4 cup whipped cream, for serving

Steps:

  • Make the salted caramel: In a heavy-bottomed saucepan, bring the sugar, corn syrup and water to a boil over high heat, swirling (not stirring) to caramelize evenly. When the caramel reaches a dark amber color (about 3 minutes), remove from the heat and carefully add the cream. (The mixture will foam up.) Add the butter, sea salt and vanilla and whisk to combine. Set aside and reserve.
  • Make the pudding: In a saucepan, combine the maple syrup, brown sugar, water and salt and bring to a boil over medium-high heat, stirring occasionally. Simmer for about 5 minutes, until the mixture darkens slightly in color. Remove from the heat and whisk in the half-and-half until smooth.
  • In a large, heatproof mixing bowl, whisk the whole egg with the egg yolks and cornstarch until combined. Whisk in the maple-syrup-brown-sugar mixture in a slow, thin stream. Pour the mixture into the saucepan through a fine-mesh strainer and cook over medium heat, whisking constantly, until it thickens to a puddinglike texture, about 5 minutes.
  • Divide the pudding among four 8-ounce ramekins or small mason jars and top each with a quarter of the reserved caramel. Cover and refrigerate for at least 2 hours or up to overnight. Sprinkle the top of the puddings with sea salt and a dollop of whipped cream before serving.

1 cup pecans
3/4 cup sugar
1 1/4 cups flour
1/2 teaspoon kosher salt
1 stick (8 tablespoons) butter, softened
2 tablespoons cold water
Flaky sea salt
3 cups sugar
1 cup water
1/4 cup honey
2 cups heavy cream
1/2 cup Scotch whisky
2 tablespoons butter
1/2 teaspoon kosher salt
1 teaspoon vanilla extract

Steps:

  • For the shortbread: Preheat the oven to 350 degrees F. Line two baking sheets with parchment.
  • In a food processor, pulse together the pecans and sugar just until sandy--do not overpulse, as you don't want a paste. Add the flour and salt; pulse until combined. Cut butter into small cubes and add to the food processor. Pulse until the mixture resembles coarse crumbs. Add the water and pulse quickly, until a rough dough forms.
  • Turn out onto a lightly floured work surface and press into a cohesive dough. Roll to a 1/4-inch thickness. Using a knife or a rectangular cookie cutter, cut into 1-by-3-inch rectangles, about 24 total; re-roll scraps if necessary.
  • Sprinkle the tops of the cookies lightly with sea salt. Transfer to the prepared baking sheets and refrigerate for 30 minutes.
  • Bake until golden brown at the edges, 14 to 17 minutes.
  • Let the cookies cool to room temperature.
  • For the fondue: Combine the sugar, water and honey in a large saucepan and bring to a boil. Cook until the mixture is a deep-amber caramel color, 8 to 10 minutes.
  • Carefully pour in the cream--stand back as the mixture will bubble and splatter. Once the bubbling subsides, turn off the heat and whisk the caramel until smooth.
  • Whisk in the whiskey, butter, salt and vanilla.
  • Pour the sauce into the fondue pots and keep warm.
  • Serve the fondue with the cookies.

1 3/4 cups packed dark brown sugar
1/3 cup heavy cream
1 tablespoon scotch (optional)

2 large eggs
2 1/2 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon fine salt
Flaky sea salt, for topping

Steps:

  • Preheat the oven to 350 degrees F and line a 9-by-13-inch baking dish with foil, leaving a 2-inch overhang on all sides; butter the foil. Combine 2 tablespoons butter, 1/4 cup brown sugar and the heavy cream in a small saucepan. Bring to a simmer over medium heat, stirring occasionally; continue to cook, stirring frequently, until slightly thickened, 3 to 4 minutes. Remove from the heat and stir in the scotch and 1 teaspoon vanilla; set aside to cool.
  • Melt the remaining 2 sticks butter in a large saucepan; let cool slightly. Stir in the remaining 1 1/2 cups brown sugar, the eggs and the remaining 2 teaspoons vanilla, then stir in the flour, baking soda and fine salt.

PUMPKIN PANCAKES WITH SALTED PECAN BUTTERSCOTCH

250g pumpkin or squash, peeled, deseeded and chopped into large chunks
2 eggs
3 tbsp light brown soft sugar
25g butter , melted, plus a little for cooking
125ml buttermilk (or use the same quantity of milk, with a squeeze of lemon juice)
200g plain flour
2½ tsp baking powder
1 tsp ground cinnamon
drizzle of flavourless oil , such as sunflower or groundnut, for frying
ice cream , to serve, or yogurt or crème fraîche
50g pecans , roughly chopped
50g butter
50g light brown soft sugar
1 tsp sea salt flakes
100ml double cream

Steps:

  • Put the pumpkin or squash in a large heatproof bowl, add 1 tbsp water, cover with cling film and microwave on High for 5-8 mins or until really soft - different types will take a varying amount of time. Drain the pumpkin well and cool completely. If you want to eat the pancakes for breakfast, this step is best done the night before.
  • Once cool, put the pumpkin in a food processer with the remaining pancake ingredients and add a good pinch of salt. Blend until everything is well combined to a smooth, thick batter (alternatively, mash the pumpkin well, then whisk in the remaining ingredients). Transfer to a jug or piping bag and set aside while you make the butterscotch sauce.
  • Toast the pecans in a saucepan for 1-2 mins until a shade darker. Tip out and set aside. Add the butter, sugar, salt and cream to the pan. Bring to a simmer, then bubble gently for a few mins until you have a shiny sauce. Stir in the pecans and set aside to cool a little.
  • Heat a knob of butter and a drizzle of oil in a large frying pan. Heat oven to 140C/120C fan/gas 1, to keep the pancakes warm while you cook them in batches - have a baking tray to hand. When the butter is foaming, swirl it around the pan, then pour tennis-ball-sized amounts of batter into the pan - they will spread a little as they cook, so leave some space between each pancake and don't overcrowd the pan. Cook over a low-medium heat. Don't touch the pancakes until you see a few bubbles appear on the surface - have a look underneath and, if the pancakes are golden, flip them over and cook for another 2 mins on the other side. Transfer the cooked pancakes to the baking tray and keep warm in the oven while you continue cooking.
  • Once cooked, pile the pancakes onto plates, top with ice cream, yogurt or crème fraîche, and pour over the salted pecan butterscotch sauce.

How to make Salted Butterscotch Crème Brûlée

2 cups heavy cream
1/2 cup milk
1/4 teaspoon fine sea salt
4 tablespoons unsalted butter
1/2 cup brown sugar, lightly packed
6 large egg yolks
1 teaspoon vanilla extract
6 tablespoons of granulated sugar
Fine sea salt for sprinkling

Steps:

  • Preheat oven to 325°F. Arrange ramekins on a large rimmed baking sheet.
  • In a medium-saucepan combine heavy cream, milk, and fine sea salt. Bring to a simmer and then reduce heat to low to keep warm.
  • Melt butter in medium saucepan and stir in brown sugar. Over medium-high heat bring mixture to a boil and cook for 2 minutes. The sugar will begin to caramelize and turn dark amber in color and become fragrant.
  • Remove from heat and immediately whisk cream into the caramel mixture until smooth. Do this carefully and gradually, as the hot mixture will bubble up vigorously when the cream is added.
  • Whisk together egg yolks and vanilla extract in a large bowl. While whisking continuously, slowly stream the hot cream mixture into the egg yolks until combined. Strain the custard through a fine-mesh sieve into a clean bowl or large measuring cup. Carefully pour or ladle custard into each ramekin until full.
  • Place the baking sheet in the oven and pour hot water into the pan until it fills halfway up the sides of the ramekins. Bake for 20-22 minutes or until edges are set and centers jiggle slightly when gently prodded.
  • Remove baking sheet from oven and place on cooling rack. Let cool for 10 minutes, then remove ramekins from water bath and continue to cool. Transfer ramekins to refrigerator and let chill for at least 4 hours. Crème brûlée can be stored, wrapped, for up to three days in refrigerator.
  • To serve, sprinkle each of the custards with one tablespoon of sugar. Using a kitchen torch, melt the sugar until caramelized and golden. Sprinkle with fine sea salt and serve immediately.

Steps:

  • Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan., In a small bowl, combine the pretzels, butter and sugar. Press onto the bottom of prepared pan. Place pan on a baking sheet. Bake at 350° for 10 minutes. Cool on a wire rack., In a small bowl, whisk the condensed milk, milk and pudding mix for 2 minutes. 2 large eggs at room temperature
1 1/2 cups flour
1 cup rolled oats
2 cups crushed cornflakes
1 tsp baking soda
1/2 tsp salt
1 cup butterscotch chips
Sea Salt for sprinkling

Steps:

  • Preheat oven to 350. Melt butter in pan over medium heat. After a few minutes - butter will crack and foam. Whisk constantly thru this process. After a few minutes the butter will begin to brown at bottom of pan. Continue to whisk and when the butter has turned a golden amber color and smells nutty .. then remove from heat and transfer to a bowl ... be sure to scrape the brown butter bits. Let sit 5-10 minutes. Once cooled add to brown sugar and mix till combined - about 1 minute. Beat in eggs and vanilla until smooth and creamy - about 1 minute. Combine dry ingredients. Add to butter mixture and mix till just mixed. Add butterscotch chips. Drop on 1 tbsp drops onto parchment lined baking sheets. Bake 10-12 minutes. Allow to cool for 5 minutes before removing from cookie sheet. Sprinkle with salt immediately once removed from the oven.

1/2 c salted butter
1 c dark brown sugar, firmly packed
3/4 tsp coarse sea salt
3 Tbsp cornstarch
2 1/2 c whole milk
2 large eggs
1 1/2 tsp vanilla extract

Steps:

  • 1. Melt butter in a saucepan over medium heat. Add salt and dark brown sugar, cook until incorporated over low heat. Remove from heat and let cool slightly. In a small bowl combine cornstarch with 1/2 cup of the milk and whisk until cornstarch is dissolved. Whisk in the eggs. Pour the remaining 2 cups of milk into brown sugar mixture and whisk until combined.
  • 2. Pour a couple of Tablespoons of the brown sugar mixture into the egg mixture and stir to combine. This tempers the egg mixture so that it does not scramble when added to the warm brown sugar mixture.
  • 3. Add entire egg mixture to brown sugar mixture and whisk to incorporate. Return pan to the stove and start cooking on low heat. Bring mixture up to a boil stirring constantly. Once it is reaches a boil, reduce heat and continue to stir for about a minute.
  • 4. Remove from heat and stir in vanilla. Pour into 6 ramekins and chill for 1-2 hours. Sprinkle each serving with a little sea salt before serving. total time is about 2 1/2 hours

2 tbsp. turbinado sugar or raw sugar
1 3/4 c. all-purpose flour
1 3.4-ounce box instant butterscotch pudding mix
1 tsp. baking powder
1 tsp. baking soda
4 medium overripe bananas
3 large eggs, lightly beaten
1/2 c. canola oil
1 c. brown sugar
1 tsp. pure vanilla extract
1 1/4 tsp. kosher salt
1/2 c. toffee bits
1/4 c. butterscotch chips
1 tbsp. unsalted butter
2 tbsp. heavy cream
Coarse sea salt, for sprinkling

Steps:

  • Heat oven to 325 degrees F. Coat a 10-to 12-cup nonstick Bundt pan with cooking spray. Sprinkle turbinado sugar evenly to coat the pan. In a large bowl, whisk together the flour, pudding mix, baking powder, and baking soda. In a large bowl, mash 3 of the bananas. Cut the remaining banana into 1/4-inch pieces and set aside. Add the eggs, oil, sugar, vanilla, and 1 teaspoon salt to the mashed bananas and whisk to combine. Add the flour mixture and mix until fully incorporated. Fold the diced bananas and toffee bits. Transfer the mixture to the prepared pan and bake until a wooden pick inserted into the center comes out clean, 55 to 60 minutes. Let the cake cool in the pan for 15 minutes, then invert onto a wire rack to cool completely. Meanwhile, place the butterscotch chips, butter, cream, and the remaining 1/4 teaspoon salt in a small microwave-safe bowl. Microwave on high until the chips start to melt, 35 to 40 seconds. Whisk until smooth. Let cool for 5 minutes, then drizzle on top of the cake. Lightly sprinkle with sea salt.

1 cup (light packed) dark brown sugar
1 cup heavy cream
1/2 cup (1 stick) unsalted butter
1/4 cup Scotch
2 tablespoons light corn syrup
1 teaspoon vanilla extract
1 1/2 teaspoons flaky sea salt

Steps:

  • Cook brown sugar, cream, butter, Scotch, corn syrup, vanilla, and 1/4 cup water in a large saucepan over low heat, stirring, until sugar is dissolved. Increase heat to medium and bring to a boil (without stirring). Cook, swirling often, until sauce is thick enough to coat spoon, 8-10 minutes. Remove from heat and stir in sea salt.
