Served with asparagus, this soy ginger salmon is my favorite meal to prepare on Friday nights. It's light in calories and delicious, too. -Agnes Ward, Stratford, Ontario

Number Of Ingredients 11

2 tablespoons all-purpose flour
1 tablespoon cornstarch
4 salmon fillets (4 ounces each)
1 tablespoon canola oil
1/3 cup sherry or unsweetened apple juice
2 green onions, chopped
1/4 cup minced fresh gingerroot
3 tablespoons reduced-sodium soy sauce
2 tablespoons honey
1 tablespoon balsamic vinegar
1/2 teaspoon garlic powder

Steps:

  • In a shallow bowl, combine flour and cornstarch. Dip fillets in flour mixture. In a large nonstick skillet, cook salmon in oil over medium-high heat for 4-6 minutes on each side or until fish flakes easily with a fork. Remove and keep warm., Add sherry, stirring to loosen browned bits from the pan. Stir in the remaining ingredients; cook, stirring occasionally, for 2 minutes to allow flavors to blend. Serve with salmon.

Best salmon marinade and cooked to perfection! The fresher the fish the better the taste. Goes well will sweet potato fries or good salad :)

Number Of Ingredients 11

2 salmon fillets
6tbsp soy sauce
2 garlic cloves, finely chopped
1 pkg. green beans
1tbsp lime/lemon juice, plus extra squeeze
pinch of chilli flakes
3tbsp oil, plus extra drizzle
pinch of dill, chopped
knob of ginger, grated
1 squeeze of honey
Bunch of coriander, chopped

Steps:

  • First combine all ingredients, but the salmon and green beans in a bowl or sand which bag.
  • Then put green beans In a small oven dish and season with salt, pepper and drizzle of oil.
  • Next smother salmon fillets in marinade until covered. Leave to marinade for 30mins-1 hour in fridge. 10 mins before marinade time is up Preheat grill to 180'c/350 F/gas 4
  • Once salmon has marinade place it skin side down on top of green beans and cover top of dish with tinfoil. Place in oven for 10-12mins until it's flakey and cooked.
  • Take salmon out of dish with beans and serve with a squeeze of lime and left over coriander.

2 (4 ounce) fillets salmon
1 small yellow squash, chopped
1 small zucchini, chopped
2 roma (plum) tomato, thinly sliced
1 carrot, sliced
1 cup sliced mushrooms
2 tablespoons Creole-style hot pepper marinade
2 slices lemon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place salmon fillets in a piece of foil large enough create a sealed packet, and layer with squash, zucchini, tomato, carrot and mushrooms. Drizzle with Creole-style hot pepper marinade, and top each fillet with a lemon slice.
  • Seal foil tightly around salmon and vegetables. Place packet on a medium baking sheet. Bake 25 minutes in the preheated oven, or until vegetables are tender and fish is easily flaked with a fork.

This is a salmon loaf I have been making since the 1960's and everyone that has ever tried it, raves over it. It takes a little more time than some but it is worth it!! This is also great cold.

1 (1 lb) can salmon
1/2 cup milk
3 cups soft breadcrumbs
1/4 cup butter or 1/4 cup margarine, melted
1/3 cup salmon liquid
3 egg yolks, beaten
2 tablespoons chopped onions
1 tablespoon lemon juice
1/8 teaspoon pepper
3 egg whites, stiffly beaten

Steps:

  • Drain salmon, reserving liquid.
  • Flake salmon.
  • Scald the milk, add breadcrumbs and butter and let stand 5 minutes.
  • Add salmon liquid and beat until smooth.
  • Add egg yolks,onion,lemon juice,pepper,and salmon;mix thoroughly.
  • Fold in egg whites.
  • Pour in a well greased 1 1/2 quart loaf pan.
  • Bake in 350 degree oven 50 to 60 minutes or until firm in the center,remove from oven and let stand for 5 minutes.
  • Loosen from side of pan with a spatula and invert onto plate.
  • I usually make creamed peas to go with this or sometimes I use a can of celery soup diluted with half a can of milk, both ways are great.
  • This has been a favorite of mine for years, it is a little fussy but trust me, it is worth it.

1 pound salmon fillets, skin removed
1 tablespoon vegetable oil
2 tablespoons McCormick® Perfect Pinch® Salad Supreme Seasoning
1 tablespoon firmly packed brown sugar

Steps:

  • Preheat oven to 400°F. Place salmon on foil-lined baking pan. Brush salmon with oil. Mix Seasoning and brown sugar in small bowl. Rub on both sides of salmon.
  • Bake 10 minutes or until fish flakes easily with a fork.
