SALMON SUPREME WITH GINGER SOY SAUCE
Served with asparagus, this soy ginger salmon is my favorite meal to prepare on Friday nights. It's light in calories and delicious, too. -Agnes Ward, Stratford, Ontario

- In a shallow bowl, combine flour and cornstarch. Dip fillets in flour mixture. In a large nonstick skillet, cook salmon in oil over medium-high heat for 4-6 minutes on each side or until fish flakes easily with a fork. Remove and keep warm., Add sherry, stirring to loosen browned bits from the pan. Stir in the remaining ingredients; cook, stirring occasionally, for 2 minutes to allow flavors to blend. Serve with salmon.

SALMON SUPREME
Best salmon marinade and cooked to perfection! The fresher the fish the better the taste. Goes well will sweet potato fries or good salad :)

Steps:
- First combine all ingredients, but the salmon and green beans in a bowl or sand which bag.
- Then put green beans In a small oven dish and season with salt, pepper and drizzle of oil.
- Next smother salmon fillets in marinade until covered. Leave to marinade for 30mins-1 hour in fridge. 10 mins before marinade time is up Preheat grill to 180'c/350 F/gas 4
- Once salmon has marinade place it skin side down on top of green beans and cover top of dish with tinfoil. Place in oven for 10-12mins until it's flakey and cooked.
- Take salmon out of dish with beans and serve with a squeeze of lime and left over coriander.
SALMON SUPREME
With an assortment of fresh vegetables, this spicy salmon makes it seem as if you just dined in a five star restaurant. Serve over rice. Delicious!

- Preheat oven to 350 degrees F (175 degrees C).
- Place salmon fillets in a piece of foil large enough create a sealed packet, and layer with squash, zucchini, tomato, carrot and mushrooms. Drizzle with Creole-style hot pepper marinade, and top each fillet with a lemon slice.
- Seal foil tightly around salmon and vegetables. Place packet on a medium baking sheet. Bake 25 minutes in the preheated oven, or until vegetables are tender and fish is easily flaked with a fork.

SALMON LOAF SUPREME
This is a salmon loaf I have been making since the 1960's and everyone that has ever tried it, raves over it. It takes a little more time than some but it is worth it!! This is also great cold.

Steps:
- Drain salmon, reserving liquid.
- Flake salmon.
- Scald the milk, add breadcrumbs and butter and let stand 5 minutes.
- Add salmon liquid and beat until smooth.
- Add egg yolks,onion,lemon juice,pepper,and salmon;mix thoroughly.
- Fold in egg whites.
- Pour in a well greased 1 1/2 quart loaf pan.
- Bake in 350 degree oven 50 to 60 minutes or until firm in the center,remove from oven and let stand for 5 minutes.
- Loosen from side of pan with a spatula and invert onto plate.
- I usually make creamed peas to go with this or sometimes I use a can of celery soup diluted with half a can of milk, both ways are great.
- This has been a favorite of mine for years, it is a little fussy but trust me, it is worth it.
