Nonstick cooking Spray
2 tablespoons packed light brown sugar
1 tablespoon chili powder
1 teaspoon ground cumin
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
6 (6-ounce) salmon fillets, skin and any pin bones removed
1 tablespoon olive oil

Steps:

  • Coat your grill or a grill pan with cooking spray and preheat over medium heat. While the grill is heating, combine the brown sugar, chili powder, cumin, salt, and pepper. Brush each salmon fillet with 1/2 teaspoon of the oil, then rub each fillet with about 1/2 tablespoon of the spice mixture.
  • Grill the salmon, flesh side down, until charred, 4 to 5 minutes. Flip the salmon and cook another 5 to 6 minutes for medium doneness. For well done fish, cook an additional 1 to 2 minutes. Remove to a platter and serve immediately.

While a fragrant rub like this one might overpower a milder fish, salmon stands up to strong flavors beautifully. This dish works well with summer picnic sides like coleslaw and potato salad, but it is equally good with roasted potatoes and a simple green salad. The rub is only mildly spicy as written, so add a pinch of cayenne if you'd like a little more kick.

4 (6-ounce) skinless salmon fillets
1 1/2 tablespoons dark or light brown sugar
1 teaspoon kosher salt, plus more for serving
1 teaspoon dry mustard powder
1 teaspoon smoked paprika
1/2 teaspoon chili powder
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
2 to 3 tablespoons olive oil

Steps:

  • Heat the oven to 450 degrees. Pat the salmon fillets dry with a paper towel and place them in an ovenproof baking dish large enough to hold them without crowding.
  • In a small bowl, combine the brown sugar, salt, mustard powder, paprika, chili powder, pepper and garlic powder; mix well with a fork.
  • Sprinkle the spice rub over the fillets, then turn them, pressing gently, to coat all sides with the rub. Brush the fillets all over with the olive oil.
  • Roast the salmon for 12 to 14 minutes, depending on the thickness of the fillets, until it flakes easily and is just cooked in the center. Let the salmon rest for 5 minutes, then sprinkle lightly with salt and serve.

3 tablespoons kosher salt
2 tablespoons sugar
1 tablespoon light or dark brown sugar
2 teaspoons ground black pepper
2 teaspoons celery seed
2 teaspoons paprika
2 teaspoons garlic powder
1 teaspoon cayenne pepper
1 teaspoon onion powder
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
1/4 teaspoon ground fennel seed
Salmon
2 1/2 pounds skin-on salmon fillets
mayonnaise
1 lime

Steps:

  • Combine all the rub ingredients until thoroughly mixed. You can store any leftover rub in an airtight container. Meanwhile, heat the grill to medium heat. Sprinkle several tablespoons of the rub evenly over the skinless side of the salmon fillets and gently rub it into the fish flesh. Spread a very thin layer of mayonnaise over the rub on the salmon. Place the fish on an oiled grill rack, skin side down. Close the grill cover and cook until the fish flakes easily. Cooking time will vary by the thickness of the fillets but expect them to take 15-20 minutes. Do not overcook the fish and do not turn it while cooking. Before serving, squeeze fresh lime juice over the fillets.
