My kids do not like anything fishy. I snuck this one by them and they loved it. I serve them as snacks, sandwiches, or as dinner with rice and a veggie on the side. Personally I like to dip them in horseradish and snack away!! Hope you like them.

1 (14.75 ounce) can salmon, drained and flaked
2 eggs, beaten
¼ cup garlic and herb seasoned dry bread crumbs
¼ cup dry potato flakes
1 medium onion, minced
1 clove garlic, minced
¼ teaspoon dried dill weed
¼ teaspoon celery salt
salt and pepper to taste
2 tablespoons olive oil

Steps:

  • In a medium bowl, mix salmon, eggs, garlic and herb seasoned dry bread crumbs, dry potato flakes, onion, garlic, dill weed, celery salt, salt, and pepper. Form the mixture into 2 inch balls, and flatten into patties about 1/2 inch thick.
  • Heat olive oil in a medium skillet over medium heat. In batches, cook patties about 5 minutes on each side, until lightly browned.

Crispy and golden-brown, these croquettes are the perfect snack to serve at your next holiday soirée. Tender and fluffy cooked potatoes are combined with your choice of tinned or smoked salmon and formed into cakes. The ultra-crisp exterior is provided by a coating of panko breadcrumbs.

Number Of Ingredients 11

2 russet potatoes (about 1 1/4 pounds), peeled and cut into 1-inch cubes
Kosher salt (we use Diamond Crystal) and freshly ground pepper
2 large eggs, plus 2 large yolks
1/4 cup chopped scallion greens (whites reserved for another use)
1 teaspoon grated lemon zest, plus 1 tablespoon fresh juice
3 tablespoons unbleached all-purpose flour
7 1/2 ounces red salmon (1 tin), drained and flaked, any skin and bones removed and discarded, or cold-smoked salmon
1 1/2 cups panko breadcrumbs
Vegetable oil, such as safflower, for frying
Flaky sea salt, such as Jacobsen
Zesty Tomato and Curried-Sour-Cream Dipping Sauces, for serving

Steps:

  • In a saucepan, combine potatoes and enough cold water to fully submerge them. Bring to a boil. Season with 2 teaspoons kosher salt and boil until potatoes are easily pierced with the tip of a knife, 10 to 12 minutes. Drain; let potatoes cool 5 minutes, then press through a ricer or colander and stir until smooth (or mash until smooth). Transfer to a large bowl; let cool completely.
  • Stir egg yolks, scallions, lemon zest and juice, flour, 2 teaspoons kosher salt, and 1/4 teaspoon pepper into mashed potatoes. Fold in salmon. Form mixture into golf-ball-size rounds, then flatten into 1/2-inch-thick disks. Transfer to a parchment-lined tray and refrigerate until cold, at least 2 hours or, loosely covered, up to 1 day.
  • Whisk whole eggs in a shallow bowl and season with kosher salt and pepper. Place panko in another shallow bowl and season. Pour a scant 1/2 inch oil into a medium heavy-bottomed skillet, such as cast iron. Heat over medium until oil shimmers and bubbles form instantly around a breadcrumb dropped in (350°F on a deep-fry thermometer). Working in batches, dip croquettes in egg, allowing excess to drip back into bowl, then coat in panko, pressing to adhere.
  • Fry, flipping once and adjusting heat as needed to maintain a level temperature, until crisp and golden brown, about 5 minutes. Drain on a wire rack set over a rimmed baking sheet, then sprinkle with flaky salt; keep warm in a preheated 200°F oven while frying the rest. Serve warm, with dipping sauces.

Mama Kaye's Salmon Breakfast Croquettes image

8 ounces baked or poached salmon, flaked
2 large eggs, beaten
2 cups mashed potatoes
1 small white onion, diced
5 cloves garlic, minced
Salt and pepper
6 tablespoons all-purpose flour
Peanut oil, for frying

Steps:

  • Mix the salmon, eggs, mashed potatoes, onion and garlic in a large bowl. Season with salt and pepper. Stir in the flour to hold the mixture together.
  • Form the mixture into golf-ball-size balls. Refrigerate 1 hour or overnight.
  • Heat about 1 inch of peanut oil in a large straight-sided skillet until a deep-fry thermometer registers 325 degrees. Fry the croquettes, in batches, until crisp and golden on one side, 3 to 4 minutes, adjusting the heat as necessary. Turn and cook until golden on the other side, 1 to 2 more minutes. Drain on paper towels.

My mom was never much of a cook(bless her soul). She learned on her own. This was one of her "mistakes" that turned out just great! I've changed it ever so slightly. Time to prepare includes chilling time.

14 3/4 ounces canned red salmon
1 1/2 cups cold mashed potatoes (no gravy,pls)
2 tablespoons unsalted butter, room temp., divided
1/4 cup matzo meal (can use cracker meal)
1 egg, slightly beaten
1/2 yellow onion, finely grated (optional)
1/4 teaspoon white pepper
1/4-1/2 teaspoon salt (I use salt substitute)
1/2 teaspoon fresh lemon zest (fresh is important)
2 tablespoons light vegetable oil

Steps:

  • Drain and remove skin from salmon, leave bones.
  • Mix everything but the oils and 1 tbsp butter together. Let rest in refrigerator for at least 30 minutes.
  • Make all the patties and place them on a plate. If they feel a bit too soft to you from the handling, place back in refrigerator for awhile. Don't make more than recipe calls for or they will be dry on the inside.
  • Keep them about the size of your palm -- they will be fat -- press down but don't mash flat.
  • Spray large frying pan with Pam. Heat over medium-high. Add 1/2 tbls butter and one tbsp oil to coat pan nicely. Swirl butter around.
  • Fry four patties at a time til golden brown on both sides.
  • Add rest of butter and 1 tbsp oil. Repeat.
  • These are good either hot or cold.

1 (15 1/2 ounce) can salmon
1 large baked potato (or 1 sleeve saltine crackers)
1 egg, lightly beaten
1/4 teaspoon salt
1/4 teaspoon pepper
2 -3 tablespoons onions, chopped
oil, for frying
saltine crumbs, made from saltines

Steps:

  • Drain liquid from salmon.
  • Remove large bones, skin, and dark brown spots from salmon.
  • Gently break up salmon and set aside.
  • Mash baked potato, or crush sleeve of crackers into crumbs, and add to salmon.
  • Stir in egg, onions, salt, and pepper.
  • Shape mixture into egg-shaped croquettes if using potatoes and roll in cracker crumbs. Shape salmon into patties if using crushed crackers.
  • Brown in hot oil a few minutes on each side until golden.
  • Reserve some liquid from the salmon if the patties are to dry to hold together, add 1-2 teaspoons.

1 c mashed potatoes(leftover)
1 can(s) salmon
1 egg
1/2 c onions, chopped
1 c bread crumbs

Steps:

  • 1. Mix mashed potatoes, salmon, egg, onions.
  • 2. Form in Patties and coat with bread crumbs
  • 3. Put a little oil in pan. Put the patties in the pan. Let it cook until golden brown at the bottom, turn the patties around and cook on the other side.
  • 4. The total cooking time is between 5 and 10 minutes, depending how thick your patties are.
