Yield 8 slices

Number Of Ingredients 11

1 pie crust
1 Tbsp olive oil
1/2 cup shallots, finely chopped
4 ounces smoked salmon, chopped
4 ounces goat cheese, crumbled
4 large eggs
1 cup milk
1/2 cup cream (or part sour cream)
2 Tbsp chopped fresh dill
1 teaspoon lemon zest
1/8 teaspoon freshly ground black pepper

Steps:

  • 1. Preheat oven to 350 degrees. 2. Roll out dough to a 12 inch circle. Press into a 10 inch round tart pan. 3. Prick bottom of crust lightly with fork; pre-bake for 10 minutes. 4. Heat oil in a skillet; cook shallots until translucent. 5. Whisk the eggs, milk, dill, and lemon zest in a bowl. 6. Layer the bottom of the pan with the shallots, then add half of the salmon, and half of the goat cheese. Then add the egg mixture, and layer with the rest of the salmon and goat cheese. 7. Bake for 30 - 35 minutres of until the center is set. Cool for 15 minutes. Enjoy!

1 recipe pie dough (see Pâte Brisée recipe)
1 Tbsp olive oil
4 medium shallots, thinly sliced (about 1/2 cup)
4 ounces smoked salmon, chopped
4 ounces goat cheese, crumbled
3 large eggs
1 cup milk
1/2 cup cream
2 Tbsp chopped fresh dill
1 teaspoon lemon zest
1/8 teaspoon freshly ground black pepper

Steps:

  • 1 Roll out dough into a 12-inch circle. Place it into a 10-by-1 1/2-inch round tart pan (with or without a removable bottom), pressing dough into corners. Place in freezer to chill for 30 minutes. 2 Preheat oven to 350°. Line pastry with aluminum foil or parchment paper, pressing into the corners and edges. Fill at least two-thirds with baking weights - dried beans, rice, or ceramic or metal pie weights. Bake first for 15 minutes, remove from oven and let cool a few minutes. Carefully remove aluminum foil or parchment paper and weights. Poke the bottom of the pie pan with the tongs of a fork (fork holes are for any air to escape) and return to oven. Bake for an additional 10 minutes or until just lightly golden. Place on a wire rack to cool while making filling. 3 Heat oil in a small skillet on medium heat. Add the shallots and cook until translucent, a couple minutes, remove from heat. Whisk eggs in a medium bowl, whisk in milk, cream, dill, lemon zest, and black pepper. 4 Line the bottom of the quiche crust with cooked shallots. Put one layer down of half the smoked salmon and goat cheese. Pour half of the egg/milk/cream mixture over the salmon and goat cheese in the quiche shell. Layer down the remaining salmon and goat cheese, and pour the remaining egg/milk/cream mixture over it. Transfer to oven. Bake at 350°F until just set in the center, about 30 to 35 minutes. Remove from oven and cool on a wire rack for 15 minutes before serving. Serves 6.

One of my favorite fishes and one of my favorite dishes. You can make a lower calorie quiche by replacing the half and half with the same amount of milk plus 3 Tablespoons of flour.

Number Of Ingredients 15

1 pie shell
6 ounces salmon fillets
2 tablespoons white wine vinegar
1 bay leaf
5 peppercorns
1 tablespoon dill, finely chopped
2 tablespoons parsley, finely chopped
1 tablespoon shallot, chopped
1 1/2 teaspoons butter
3 eggs
cream
1 1/2 teaspoons Dijon mustard
1/2 teaspoon salt
6 ounces ricotta cheese
2 ounces cheddar cheese, grated

Steps:

  • Place the salmon in a shallow pan. Add enough water to just cover the fish. Season with vinegar, bay leaf and peppercorns. Poach gently until the salmon tests just done. Do not overcook! Flake the salmon into pieces, and mix in herbs.
  • Saute shallots in butter until lightly browned. Remove from the heat and mix with salmon and herbs.
  • Beat eggs with the half and half, mustard, and salt. Put salmon mixture in the pie shell. Add the ricotta followed by the egg mixture. Sprinkle the cheddar cheese over the top.
  • Bake 10 minutes at 450°F then turn the oven down to 350°F., bake until the filling is firm (about 20 minutes longer). Let the pie cool for a few minutes before slicing.
