Adapted from an Australian Womens Weekly Recipe. Makes quite an impressive addition to a fingerfood banquet, yet it is quite simple to make.

Number Of Ingredients 7

250 g soft cream cheese
2 tablespoons fresh basil, chopped
6 sun-dried tomatoes, chopped
10 slices white bread
20 slices salami
10 pitted green olives, halved
10 pitted black olives, halved

Steps:

  • Blend or process half the cheese with basil until smooth.
  • Blend or process remaining cheese separately with tomatoes until smooth.
  • Cut rounds from the bread the same size as the salami.
  • Spread a slice of salami with basil mixture, top with a bread round.
  • Spread bread with tomato mixture, top with a slice of salami.
  • repeat with remaining salami, basil mixture, bread and tomato mixture, making 10 stacks.
  • Cover, refrigerate for 30 minutes.
  • Just before serving, cut stacks into 4 wedges, top each wedge with half an olive, secure with a toothpick.
  • Can be prepared 3 hours ahead.
  • Store covered in refrigerator.
  • Not suitable to freeze.
  • Preparation time does not include refrigeration time.

1 package (16 ounces) uncooked penne pasta
1-1/2 pounds bulk Italian sausage
2/3 cup julienned soft sun-dried tomatoes (not packed in oil)
3 garlic cloves, thinly sliced
2 teaspoons fennel seed
1/4 teaspoon crushed red pepper flakes
1/2 cup dry red wine or reduced-sodium chicken broth
1/2 cup heavy whipping cream
1 package (9 ounces) fresh spinach
3/4 cup shredded Romano cheese, divided
2/3 cup crushed seasoned salad croutons

Steps:

  • Cook pasta according to package directions for al dente., Meanwhile, in a Dutch oven, cook sausage over medium-high heat until no longer pink, 5-6 minutes, breaking into crumbles. Stir in tomatoes, garlic, fennel seed and pepper flakes; cook 1 minute longer., Add wine. Bring to a boil; cook until liquid is almost evaporated, 1-2 minutes. Stir in cream; cook 1 minute longer. Add spinach; cook and stir just until spinach is wilted., Drain pasta; add to sausage mixture. Stir in 1/2 cup cheese. Sprinkle with crushed croutons and remaining cheese.

3/4 cup drained oil-packed sun-dried tomatoes, sliced, 2 tablespoons of oil reserved
1 pound Italian hot sausages, casings removed
2 (8-ounce) packages frozen artichoke hearts
2 large cloves garlic, chopped
1 3/4 cups chicken broth
1/2 cup dry white wine
16 ounces fusilli pasta
1/2 cup shredded Parmesan, plus additional for garnish
1/3 cup chopped fresh basil leaves
1/4 cup chopped fresh Italian parsley leaves
8 ounces water-packed fresh mozzarella, drained and cubed, optional
Salt and freshly ground pepper

Steps:

  • Heat the oil reserved from the tomatoes in a heavy large frying pan over medium-high heat. Add the sausages and cook until brown, breaking up the meat into bite-size pieces with a fork, about 8 minutes. Transfer the sausage to a bowl. Add the artichokes and garlic to the same skillet, and saute over medium heat until the garlic is tender, about 2 minutes. Add the broth, wine, and sun-dried tomatoes. Boil over medium-high heat until the sauce reduces slightly, stirring occasionally, about 8 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Cook the fusilli in boiling water until tender but still firm to the bite, stirring often, about 8 minutes. Drain the pasta (do not rinse). Add the pasta, sausage, 1/2 cup Parmesan, basil, and parsley to the artichoke mixture. Toss until the sauce is almost absorbed by the pasta. Stir in the mozzarella. Season, to taste, with salt and pepper. Serve, passing the additional Parmesan cheese alongside.

1/2 cup chopped shallots
2 garlic cloves, minced
1/2 cup chopped drained oil-packed sun-dried tomatoes

5 large eggs
3 large egg yolks
1 cup half and half
1 cup whipping cream
2 cups grated mozzarella cheese
1/2 teaspoon salt

Steps:

  • Preheat oven to 375°F. Butter 13x9x2-inch glass baking dish. Sauté sausage in medium nonstick skillet over medium heat until brown and cooked through, breaking up with back of fork into small pieces, about 10 minutes. Add shallots and garlic and sauté 3 minutes. Add sun-dried tomatoes and 2 tablespoons parsley; stir 1 minute. Spread sausage mixture in prepared dish. (Can be made 1 day ahead. Cover and refrigerate.)
  • Whisk eggs, egg yolks, half and half, whipping cream, 1 1/2 cups cheese, and salt in large bowl to blend well. Pour egg mixture over sausage mixture in dish. Sprinkle remaining 1/2 cup cheese and 2 tablespoons parsley over. Bake until top of casserole is golden brown and knife inserted into center comes out clean, about 30 minutes. Let stand 5 minutes before serving.

1 -3 lb salmon fillet, deboned
6 large garlic, minced
1 teaspoon salt
4 tablespoons fresh parsley, chopped
2 tablespoons sun-dried tomatoes packed in oil, minced
1/4 cup olive oil

Steps:

  • Combine garlic and salt and grind into a paste. Combine the garlic, parsley, dried tomatoes and olive oil in a bowl; blending all ingredients. Chill until ready for use.
  • With a sharp knife, cut two lengthwise slits in the salmon fillet, dividing the surface of the fish into thirds. Cut to the skin, but not through it.
  • Preheat grill.
  • Spread half the garlic mixture over the fillet and into the slits. Place the fish on grill and barbecue over a medium heat. Close the lid and grill for 15 minutes.
  • Spread the remaining garlic mixture on the fillet. Close the lid, turning the temperature to high and grill 10 minutes more, or until fish flakes when tested.
  • Remove the fish from the grill.

I got this recipe from a little cookbook entitled "Tested Best", which featured recipes from America's food companies test kitchens. Surprisingly good for little effort, and it can be varied to suit your taste. A great addition to an appetizer tray, or even as a late night snack!

1 3 oz. package cream cheese, softened
2 Tbsp milk or cream
1 tsp lemon juice
1/2 tsp msg - accent (optional)
1/2 tsp prepared mustard
1/4 tsp salt
1 tsp horseradish
2 Tbsp finely crushed corn chips (fritos)
5 slice salami (approx. 4 inches in diameter)

Steps:

  • 1. Blend cream cheese with milk. Add remaining ingredients except salami.
  • 2. Spread cream cheese mixture on slices of salami, putting one on top of the other to form a stack, ending with salami.
  • 3. Chill. When ready to serve, cut into wedges.

I decided to experiment one Sunday morning with a breakfast quiche. I love sun-dried tomatoes and always look for new ways to use them. I think the sweetness of the tomatoes goes wonderfully with sausage.

1 (9 inch) frozen pie crust, thawed
½ pound bulk pork sausage
2 shallots, chopped
1 clove clove garlic, minced
½ cup chopped sun-dried tomatoes
2 tablespoons chopped fresh parsley
4 eggs
1 cup whipping cream
1 cup shredded mozzarella cheese

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C). Line pie pan with pie crust, and prick several places with a fork. Place a double layer of aluminum foil over the crust. Bake in the preheated oven for 8 minutes, and then remove foil. Continue baking until crust begins to set, about 5 minutes; remove from oven. Reduce oven temperature to 350 degrees F (175 degrees C).
  • In a large skillet, cook sausage until well browned, stirring frequently. Mix in shallots and garlic, and continue cooking for 1 minute. Stir in sun-dried tomatoes and 1 tablespoon parsley. Spread mixture into the bottom of the warm pie crust.
  • In a mixing bowl, beat eggs with cream. Stir in cheese. Pour mixture over sausage in pie crust. Sprinkle remaining parsley over the top.
  • Bake in preheated oven until crust browns and a knife inserted in the center comes out clean, about 45 to 60 minutes.

Cheesy Baked Spaghetti Squash Boats with Salami, Sun-Dried Tomatoes, and Spinach image

This gluten-free baked pasta dinner relies on spaghetti squash as a replacement for traditional noodles-and cheese, lots of cheese.

2 small or 1 large spaghetti squash (3-3 1/2 pounds), halved lengthwise, seeded
Kosher salt
1 head garlic
1 tablespoon olive oil
8 ounces cream cheese
1 cup whole milk
Freshly ground black pepper
6 ounces salami, preferably Soppressata, sliced into 1/4-inch strips
5 ounces baby spinach (about 4 packed cups)
1/2 cup marinated sun-dried tomatoes (about 2 ounces), coarsely chopped
1/4 cup finely grated Parmesan (about 1/2 ounce)
1/2 teaspoon crushed red pepper flakes (optional)
1 1/2 cups shredded mozzarella (about 6 ounces), divided

Steps:

  • Preheat oven to 375°F. Line a rimmed baking sheet with parchment paper.
  • Sprinkle each half of squash with 1/4 tsp. salt, then place facedown on prepared sheet. Trim 1/4" from top of garlic head to expose cloves. Place head on a sheet of foil, drizzle oil over, then wrap tightly to enclose. Transfer to baking sheet. Bake until interior of squash is fork-tender and garlic is very soft, 30-50 minutes, depending on size of squash. Let cool slightly.
  • Carefully unwrap garlic. Let cool slightly, then squeeze pulp out onto a cutting board. Finely chop.
  • Heat cream cheese, milk, and chopped garlic in a medium saucepan over medium, stirring occasionally, until smooth. Season with salt and pepper; set aside.
  • Using a fork, scrape squash crosswise to pull strands from shells into a large bowl; reserve shells. Toss squash with cream cheese mixture, salami, spinach, tomatoes, Parmesan, red pepper flakes, if using, and 1 cup mozzarella until combined. Stuff squash mixture back into shells and top with remaining 1/2 cup mozzarella.
  • Transfer shells to oven and bake until squash mixture is bubbling and lightly browned, about 25 minutes.

  • Squash boats can be assembled (but not baked) 1 day ahead. Store in an airtight container and chill.

This works well as part of an appitizer tray. I got this recipe many, many years ago from a good friend. This can be made up ahead of time and chilled.

8 ounces cream cheese, softened
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/2 garlic clove, minced
1 green onion, chopped finely
36 slices salami

Steps:

  • Combine the cream cheese filling and spread between salami slices.
  • Stack to 4 slices then chill for up to an hour (or before serving time)
  • Cut into 4 wedges. Dip sides into parsley.
