Saké aperitif image

Mix saké with sherry, madeira, elderflower and maple syrups to make this aperitif cocktail. Garnish with a piece of grapefruit zest for the ultimate finish

50ml saké
15ml sherry (we used Pedro Ximénez)
15ml madeira
1 tsp elderflower liqueur
1-2 tsp maple syrup
ice
piece of grapefruit zest

Steps:

  • Mix all the ingredients together well in a mixing glass or jug. Then fill the glass up with ice and stir again to chill the cocktail.
  • Strain the mixture into a sherry or port glass. Garnish with a small piece of grapefruit zest.

APPLE SOJU COCKTAILS



Apple Soju Cocktails image

This refreshing aperitif, a brainchild of David Arnold of the French Culinary Institute, bathes crisp matchsticks of Pink Lady apple with soju (a Korean spirit) and a little sparkle.

Yield Makes 8 drinks

Number Of Ingredients 5

1 Pink Lady or Granny Smith apple
2 cups soju or sake
5 cups chilled tonic water (40 fluid ounces)
8 lime wedges
Equipment: an adjustable-blade slicer fitted with 1/4-inch julienne blade

Steps:

  • Cut apple into matchsticks with slicer, discarding core, then put in a pitcher and stir in soju. Let macerate, covered and chilled, at least 30 minutes.
  • Fill 8 (12-ounce) double Old Fashioned glasses with ice. Strain about 1/4 cup soju into each glass, then add some apple pieces to each glass. Top off drinks with tonic and serve with lime wedges.
