Steps:
- In large bowl toss potatoes with lemon juice.
- Grate onion; squeeze out liquid and discard. Add grated onion to bowl with potatoes.
- Mix in remaining ingredients except oil.
- Heat 1/2 inch oil in large skillet over medium-high heat. Portion 1/4-cup measures of potato mixture into hot oil, spacing apart. Cook until golden brown, about 3 minutes on each side, turning once. Drain on paper towels.
- Keep hot on baking sheet in 325 degree oven. Repeat with remaining potato mixture, adding oil to skillet, as needed. Serve with applesauce, if desired.

BYELORUSSIAN KOLDUNY (POTATO PANCAKES STUFFED WITH GROUND MEAT)
Steps:
- Mix the chicken, beef, onions, 1/4 teaspoon salt and pepper. Form 3 thin patties about 4 1/2 inches in diameter.
- Add the potatoes and remaining 1-ounce onions to a grinder and grind everything until the batter is smooth. Pour the batter in a bowl and add the flour, the remaining 1/2 teaspoon salt and the egg. Mix everything thoroughly. Form the batter into round thin pancakes.
- Heat the oil in a pan. Place a potato pancake in the pan, topped with a meat patty and covered by more potato batter, covering all the meat. Fry the pancake on one side, about 1 minute. Flip it to the other side with a spatula, holding the top of the not-fried side with the fork. Make the fire smaller and cover the pan. Fry for 5 to 7 minutes, turning the pancakes over from time to time.
DERUNY - UKRAINIAN POTATO PANCAKES

- Peel potatoes and onion:
- Take big bowl, grate potatoes and onion (on the star shaped grater), taking turns and mixing grated mixture. Onion juice will keep potatoes from browning.
- Add flour, egg, sour cream and mix it well, than add 1 tsp of salt and some black pepper, batter should be still liquid enough so you can easily ladle it.
- Warm up a skillet with 2-3 Tbsp of cooking oil over medium/high heat. Add 1 heaping Tbsp of mixture at a time to the skillet fry on one side until golden brown in color, then flip to other side and fry for the same amount of time. Repeat the same procedure for the rest of the batter.
