4 boneless skinless chicken breast halves (6 ounces each)
4 tablespoons butter, divided
1/2 cup white wine or chicken broth
1/2 cup heavy whipping cream
1 tablespoon minced fresh rosemary

Steps:

  • In a large skillet over medium heat, cook chicken in 1 tablespoon butter until a thermometer reads 165°, 4-5 minutes on each side. Remove and keep warm., Add wine to pan; cook over medium-low heat, stirring to loosen browned bits from pan. Add cream and bring to a boil. Reduce heat; cook and stir until slightly thickened. Stir in rosemary and remaining 3 tablespoons butter until blended. Serve sauce with chicken.

8 tablespoons (1 stick) chilled unsalted butter, divided
1 large shallot, minced
1/2 cup balsamic vinegar
2 large fresh rosemary sprigs
2 pounds mixed sweet onions, large shallots, baby leeks, and green onions
2 tablespoons olive oil
4 (1 1/4-inch-thick) New York strip steaks (each about 6 ounces)
2 tablespoons orange juice

Steps:

  • Melt 6 tablespoons butter in heavy small saucepan over medium heat. Add minced shallot and cook until translucent, about 2 minutes. Add vinegar and rosemary and simmer until syrupy and reduced to 1/2 cup, about 6 minutes. Remove from heat (balsamic sauce will separate as it stands).
  • Prepare barbecue (medium-high heat). Peel sweet onions, then cut into 1/2-inch-thick rounds. Skewer horizontally with toothpicks to keep intact. Peel shallots; cut in half lengthwise. Trim root ends and tops of leeks. Cut in half lengthwise; rinse to remove any dirt. Trim root ends of green onions. Place sweet onions, shallots, leeks, and green onions on rimmed baking sheet and drizzle with oil; toss. Sprinkle with salt and pepper.
  • Sprinkle steaks with salt and pepper. Grill sweet onions, shallots, leeks, and green onions until tender, turning often, about 5 minutes for green onions and 10 minutes for sweet onions, shallots, and leeks. Move onions to cooler part of grill to keep warm. Grill steaks to desired doneness, about 7 minutes per side for medium-rare. Transfer steaks and onions to platter; cover.
  • Remove rosemary sprigs from balsamic sauce; add orange juice and bring to simmer. Remove saucepan from heat; add remaining 2 tablespoons chilled butter and whisk until melted and sauce is smooth. Season sauce to taste with salt and pepper. Drizzle some of sauce over steaks and onions. Serve, passing remaining sauce separately.

2 ⅓ cups '00' grade pasta flour, plus more for dusting
3 eggs
1 cup ricotta cheese
½ cup cream cheese
½ cup grated mozzarella cheese
½ cup grated cheddar cheese
1 handful fresh parsley leaf, finely chopped
salt, to taste
pepper, to taste
2 sprigs fresh rosemary, just the leaves, finely chopped
2 tablespoons butter
¾ cup pine nuts

Steps:

  • Pour the flour into a large bowl and make a well in the centre, crack the eggs into the well and mix everything together with a spoon or fork.
  • When the mixture has combined, knead the dough for 5 minutes. Form it into a ball, wrap it in cling film and refrigerate for 30 minutes.
  • While the dough is in the fridge, mix together the ricotta, cream cheese, mozzarella, cheddar, parsley and a sprinkling of salt and pepper to make the filling. Set aside until needed.
  • On a floured surface, roll half of the dough out as thin as you can using a rolling pin to make a long rectangular shape (If you have a pasta machine, use the 2nd thinnest setting) - keep the other half of the dough in cling film in the fridge to keep it fresh until you're ready for it.
  • On one side, dollop tablespoons of the cheese filling onto the pasta, leaving at least a 1-2cm (⅓-¾ inch) gap in all directions.
  • Brush the pasta that's surrounding the filling with water or egg white. Fold the other side of the past over and on top of the filling, pushing down around each part to seal it in, creating a long strip of ravioli pieces.
  • Use a knife or pizza cutter to cut around and create individual pieces of ravioli.
  • Dust these pieces with flour and repeat from step 4 using the other half of the dough.
  • Boil the pasta in salted water on a medium heat for 2-3 minutes until the pasta floats to the top, then drain.
  • Melt the butter in a frying pan then add the pine nuts, cook for 2 minutes then add the rosemary - cook for a further minute or two until the pine nuts look toasted and the rosemary has just begun to brown and crisp up a bit.

8 2 inch thick lamb chops
1/4 cup plus 2 T olive oil
1/2 cup balsamic vinegar
2 t minced garlic
1 1/2 T chopped fresh rosemary
1/2 t salt
2 shallots chopped
1/2 cup dry red wine
6 T butter
1/2 t sea salt
1/4 t black pepper

Steps:

  • Place lamb chops in gallon bad and add 1/4 cup olive oil, 1/4 balsamic vinegar, garlic, 1/2 T rosemary and salt. Let marinate at room temperature while you fix sauce. Add shallots (about 2T) to am 8 inch pan and then add red wine and 1/4 cup balsamic vinegar. Bring mixture to a boil and reduce to syrupy consistency. Slowly add the butter in 3 parts. Add 1 T rosemary and keep warm. Remove chops from marinade and pat dry with paper towel. Season with salt and pepper. Put 2 T olive oil in 10 inch pan and add chops. Cook about 3 minutes on each side. Remove from pan and let rest before serving with sauce.

PORK CUTLETS WITH ROSEMARY BUTTER SAUCE

I love these pork cutlets as do my family. The rosemary butter sauce is wonderful with it. I usually serve Ca Coots (Italian Zucchini Stew) with this and some nice french bread. Yum.

1 pkg pork tenderloin
2 c italian bread crumbs
3 eggs
2 c flour
1/4 c milk
oil
wax paper
BUTTER ROSEMARY SAUCE
3 shallots chopped
1 qt beef stock
1 stick butter

Steps:

  • 1. Rinse off pork tenderloin and cut silver skin and fat off. Cut into 1 inch cutlets.
  • 2. Lay a long piece of wax paper down and place pork cutlets on it. Place another long piece of wax paper over it and flatten cutlets with a mallet (do not pound - these are tender - you just want them flattened for even cooking).
  • 3. Place eggs and milk in a pie plate or bowl and wisk until mixed. In another pie plate add flour. In another pie plate add bread crumbs.
  • 4. Dip both sides of each pork cutlet in the flour, then the egg wash and then the bread crumbs until all are breaded.
  • 5. Place enough oil in a large pan to cover the bottom. Heat oil on medium high heat. Fry each pork cutlet about 2 minutes on each side until all are cooked. I keep them on a plate in a warm oven until all are finished.
  • 6. Once all the pork is cooked, pour off most of the oil but not the browned bits in the pan (you need these for the sauce. Add 4 tablespoons of butter and chopped shallots. Saute for 3 minutes or until soft. Add beef stock (we like a lot of sauce, so I use a 32 ounce box of stock). Add 2 tablespoons of dried rosemary. Let sauce reduce for 20 minutes add last 4 tablespoons of butter and serve. We like the sauce on the side so I serve in in a small bowl with the cutlets.

1 cup chicken stock
6 tablespoons unsalted butter, divided

6 cloves garlic, chopped coarsely

  • In a large saute pan over low heat, melt 4 tablespoons butter and add the onions. The butter and onions will slowly cook, becoming deep golden brown after 7-10 minutes. Add the garlic and continue cooking for 2 minutes. Add the chicken stock and the chopped rosemary. Increase the heat to medium-high and cook until reduced by a third, about 6-8 minutes. Meanwhile, in a large pot, add 3 quarts of water and about 3 tablespoons salt and bring to a full rolling boil. Add the spaghetti, return to a boil and cook for 7-10 minutes, until al dente. Drain in a colander and add the pasta to the sauce in the pan. Add the remaining 2 tablespoons butter and the cheese; mix well until the butter is incorporated. Adjust seasoning with salt and pepper to taste. Serve in a big bowl or on 4 individual plates.

2 cups pecans (about 8 ounces)
1 cup all purpose flour
2 large (12- to 14-ounce) trout, filleted, skin left intact
3 large egg whites, beaten to blend
For sauce
1 1/2 cups fresh orange juice
1 cup dry wine
2/3 cup chopped shallots
1/4 cup white wine vinegar
8 5-inch-long fresh parsley stems
1 1/2 tablespoons fresh lemon juice
1 large fresh thyme sprig
2 fresh rosemary sprigs
1/4 cup whipping cream
3/4 cup (1 1/2 sticks) unsalted butter, cut into 12 pieces
For assembly
4 tablespoons olive oil
1 carrot, peeled, cut into matchstick-size strips
1 red bell pepper, thinly sliced
6 cups thinly sliced savoy cabbage
2 tablespoons (1/4 stick) unsalted butter
Chopped fresh chives

Steps:

  • Make trout:
  • Combine pecans and 1 tablespoon flour in processor. Grind pecans finely; transfer to plate. Place remaining flour on another plate. Sprinkle fish with salt and pepper. Dip 1 fillet into flour to coat; shake off excess. Using pastry brush, brush flesh side with egg whites. Place fillet, egg white side down, onto pecans; press to coat with nuts. Transfer to waxed paper-lined baking sheet, pecan side down. Repeat with remaining 3 fillets; chill.
  • Make sauce:
  • Combine first 7 ingredients in medium saucepan. Boil 10 minutes; add rosemary. Boil until liquid is reduced to 1/2 cup, about 10 minutes. Strain sauce into another medium saucepan, pressing on solids in sieve. Add cream; bring to boil. Reduce heat to medium-low. Whisk in butter 1 piece at a time (do not boil). Season with salt and pepper. Let stand at room temperature up to 2 hours.
  • To assemble:
  • Heat 2 tablespoons oil in heavy large Dutch oven over high heat. Add carrot and bell pepper; toss 2 minutes. Add cabbage; toss until cabbage wilts, about 4 minutes. Season with salt and pepper. Remove from heat.
  • Melt 1 tablespoon butter with 1 tablespoon oil in heavy large skillet over medium-high heat. Place 2 fillets, pecan side down, into skillet. Cook until crust is golden and crisp, about 2 minutes. Using spatula, turn fillets over. Cook until just opaque in center, about 2 minutes. Transfer to plate. Repeat with remaining butter, oil and fish.
  • Whisk sauce over low heat to rewarm (do not boil). Divide vegetables among plates. Top with fish. Spoon sauce around fish and vegetables. Sprinkle with chopped chives and serve.

ROSEMARY-STUFFED COLLAR OF BACON WITH PARSLEY BUTTER SAUCE

1 ½kg smoked bacon collar joint, soaked overnight if needed (see tip)
1 small pack rosemary , leaves picked and very finely chopped
1 onion
20 cloves
4 bay leaves
1 carrot , halved
2 celery sticks, halved
1 garlic bulb , halved through the equator
1 tbsp black peppercorns
For the sauce butter
25g plain flour
300ml bacon stock (use the cooking liquid from the bacon collar)
6 tbsp chopped parsley

Steps:

  • First, open up the collar of bacon to season it with the rosemary. To do this, remove any string that's been used to tie the meat, then use a knife to carefully run along the natural seams of the muscles, being careful not to cut all the way through to the other side - you are just trying to make some incisions in the joint, not cut all the way through it. Open it out as much as you can and rub the rosemary all over the exposed meat, then fold the bacon back onto itself. Tie securely with 3 pieces of butcher's twine, spaced about 2cm apart.
  • Put the joint in a very large saucepan and cover with cold water. Bring to the boil and skim off any scum that rises to the surface. Pour the water away and cover with fresh cold water. Stud the onion with the cloves, then add to the pan along with the bay leaves, carrot, celery, garlic and peppercorns. Bring back up to the boil, then turn down to a simmer and cook for 1 1/2-2 hrs. Leave to cool and rest in the stock for at least 30 mins. Don't discard the stock, as you'll need it for the sauce.
  • To make the sauce, strain 300ml of the bacon stock from the pan into a jug. Melt half the butter in a small pan, then whisk in the flour until it has formed a paste. Cook for 2 mins, then slowly add the bacon stock, whisking all the time. When you have added all the stock, let it bubble for a further 4-5 mins. Turn off the heat and whisk in the remaining butter, then stir in the parsley. Remove the bacon collar from the pan to a board or serving plate. Thickly slice and serve with black pudding mash.
