I get so many compliments on these almonds, and they're fun and simple to make. I leave most of the garlic and rosemary leaves in with the almonds. They add color and taste delicious, too. Salt the almonds to taste. Store in a resealable bag or airtight container. Delicious paired with cheeses or all on their own. I always leave a small dish of them out for snacking and find myself having to refill it often.

1 pound raw almonds
1 cup olive oil
4 cloves garlic, crushed
4 sprigs fresh rosemary, leaves stripped
¼ teaspoon red pepper flakes, or more to taste
sea salt to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread almonds on a baking sheet.
  • Bake in the preheated oven until almonds are golden brown and fragrant, 15 to 20 minutes. The nuts will continue to cook after removing from oven. Transfer hot almonds to a wide-bottomed glass or stainless steel bowl.
  • Heat olive oil, garlic, rosemary leaves, red pepper flakes, and sea salt in a saucepan over low heat, just before almonds are out of the oven. Mash the garlic and rosemary in the hot oil to release flavor. Pour hot oil mixture over almonds; stir almonds every 5 to 10 minutes until completely cooled.
  • Drain oil from the almonds; transfer almonds to a paper towel-lined plate. The almonds will still be shiny and oily to the touch.

Number Of Ingredients 6

2 tablespoons sugar
Coarse salt
2 tablespoons unsalted butter
2 tablespoons honey
2 cups almonds (raw or blanched)
2 tablespoons fresh rosemary

Steps:

  • Preheat oven to 375 degrees. Stir together 4 teaspoons sugar and 1/2 teaspoon salt. Heat butter and honey over medium-high heat in a large skillet until bubbling. Remove from heat. Add almonds and rosemary, and toss to coat.
  • Transfer almond-rosemary mixture to a rimmed baking sheet (do not scrape excess syrup from skillet). Sprinkle with sugar-salt mixture. Roast almonds until fragrant, 8 to 9 minutes. Sprinkle with remaining 2 teaspoons sugar and 1/2 teaspoon salt; toss to coat. Let cool completely.

Nonstick vegetable oil spray
1 large egg white
1 tablespoon sugar
1 1/2 tablespoons dried rosemary, crushed
1 1/2 teaspoons fleur de sel*
1/4 teaspoon cayenne pepper
2 cups whole blanched almonds

Steps:

  • Preheat oven to 350°F. Line rimmed baking sheet with foil. Spray foil with nonstick spray. Whisk egg white in medium bowl until foamy. Add sugar; whisk until frothy. Whisk in rosemary, fleur de sel, and cayenne. Add nuts; stir. Transfer to baking sheet, spreading nuts in single layer. Bake until golden, stirring every 10 minutes, about 40 minutes. Cool completely on sheet. (Can be made 1 day ahead. Cover; store at room temperature.)
  • *A type of sea salt, available at specialty foods stores and some supermarkets.

I saw someone on FTV making these, and thought I'd try them. They made them with cashews - I used both blanched and unblanched almonds. These are really addictive. Don't substitute light brown sugar for the dark. Don't substitute dry rosemary for fresh.

1/2 lb whole unblanched almond (still in their brown skin)
3/4 lb whole blanched almond
2 tablespoons chopped fresh rosemary
1/4 teaspoon cayenne
2 teaspoons dark brown sugar
2 teaspoons kosher salt
1 tablespoon melted butter

Steps:

  • Spread the almonds in a single layer on a baking sheet and toast at 350°F until they become fragrant and lightly toasted- about 8- 10 minutes.
  • Meanwhile, mix the remaining ingredients in a large bowl (big enough to hold all of the almonds).
  • When the almonds are toasted done, toss them immediately with the rosemary mixture (while they are still hot!).
  • Toss thoroughly.
  • Let cool, and toss again to break them up a bit (the sugar will cause them to stick together until they cool, then they will stay separate).
  • Store in an airtight container or serve slightly warm.
  • NOTE: You can substitute any kind of nut, or a mix of nuts. Just make sure the nuts are raw and unsalted. You need about 1 1/4 to 1 1/2 pounds of nuts in total.

1 cup quinoa
Salt
1/4 cup chopped almonds
2 tablespoons minced shallots
1 tablespoon minced fresh rosemary
1 tablespoon Dijon mustard
Freshly ground black pepper
2 tablespoons olive oil
Lemon wedges for serving

Steps:

  • Put the quinoa, a large pinch of salt and 2 1/4 cups water in a medium saucepan. Bring to a boil, and then adjust the heat so that the mixture bubbles gently. Cover, and cook, stirring once, until the grains are very tender and begin to burst, 25 to 30 minutes. When they are starchy and thick, transfer them to a large bowl to cool for a few minutes.
  • Heat the oven to 200. Fold the almonds, shallots, rosemary and mustard into the quinoa, and add a generous sprinkle of salt and pepper. With your hands, form the mixture into 8 patties.
  • Put 1 tablespoon olive oil in a large skillet over medium heat. When the oil is warm, cook 4 cakes at a time until the bottoms are nicely browned and crisp, about 4 minutes. Flip, and brown on the other side, another 4 minutes. Transfer the cakes to the oven to keep warm while you cook the second batch with another tablespoon of oil. Serve with lemon wedges.

1/4 cup sliced almonds
1 medium onion, sliced
1 celery rib, sliced
1 carrot, sliced
1 sprig fresh parsley
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon dried rosemary
1 small bay leaf
1 (10 3/4 ounce) can chicken broth
1 cup water
4 (12 ounce) chicken breasts, halved
1/3 cup honey

Steps:

  • Same day as serving or *day ahead:.
  • Toast almonds in broiler 30 seconds-1 minute, watch carefully so you don't burn them! Cool, transfer to covered container.
  • In 6-quart pot or dutch oven, combine onion, celery, carrot, parsley, salt, pepper, rosemary, bay leaf, broth and water.
  • Bring to a boil, add chicken breasts and cover.
  • Simmer 30 minutes or til chicken is tender.
  • Remove from heat and cool slightly.
  • Use now, or refrigerate overnight.
  • Now or next day:.
  • Remove pot from fridge and place over low heat.
  • Cook til chicken is heated through, about 10 minutes, covered.
  • Remove chicken from broth and place skin-side up in large, shallow baking dish or pan.
  • Spoon 1 cup of broth into pan.
  • Strain remaining broth and save for another use.(Discarding veggies.).
  • Using a pastry brush, brush chicken with half of the honey.
  • Broil 4" from heat source for 2 minutes.
  • Brush again with a little more honey and broil 1-2 minutes longer.
  • Brush with remaining honey and broil til chicken is glazed and golden brown.
  • Remove from broiler and arrange chicken on heated platter.
  • Sprinkle with toasted sliced almonds and garnsh with crisp watercress and small clumps of grapes if desired.
  • Serve immediately.
  • Serves 4-8.

4 skinless boneless chicken breast halves
3/4 cup sliced almonds (about 3 ounces), toasted
1/2 cup thinly sliced celery
3 large green onions, thinly sliced

Steps:

  • Whisk oil, vinegar, and rosemary in small bowl to blend; season dressing with salt and pepper. Place chicken in shallow dish. Add 1/4 cup dressing; turn chicken to coat. Let stand 15 minutes.

1 teaspoon chipotle seasoning (for a salt-free blend I like Mrs. Dash Southwest Chipotle)
1 tablespoon fresh rosemary, finely chopped + pinch more after roasting

1 pinch black pepper, to taste
1 cup almonds (I used smoked but raw, roasted, salted, plain, smoked; use what you have and prefer)

Steps:

  • Preheat oven to 325F.
  • Combine all ingredients except for the almonds in a bowl and mix.
  • Add the almonds to the oil and spice mixture, and toss to combine.
  • Spread almonds in a single layer on a parchment, foil, or Silpat-lined cookie sheet (for easier cleanup) and roast for 15-20 minutes until lightly toasted, or until desired toasting and browning level is reached.
  • Allow to cool slightly and serve.
  • Top with a pinch more of finely chopped rosemary after roasting, if desired.
  • Will keep in an airtight container or jar for week(s).

ROASTED ALMONDS WITH GARLIC AND ROSEMARY



Roasted Almonds with Garlic and Rosemary image

For Thanksgiving, my son served delicious Spanish garlic and rosemary almonds. I am too cheap to buy those, so I made my own version based on a bunch of other similar recipes I researched on-line. If you want it to look fancier, you can blanch the almonds ahead of time.

2 cup(s) raw almonds (see note 1)
2-4 clove(s) garlic, grated
1 tablespoon(s) dried rosemary, crumbled (see note2)
1 tablespoon(s) olive oil or avocado oil
1 teaspoon(s) sea salt or kosher salt
1/2 teaspoon(s) garlic powder

Steps:

  • Note 1 - If you want to blanch the almonds do this: put in pot of water, bring to a boil. Turn off heat, but let them sit until cool. Then take each almond and slip off the skins. Spread on paper towels and let dry before continuing with the recipe. It's labor intensive, but the almonds do look pretty!
  • Preheat oven to 325ºF. Grate garlic or use a press. Crumble rosemary. (Note 2 - I use a coffee grinder for herbs, and it easily turns those rosemary needles into a perfect consistency. Or even a powder!)
  • In a quart measuring cup, or other bowl, mix together almonds, garlic, rosemary, olive oil and sea salt. Spread out in a single layer on a jelly roll pan (rimmed cookie sheet).
  • Sprinkle garlic powder over almonds. (Sometimes the garlic clumps and some of the almonds are less garlicky than others, the powder insures even garlic flavor.)
  • Heat in oven for about 1/2 hour. Stir occasionally. Don't let them turn too dark. Turn down oven to 175ºF, heat and stir occasionally for another 15-30 minutes. Turn off oven and let cool down. Cool completely before storing in air-tight container.
