6 medium carrots
3 celery ribs
2 medium onions
2 cups reduced-sodium chicken broth
1 cup water
1 cup minced fresh basil
2 tablespoons grated lemon zest
4 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1 bone-in turkey breast (5 to 6 pounds)
2 medium lemons, sliced

Steps:

  • Cut carrots and celery into 2-in. lengths; cut onions into wedges. Place in a roasting pan; add broth and water., In a small bowl, combine the basil, lemon zest, garlic, salt and pepper. With fingers, carefully loosen skin from the turkey breast; rub mixture under the skin. Secure skin to underside of breast with toothpicks. Place turkey breast over carrot mixture. Place lemon slices over skin., Bake, uncovered, at 325° for 2 to 2-1/2 hours or until a thermometer reads 170°, basting every 30 minutes. Cover loosely with foil if turkey browns too quickly. Cover and let stand for 15 minutes before slicing turkey. Serve with vegetables.

2 1/2 lb bone-in turkey breast (this would be 1/2 of a whole turkey breast)
Kosher salt (this is the one I use)
1 tsp/2 g ground allspice
1 tsp/2.3 g paprika
1 tsp/ 2.3 g ground black pepper
1/2 tsp/ 1.2 g nutmeg
1 head garlic (about 14 cloves, peeled and minced)
Large handful of chopped fresh parsley (about 2 ounces)
Private Reserve extra virgin olive oil
7 to 8 small shallots (peeled and halved)
7 celery sticks (cut into large pieces)
1 lb/450 g seedless red grapes
Private Reserve extra virgin olive oil
Kosher salt

Steps:

  • Salt the Turkey. Pat the turkey breast dry and season with kosher salt on both sides (be sure to carefully lift the skin up and season with salt underneath as well.) Set aside at room temprature for 30 minutes BUT, if you have the time, chill the turkey in fridge uncovered for 2 hours or overnight (see notes).
  • If you have chilled the turkey, take it out and set it aside at room temperature while you work on the rest of the ingredients.
  • Roast the grapes. Preheat the oven to 450 degrees F. Add the grapes to a 9 1/2 x 13 baking pan (mine is cast iron like this one). Toss with a little extra virgin olive oil and salt. Roast in the heated oven for 15 minutes, then remove from heat and transfer the grapes to a plate for now. Leave the oven on.
  • Flavor the Turkey with the Spice Mixture, Garlic and Fresh Parsley. In a small bowl, mix together the spices. Season turkey with spice mixture on all sides (again, carefully lift skin and rub spice mixture underneath.) In a large bowl, combine garlic, parsley and about 1/3 to 1/2 cup extra virgin olive oil. Add the turkey into the bowl and apply the garlic and parsley mixture all over (again, very important to apply mixture underneath the skin.)
  • Assemble the Turkey Breast in the Pan. In the same pan you used earlier, add the shallots and celery to make a bed for the turkey. Simply season with kosher salt and drizzle a little extra virgin olive oil. Place the turkey breast on top.
  • Roast the Turkey Breast. Put the turkey pan on the middle rack of the heated oven and immediately turn the heat down to 350 degrees F. Roast for up to 45 minutes or until its internal temperature registers somewhere between 150 to 155 degrees F. Check occassionally, if at some point during roasting, you notice the turkey skin turning too dark, cover it with foil and continue roasting.
  • Add Grapes Back In. Closer to the end of your roasting time, carefully remove the turkey from the oven to add in the grapes. Return to the oven very briefly so the grapes warm through (if your turkey needs a little bit of color, stick it under the broiler for a couple of minutes and watch carefully).
  • Remove from Oven and Let Rest Briefly Before Serving. Cover the turkey loosley with foil and let turkey rest undisturbed for about 15 minutes before slicing through to serve. The turkey meat will continue to cook and its internal temparture should rise to 165 degrees F.
  • To Carve or Slice the Turkey Breast. Transfer the turkey breast to a clean cutting board. Start at the breast bone and continue carving from there making sure to keep your knife close to ribs. Once the meat is off the bone, you can slice the breast crosswise into slices.

One 10- to 12-pound turkey
Kosher salt and freshly ground black pepper
1 stick (8 tablespoons) unsalted butter, at room temperature
2 tablespoons minced fresh basil leaves
1 1/2 teaspoons freshly squeezed lemon juice
1 shallot, minced
3 parsley sprigs
2 lemons, quartered

Steps:

  • Let the turkey sit at room temperature for about 1 hour.
  • Preheat the oven to 400 degrees F.
  • Remove the packet of neck and giblets from the turkey and set aside. Cut away any fatty pieces near the cavity or neck and discard. Pat the turkey dry inside and out with paper towels and sprinkle liberally with salt and pepper inside and out.
  • Combine the butter, basil, lemon juice, shallot, 1/4 teaspoon salt and a few grinds of pepper in a medium bowl with a rubber spatula. Loosen the skin over the turkey breast and push half of the butter mixture under the skin and over the breast meat. Rub the skin with the rest of the butter mixture. Stuff the cavity with the parsley and lemons. Tie the legs together with twine. Tuck the wings under the body and put the turkey breast-side up on a rack in a roasting pan.
  • Roast until the turkey begins to turn golden, about 25 minutes. Loosely tent the breast with foil, then reduce the oven temperature to 325 degrees F. Continue roasting, basting with pan drippings every 30 minutes, until an instant-read thermometer inserted in the thigh joint reaches about 155 degrees F. Remove the foil and continue roasting until it reaches 165 degrees F, about 30 minutes longer. Transfer the turkey and rack to a cutting board and let rest about 30 minutes.
  • Discard the parsley and lemons from the cavity before carving.

GRILLED BASIL LEMON TURKEY BREAST

Our family and friends enjoy this and hope you do too. A flavorful layer of basil, lemon, garlic and romano cheese under the skin. I have the butcher cut one turkey in half and use one half for this. Use a meat thermometer- working towards at least 165 degrees-no one enjoys under or over cooked poultry and with charcoal grilling it is pretty tricky to have a standard that fits everyone. Dh puts the meat thermometer in thickest part right away at beginning of grilling. Servings and cooking time depend upon size of turkey breast. I serve with recipe#485341, roasted asparagus, coleslaw, and my recipe#462312 . Hubby has made this several times.

1/4 cup romano cheese, shredded
1/4 cup basil leaves, minced
5 garlic cloves, minced
1 (4 -7 lb) turkey breast, bone in

Steps:

  • Prepare your grill with chimney allowing about 30 minutes.
  • Cut off lemon rind, remove outside white, discard or use for different purpose. Mince lemon pulp, discard seeds.
  • Combine lemon, cheese, basil, and garlic.
  • With fingers, carefully loosen skin from the turkey breast; place mixture under the skin.
  • Rub oil on turkey skin and sprinkle liberally with lemon pepper. Don't forget meat thermometer into thickest part of turkey breast. Wrap wing tips and drumstick ends with foil so they don't char.
  • Remove chimney, then dh uses 60 briquettes and divide them up with drip foil pan in center so heat will be around drip pan. Dh says it is a big mistake not having enough briquettes. Add water to drip pan, put on your grate.
  • Place turkey directly onto grate, open cavity down.
  • Grill, covered, vents open. Keep an eye on it, tent turkey if getting too dark. When turkey hits 165, measure into thigh joint where it meets body; it should be 170 degrees.
  • For 7 pounds, we had on for 2 hours and 5 minutes BUT it depends upon the heat and size of turkey half, so use your meat thermometer. For our second turkey half we had a 6 pounder on 1 hour and 35 minutes.
  • For 4 to 5 pounds, I am GUESSING 1 hour and 15 to 30 minutes? Use your meat thermometer to cook it to your preference.
  • When done to correct temperature, remove to platter, cover with foil, and let rest for 20 minutes. That's your window to getting everything else done before you sit down to feast. Enjoy!

2-pound boneless turkey breast half with untorn skin
1 small lemon, thinly sliced
10 fresh basil leaves
Olive or vegetable oil
1/2 teaspoon lemon-pepper seasoning

  • If using charcoal grill, place drip pan directly under grilling area, and arrange coals around edge of firebox. Heat coals or gas grill for indirect heat. Loosen skin on turkey in 4 or 5 places. Carefully place lemon slices and basil leaves under skin. Rub turkey skin with oil; sprinkle with lemon-pepper seasoning. Insert barbecue meat thermometer so tip is in thickest part of turkey.

This recipe came from my mother. These always turn out juicy and tender no matter how long my husband leaves them on the grill! Easy to prepare, but it's always best when marinated for at least 4 hours.

2 cloves garlic, peeled and minced
1 tablespoon finely chopped fresh basil
½ teaspoon ground black pepper
2 (3 pound) boneless turkey breast halves
6 whole cloves
¼ cup vegetable oil
¼ cup soy sauce
2 tablespoons lemon juice
1 tablespoon brown sugar

Steps:

  • In a small bowl, mix together the garlic, basil, and pepper. Rub over the turkey breasts. Insert one clove into each end of the turkey breasts, and one in the center.
  • In a large shallow dish, blend vegetable oil, soy sauce, lemon juice, and brown sugar. Place the breasts in the dish, and turn to coat. Cover, and marinate in the refrigerator at least 4 hours.
  • Preheat grill for high heat.
  • Lightly oil the grill grate. Discard marinade, place turkey breasts on the grill. Close the lid, and grill turkey breasts about 15 minutes on each side, or to an internal temperature of 170 degrees F (68 degrees C).
