8 roma (plum) tomatoes, cut in half and seeds removed
¼ cup extra-virgin olive oil
2 tablespoons chopped garlic
1 teaspoon chopped fresh parsley
1 teaspoon chopped fresh basil
1 teaspoon chopped fresh oregano
salt and black pepper to taste
½ cup crumbled feta cheese

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Mix together the tomatoes, olive oil, garlic, parsley, basil, oregano, and salt and pepper in a bowl, working the seasonings into the cavities of the tomatoes. Place the tomatoes, cut sides up, on a baking sheet, and sprinkle each tomato with about 1 tablespoon of feta cheese.
  • Bake the tomatoes in the preheated oven until cooked but still firm, about 15 minutes.

8 roma (plum) tomatoes, halved
12 cloves garlic, peeled
4 tablespoons olive oil
¼ cup chopped fresh basil leaves
salt and pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place the tomato halves in a shallow baking dish in which they can all fit in snugly side by side. Insert the whole cloves of garlic in between the tomatoes. Brush olive oil over the top and sprinkle with basil. Season with salt and pepper.
  • Bake uncovered for 35 to 45 minutes, until tomatoes have softened and are sizzling in the pan with the edges slightly charred. Serve while hot.

  • Preheat oven to 400°F Line a baking sheet with foil, and coat lightly with some of the olive oil.

  • Place tomatoes cut-side up on the baking sheet. Brush with the olive oil mixture.

Although I usually post healthy recipes, this one does not fall into that category! It is rich, creamy and decadent. If you like cream sauces, watch out!! This is a recipe my husband developed based on a dish at an Italian restaurant. I think his is just as good.

4 boneless skinless chicken breasts (preferably Italian-marinated)
1 lb penne pasta
1/2-1 cup butter
1 pint heavy cream
4 ounces gorgonzola, crumbled
1/4 cup shredded parmesan cheese
1 teaspoon nutmeg
2 roma tomatoes, chopped

Steps:

  • Grill or broil chicken breasts; slice into thin strips.
  • Cook pasta according to package directions.
  • Toss with olive oil, return to pot.
  • While pasta and chicken are cooking, melt butter in medium saucepan, heat to boiling, stirring constantly, boil 1 minute.
  • Slowly add heavy cream, heat to a boil to reduce, stirring constantly.
  • Boil for 2 minutes.
  • Reduce heat, add Gorgonzola, parmesan and nutmeg.
  • Stir until melted.
  • Serve sauce over noodles, top with chicken and chopped tomatoes.

2 Filets Striped Bass -- approximately 6 oz each, cut into 2 oz pieces.
3 Roma tomatoes
1 dozen asparagus spears, trimmed and peeled
Kernels from 1 ear sweet corn
1 clove garlic
1 bunch fresh thyme
3/4 lb butter
1/4 cup chicken stock
1 lemon, zested
blended oil
salt and pepper

Steps:

  • Preheat oven to 275 degrees. Trim tops of Roma tomatoes with small paring knife, then halve each tomato lengthwise and place halves on a rack on top of a baking sheet. Slice garlic clove paper thin, and place two slivers on top of each tomato halve. Sprinkle top of each tomato halve with thyme leaves, salt and pepper. Bake for 25-30 minutes, or until tomatoes just begin to shrivel and you can easily remove the skin. Loosely cover with aluminum foil to stay warm and set aside. In a medium skillet, sautee corn kernels over moderate heat in 1 Tbsp butter and 1 Tbsp oil for 2 to 3 minutes. Add asparagus and half the lemon zest to skillet, and season with salt and pepper. Add chicken stock and continue cooking for an additional 4 to 5 minutes or asparagus begins to soften. Remove from heat and whisk 1 Tbsp butter into sauce to thicken. Score skin of each piece of bass two or three times, taking care to avoid cutting into the flesh of the fish itself. Season each piece on both sides with salt and pepper. Heal 1 Tbsp oil in a cast iron skillet large enough to hold all six pieces of bass without crowding. Sautee bass, skin side down, until skin begins to crisp, about 3 to 4 minutes. Don't worry if the pieces of fish begin to curl off of the pan when you start off, you can gently press the pieces with a fish spatula to crisp the skin evenly. Reduce heat to medium and add 2 Tbsp butter and two sprigs of thyme to the pan. Using a spoon, continually baste each piece of fish with the butter for 1 minute. Drizzle each piece with a little lemon juice, carefully flip fish and remove from heat. To plate: Place asparagus onto plate, then stack one roasted tomato halve and three pieces of bass, skin side up, one on top of the next. Place two roma tomato halves on either side of stack, and spoon corn over tomatoes. Spoon sauce from corn and asparagus over fish and serve immediately.

4 ounces balsamic vinegar
4 ounces extra-virgin olive oil
3 garlic cloves, peeled and cracked
2 sprigs fresh basil
2 sprigs fresh rosemary

2 yellow Roma tomatoes
4 red grape tomatoes
4 yellow pear tomatoes
2 ounces extra-virgin olive oil
2 ounces balsamic vinegar
2 ounces water
2 ounces lemon juice
4 green zebra tomatoes, cored and cut into quarters
1/2 white onion, roughly chopped
3 whole scallions
2 cloves garlic, roughly chopped
1 serrano chile
1/2 cup cilantro leaves
1/4 cup parsley
2 limes, juiced
2 tablespoons kosher salt
1 teaspoon ground coriander
6 ounces water
1 yellow plum tomato, thinly sliced
8 slices white bread
4 slices white cheddar
4 ounces butter
Fresh herbs, as a garnish

Steps:

  • To prepare the roasted Roma tomatoes, place tomatoes cut side down in small saute pan. Add the remaining ingredients and place over medium high heat on the stove. Simmer for 5 to 6 minutes while basting the tomatoes with the vinegar and oil. Hold at room temperature until assembling dish.
  • Prepare the yellow Roma tomatoes in a small pan and, add the extra-virgin olive oil, balsamic vinegar, water, lemon juice, and allow to simmer over medium heat for a few minutes. Add the grape and pear tomatoes and continue to cook for 2 more minutes. Remove from the stove and allow to cool for 2 to 3 minutes. Next, gently remove the skins from the tomatoes, and hold at room temperature until ready to serve.
  • To prepare gazpacho, combine all ingredients in a large mixing bowl. Allow to marinate for 1 to 2 hours. Add marinade to blender and blend until smooth. Refrigerate until ready to serve.
  • Assemble 4 cheese sandwiches. Place a slice of yellow plum tomato on the top slice of bread of each of sandwich. Using a cookie cutter cut the sandwich into a disk or favorite shape. Add butter to hot pan, and place one of the sandwiches tomato side down and cook until golden brown. Press the sandwich with a spatula to allow the tomato slice to inlay into the bread. Repeat process for all four sandwiches.
  • To assemble: In chilled individual bowls ladle 4 ounces of green gazpacho. Place a piece of yellow Roma tomato in the center of the bowl and a balsamic roasted red Roma tomato on top. Place 2 small yellow and red tomatoes in the gazpacho and put the grilled cheese on top of the Roma tomatoes in the center of the bowl. Garnish with fresh herbs such as basil, parsley, or chives.

6 medium plum (Roma) tomatoes (2 1/2 to 3 inches long)
36 thin asparagus spears (1/4 inch diameter)
1 cup milk
1 package (0.9 oz) hollandaise sauce mix
1/4 cup butter or margarine
1/2 cup shredded Parmesan cheese (2 oz)

Steps:

  • Cut tomatoes in half lengthwise. Seed tomatoes, using teaspoon; remove flesh, leaving 1/4-inch-thick shell. Cut thin slice from rounded side of tomato halves, if necessary, so they'll rest level in pan. Drain tomatoes, hollow sides down, on paper towels.
  • Break off tough ends of asparagus. From tip end, cut off top 3 inches of each spear (reserve remaining portions of spear for another use). In 1-quart saucepan, heat 1 inch water to boiling. Add asparagus pieces. Heat to boiling and boil 2 minutes; drain and set aside.
  • In same 1-quart saucepan, beat milk and sauce mix with wire whisk until smooth. Add butter. Heat to boiling over medium heat, stirring constantly. Reduce heat to low. Cook 1 minute, stirring constantly, until thickened and smooth.
  • Set oven control to broil. In 13x9-inch pan, place tomato halves. In each tomato half, arrange 3 asparagus pieces lengthwise with tips extended over stem end of tomato. Spoon 1 tablespoon sauce over asparagus-filled tomato halves, allowing some sauce to fill tomato hollow. Sprinkle with cheese.
  • Broil with tops 4 to 6 inches from heat 2 to 4 minutes or until tomatoes are hot and cheese just begins to brown. If desired, heat remaining sauce until hot; serve with tomatoes.

FRIED ROMA TOMATOES

As a recent fan of tomatoes, I decided to try my share at a new recipe - "Fried Red Tomatoes".

2 large roma tomatoes, sliced 1/4 to 1/2-inch thick
2 eggs, lightly beaten
1 c italian bread crumbs
1 c panko bread crumbs
italian seasoning, for taste
garlic salt, for taste
1/2 - 1 c extra-virgin olive oil
1/4 c shredded mozzarella or grated parmesan cheese

Steps:

  • 1. Using a small skillet, fill about 1/4 with extra-virgin olive oil and let heat on medium-high heat.
  • 2. Meanwhile, set up breading station using a small to medium bowl for the eggs, one plate with Italian bread crumbs and another plate for the Panko crumbs. Salt tomato slices with garlic salt and dip into egg mixture then in Italian bread crumbs. Dip the tomato in the egg mixture once more and then into the Panko crumbs. Repeat until all tomato slices are breaded.
  • 3. Place one to two tomatoes into the oil and fry for 1 to 2 minutes and gently turn the tomatoes over using tongs. Allow to cook for 1 to 2 minutes longer or until golden brown.
  • 4. Drain on paper towels and garnish with shredded mozzarella cheese or freshly grated Parmesan cheese.

1 tablespoon fresh lemon juice
1 teaspoon minced garlic
1/3 cup butter, melted
11 ounces goat cheese, softened
1/2 teaspoon fresh ground pepper
1/2 teaspoon salt
12 small plum tomatoes (Roma)
pesto sauce

Steps:

  • Stir together first 5 ingredients in a shallow dish. Stir in butter; set aside.
  • Combine goat cheese, pepper, and salt in a small bowl.
  • Cut tomatoes in half horizontally; trim a small amount from rounded edges, if necessary, so halves will stand upright. Remove seeds and pulp. Spoon about 2 teaspoons goat cheese mixture into each half.
  • Dip tomato halves, upside down, in breadcrumb mixture, coating cut edges generously. Place right side up on an ungreased baking sheet.
  • Bake at 400 degrees for 15-18 minutes or until lightly browned. Transfer tomatoes to serving platter. Drizzle with pesto.

The only thing that grew in my garden this year was some roma tomatoes, and they didn't do well but I finally found six that were good to use them up I made these turned out really good hope you enjoy. Hubby loved them! ( measurements are approximant)

6 small roma tomatoes (seeded)
3/4 cup(s) cracker crumbs
1/3 cup(s) parmesan cheese
1/4 cup(s) crisp bacon ( i used a product called real bacon)
2 tablespoon(s) butter, melted
1/4 cup(s) panko bread crumbs
1 teaspoon(s) fresh basil (chopped fine)

Steps:

  • Wash and cut tomatoes in half length ways, take out seeds.
  • Mix remaining ingredients well. Fill each tomato half, piling high.
  • Bake in 350 degree oven till stuffing is slightly brown, on top. Serve
