3 tbsp extra-virgin olive oil
1 small red onion , sliced
1 large roasted pepper from a jar, thickly sliced, or a handful of ready-roasted sliced peppers
200g quinoa
500ml vegetable stock
small bunch flat-leaf parsley , roughly chopped
zest and juice 1 lemon
large pinch sugar
250g pack halloumi cheese , cut into 6 sliced

Steps:

  • Heat 1 tbsp of the oil in a medium saucepan. Cook the onion and pepper for a few mins, then add the quinoa and cook for a further 3 mins. Add the stock, cover and turn the heat down to a simmer. Cook for 15 mins or until soft, then stir through half the parsley. Heat the grill.
  • Meanwhile, mix the lemon zest and juice with the remaining parsley and oil, and a large pinch of sugar and salt. Grill the halloumi until both sides are golden and crisp. Serve the salad with the grilled halloumi and the dressing poured over everything.

- 240 g quinoa
- 320 g halloumi cheese
- 1 aubergine
- 1 leek
- 1/2 head cauliflower
- 2 med red onions
- 2 red peppers
- 1 orange pepper
- 1/2 pomegranate seeds
- 1 tbsp zaatar powder
- 1/2 tsp paprika or 1-2 pinches of cayenne pepper optional
- 1-2 tbsp olive or coconut oil
- 2 tbsp lemon juice juice from 1/2 lemon
- few mint leaves to garnish

Steps:

  • Preheat the oven at 190°C/375F/Gas Mark 5.
  • Peel, wash, and chop all vegetables. Place all in an oven tray, sprinkle with some salt, freshly ground black pepper or some paprika or some nice and hot cayenne pepper if you'd like a kick. I always crave a bit of heat I'm sure you gathered that by now.
  • Drizzle the olive or the coconut oil over the veggies and mix all nicely to give your veggies a nice oil and spices coating.
  • Place the tray in the preheated oven and bake for about 40 minutes giving them another mix mid-way.
  • While your vegetables are baking, place the quinoa in a saucepan with 350ml water, add a pinch of salt and bring to the boil. Once it starts boiling turn the heat all the way down and allow it to gently simmer (covered) for about 15 minutes. If the water has been absorbed that means quinoa is ready. Once ready, set aside.
  • Also while your vegetables and baking, grill or fry your halloumi cheese.
  • Take the seeds out from half of your pomagranate. The best way to do this is to bash out the Pomegranate seeds with a spoon and then remove the little white pith. Set aside and get it ready to be sprinkled on at the end.
  • Mix the quinoa (make sure you drain any leftover water-if any) with the beautifully roasted veggies.
  • Plate the salad, top up with the grilled halloumi cheese, sprinkle a good amount of pomegranate seeds and garnish with a few mint leaves.

Steps:

  • Place vegetables and garlic in an ungreased 15x10x1-in. baking pan. Drizzle with 2 tablespoons oil; sprinkle with salt and pepper. Bake, uncovered, at 425° for 35-40 minutes or until tender, stirring once., Meanwhile, in a large saucepan, bring broth to a boil. Add quinoa. Reduce heat; cover and simmer for 12-15 minutes or until liquid is absorbed. Remove from the heat; fluff with a fork., Transfer vegetables and quinoa to a large bowl. 5 small carrots (about 1 pound), peeled and cut into 1/2-inch pieces
3 large beets (about 1 pound), peeled and cut into 1/2-inch pieces
1 medium head bok choy, cut in half lengthwise
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1/3 cup extra-virgin olive oil
2 tablespoons apple cider vinegar
1 tablespoon raspberry vinegar
1 cup cooked quinoa
1/4 cup dried cranberries
1/4 cup pepitas (toasted pumpkin seeds)
1 heaping tablespoon chopped fresh parsley
1 blood orange, peel and white pith removed, cut into chunks or segmented
1/4 cup crumbled goat cheese

Steps:

  • Preheat the oven to 375 degrees F.
  • In a baking dish or sheet pan, toss the carrots, beets and bok choy in 2 tablespoons olive oil and season with salt and pepper. Bake until the vegetables have caramelized and turned golden in color, about 20 minutes. Let cool.
  • Meanwhile, whisk together the extra-virgin olive oil, apple cider vinegar and raspberry vinegar in a small mixing bowl. Season the dressing with salt and pepper and reserve for later use.
  • Chop the bok choy into 1-inch pieces and toss into a large mixing bowl; the leaves will fall apart, but crumble them into the mixing bowl too. Add the carrots, beets, quinoa, cranberries, pepitas, parsley and orange segments to the mixing bowl. Drizzle with the vinaigrette and toss to evenly incorporate. Season with salt and pepper. Top with the crumbled goat cheese and serve immediately.

2 sweet peppers cut into wedges, preferably of different colours, I chose red and green
1 large courgette, sliced
2 red onions, cut into wedges
100 g (1/2 cup) quinoa, cooked
100 g halloumi cheese
35 g (1/4 cup) pine nuts
4 tablespoon olive oil
2 teaspoon dried oregano
2 garlic cloves, crushed
1/2 lemon, zested
1 tablespoon balsamic vinegar
Salt and pepper

Steps:

  • Preheat the oven to 200° (390F). Line a baking tray with baking paper and place the red onion, courgette slices, and sweet pepper wedges on it.
  • In a small bowl, mix 3 tablespoon of olive oil with the dried oregano, lemon zest, and crushed garlic. Season with salt and pepper. Drizzle over the veggies and toss to combine well.
  • Spread the veggies in an even layer and roast for 20 minutes.
  • Remove the tray from the love, toss all the veggies again, add the remaining 1 tablespoon of olive oil, and roast for another 10-15 minutes.
  • Take the tray out again, drizzle the balsamic vinegar, and roast for another 5 minutes.
  • In the meantime, toast the pine nuts in a dry-frying pan until slightly golden. Do the same with the sliced halloumi. It takes about 3-4 minutes to get that golden look.
  • Take the vegetables out of the oven and transfer to a bowl or serving plate.
  • Sprinkle the quinoa and pine nuts on top and add the grilled halloumi slices. Serve immediately.

200g quinoa
3 tbsp olive oil
1 red onion , peeled but left whole, then cut into 1cm thick round slices
2 peppers , red, yellow or mixture, deseeded and cut into chunky long wedges
200g baby courgette , halved lengthways
3 garlic cloves , unpeeled
zest and juice 1 lemon
pinch of sugar
small pack flat-leaf parsley , roughly chopped
200g pack feta cheese

Steps:

  • Cook the quinoa following pack instructions, then drain really well and set aside.
  • Meanwhile heat oven to 200C/180C fan/gas 6. Toss the onion and peppers with 1 tbsp of the oil and seasoning on a roasting tray, then roast for 15 mins.
  • Toss the courgettes and garlic with the rest of the veg and roast for another 15 mins.
  • Squeeze the roasted garlic cloves out of their skins and mash with some seasoning. Stir in the remaining oil, lemon juice and zest and season with sugar to taste. Drizzle over the quinoa and toss together with the roasted vegetables and parsley. Crumble over the feta, toss gently again and serve.

2 brown pittas , torn into pieces
5 tbsp olive oil
2 lemons , juiced
1 garlic clove , crushed
250g block halloumi , sliced
250g microwavable pouch quinoa
350g medium tomatoes , quartered
1 large cucumber , halved, deseeded and sliced
4 spring onions , sliced
½ small bunch mint , chopped
½ small bunch dill , roughly chopped

Steps:

  • Heat the grill to high. Toss the pitta pieces with 1 tbsp oil and spread out onto a baking sheet. Grill for 3-4 mins, turning halfway, until golden and crisp. Set aside to cool.
  • Meanwhile, whisk together the remaining oil with the lemon juice and garlic, then season. Heat a large griddle pan or non-stick frying pan over a high heat and cook the halloumi for 1-2 mins on each side or until lightly charred.

Halloumi is a firm, white, brined cheese traditionally made from a mixture of goat's and sheep's milk. (Though today, cow's milk is often used.) Like other low-fat cheeses, it is perfect for grilling. It sears and colors quickly when it hits the hot grill. The interior softens, but the cheese doesn't melt; it just warms up invitingly.

3/4 pound halloumi
2 sweet red peppers
1 large zucchini
1 Japanese eggplant
1 bunch scallions, trimmed
Salt and pepper
About 1/4 cup olive oil
2 teaspoons fresh thyme or crumbled dried mint
1/2 to 1 teaspoon sumac (optional)

Steps:

  • Prepare a hot grill. Cut halloumi into 8 to 12 slabs, about 1/3- to 1/2-inch thick. Cut peppers into wide pieces, slicing from top to bottom along the natural indentations. Discard seeds. Cut pieces in half crosswise. Slice the zucchini and eggplant on the diagonal, into 1/4- to 1/3-inch-thick rounds.
  • Season all vegetables with salt and pepper. Brush vegetables and halloumi with olive oil.
  • Grill vegetables until tender and nicely charred, turning occasionally. If you'd like, use an outdoor grill pan to keep them from slipping through the grate. Scallions will be ready after 3 to 4 minutes. Peppers, zucchini and eggplant take about 10 minutes. Arrange on a platter.
  • Grill halloumi, turning occasionally, for 2 to 6 minutes, until grill marks appear. When you press on the cheese, it should give but it should not be runny.
  • Remove cheese to the platter with vegetables and drizzle with olive oil. Sprinkle cheese and vegetables with herbs and sumac, if you'd like, and serve.
