1 fresh pineapple
2 tablespoons butter, melted
1/4 cup packed brown sugar
2 tablespoons honey
1/2 teaspoon pumpkin pie spice or ground cinnamon
1/4 teaspoon rum extract
3/4 cup raspberry sorbet

Steps:

  • Peel pineapple; cut into six wedges. Cut wedges lengthwise to remove core; cut each widthwise into four pieces. Pour butter into a 2-qt. baking dish; top with pineapple. Combine the brown sugar, honey, pie spice and extract; spoon over pineapple., Bake, uncovered, at 400° for 35-40 minutes or until golden brown. Spoon cooking juices over the top. Serve warm with sorbet.

1/2 cup sugar
1/4 teaspoon salt
1 1/3 cups fruit puree (1 ripe mango and 2 passion fruit) plus 1 fresh passion fruit, for garnish
5 yolks (large eggs)
3 cups whole milk
1/2 cup sifted all-purpose flour
3 whites (large eggs)
6 to 8 (6-ounce) ramekins
1 ripe pineapple, peeled, juiced and chilled well
1/3 cup toasted coconut, for garnish
1 fresh passion fruit, for garnish

Steps:

  • In a mixing bowl with a paddle, mix the sugar, salt, puree and yolks until smooth. Add the milk then fold in the flour. Beat the egg whites with the sugar until stiff peaks form. Fold in whites and fill ramekins 3/4 full. Bake at 350 degrees in a hotel pan filled half way with boiling water for 30 minutes. The pudding cakes will rise then fall when cooled. Store in refrigerator for at least 3 hours or overnight.
  • PLATING Chill large soup plates. Unmold cakes in the center of the plate and ladle in soup (pineapple juice). Garnish with coconut and passion fruit seeds.

SPICY PASSION FRUIT-GLAZED SHRIMP

Passion fruit gives the glaze a sweet-and-sour taste. Serve these kebabs over a bed of basmati or jasmine rice. When straining the glaze, press with the back of a spoon to extract as much passion fruit pulp as possible. Add a green salad and you have a perfect summer meal. From the June, 2005 Cooking Light.

1/2 cup water
1/2 cup sugar
1/2 cup passion fruit pulp (about 4 passion fruit)
2 tablespoons fresh lime juice
1 teaspoon low sodium soy sauce
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon salt
32 large shrimp, peeled and deveined (about 1 1/2 pounds)
cooking spray
8 lime wedges

Steps:

  • Bring water and sugar to a boil in a small saucepan, stirring until sugar dissolves. Add passion fruit pulp, stirring well, and cook 1 minute. Remove from heat; cool 15 minutes.
  • Strain passion fruit mixture through a sieve into a large bowl; discard seeds. Add lime juice, soy sauce, red pepper, and salt, stirring well. Set 1/2 cup passion fruit mixture aside. Add shrimp to remaining passion fruit mixture, and toss well to coat. Cover and refrigerate 15 minutes.
  • Prepare grill.
  • Thread 4 shrimp on each of 8 (10-inch) skewers. Place skewers on grill rack coated with cooking spray. Grill 2 minutes on each side or until done, basting with reserved 1/2 cup passion fruit mixture. Serve with lime wedges.

Light the oven, get out the brown sugar, and you are in for a special (roasted) pineapple treat.

1 medium pineapple (3 pounds)
3 tablespoons unsalted butter
1/3 cup packed light-brown sugar
2 tablespoons honey
1/2 teaspoon pumpkin pie spice or ground cinnamon
1 tablespoon dark rum
Raspberry sorbet, for serving

Steps:

  • Preheat oven to 400 degrees, with rack in upper third. Using a chef's knife, slice off top and bottom ends of pineapple. Following the fruit's natural shape and working from top to bottom, slice off skin in strips; cut away any "eyes." Quarter lengthwise; remove tough core. Cut each quarter into 4 pieces lengthwise.
  • Place butter in an 8-inch square (2-quart) baking dish, and melt in oven, 6 minutes.
  • Arrange pineapple in the dish. In a small bowl, stir together brown sugar, honey, pie spice, and rum.
  • Spoon sugar mixture over pineapple. Bake until tender and bubbly, about 1 hour. Serve warm or at room temperature with sorbet, if desired.
