18 red pearl onions, peeled
2 large carrots, halved lengthwise, cut into 1/3-inch-wide pieces
2 large parsnips, halved lengthwise, cut into 1/2-inch-wide pieces
2 tablespoons extra-virgin olive oil
3/4 teaspoon herbes de Provence
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
One 5-ounce bag baby arugula
1 ripe pear, halved, cored, cut into thin wedges
Apple Cider Vinaigrette, recipe follows
1/2 cup chopped walnuts, toasted
3 tablespoons apple cider vinegar
1 tablespoon honey
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/3 cup extra-virgin olive oil

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl, combine the onions, carrots and parsnips. Add the oil, herbes de Provence, salt and pepper; toss to coat evenly. Scatter the vegetables on a large nonstick rimmed baking sheet and roast for 20 minutes. Turn the vegetables over and roast until tender and beginning to brown, 15 to 20 minutes longer. Set the vegetables aside.
  • In a salad bowl, combine the arugula, pear slices and roasted vegetables. Add the Apple Cider Vinaigrette and toss until coated. Sprinkle with the chopped walnuts and serve.
  • In a medium bowl, whisk the vinegar, honey, salt and pepper until blended. Gradually whisk in the oil.

3 large red potatoes, unpeeled, cut into bite-size chunks
3/4 lb baby carrots
4 shallots, peeled and roughly chopped
1/3 cup vegetable oil, divided
1 (1 ounce) package Hidden Valley® Original Ranch® Dressing and Seasoning Mix
3/4 lb boneless skinless chicken breast, into bite size chunks
1 (5 ounce) bag Baby Spinach, washed and dried
2 tablespoons fresh lemon juice
4 lemon wedges

Steps:

  • Heat oven to 400 degrees F. In a large bowl, combine the potatoes, carrots and shallots. Sprinkle with the Hidden Valley Original Ranch Seasoning and 3 tablespoons of the oil. Toss gently, with hands, to make sure all pieces are coated with oil and seasoning. Transfer to a non-stick rimmed baking sheet, spreading vegetables to make a single layer. Roast for 30-40 minutes or until tender and golden brown.
  • Meanwhile, in a 10-inch non-stick skillet, saute the chicken breast chunks in the remaining oil for 12-15 minutes or until cooked through and browned around the edges.
  • To serve: In a large bowl, toss the baby spinach with the roasted vegetables and the sauteed chicken. Divide among 4 plates and drizzle each with lemon juice. Garnish each with a lemon wedge, if desired.

I created this recipe for a contest. It was not a winner, but my family loves it! It's a nice, light (yet hearty) salad, perfect for a warm summer day. Adding the Ranch seasoning mix gives it a wonderful flavor.

3 large red potatoes, cut into bite size chunks
12 ounces baby carrots
4 large shallots, cut into bite size pieces
2/3 c vegetable oil, divided
1 envelope hidden valley original ranch seasoning mix
1 pound chicken breasts, skinned, boned and cut into bite size pieces
1 bag (5 ounces) baby spinach, washed and dried
2-3 Tbsp fresh squeezed lemon juice (+ lemon wedges for garnish)

Steps:

  • 1. Heat oven to 400 degrees F. In a large bowl, combine the potatoes, carrots, shallots and the entire envelope of Ranch seasoning. Drizzle with 1/3 cup on the vegetable oil. Mix well with hands, making sure all ingredients are coated with oil and seasoning. Transfer to a rimmed, non-stick baking sheet, spreading vegetable out to make one layer.
  • 2. Roast for 30-40 minutes or until vegetables are tender and golden brown.
  • 3. Meanwhile, in a 10" non-stick skillet, over medium high heat, saute the chicken breast chunks in the remaining oil for 15-20 minutes or until cooked through and pieces are browned around the edges.
  • 4. To serve: Place the baby spinach in a LARGE bowl. Add the roasted vegetables and the sauteed chicken. Drizzle with the 2 tablespoons of lemon juice and toss gently to combine. Serve with lemon wedges on the side.

6 medium beets (about 1 1/2 lb), peeled, cut into 1/2-inch wedges
3 tablespoons olive oil
1 3/4 teaspoons salt
1 teaspoon pepper
2 large sweet potatoes (about 1 1/2 lb), peeled, cut into 3/4-inch cubes
4 large parsnips (about 1 lb), peeled, cut into 1/2-inch slices
1/2 cup olive oil-and-vinegar dressing
1 tablespoon chopped fresh parsley
1 tablespoon prepared horseradish
1 teaspoon Dijon mustard
Fresh arugula

Steps:

  • Heat oven to 400°F. Line 15x10x1-inch pan with foil. Spray second 15x10x1-inch pan with cooking spray.
  • In large bowl, toss beets with 1 tablespoon of the oil. Arrange beets in single layer in foil-lined pan. Sprinkle with 1/2 teaspoon of the salt and 1/2 teaspoon of the pepper.
  • In same bowl, toss sweet potatoes and parsnips with remaining 2 tablespoons oil. Arrange potatoes and parsnips in single layer in second pan. Sprinkle with remaining 1 1/4 teaspoons salt and 1/2 teaspoon pepper.
  • Roast 40 to 45 minutes or just until vegetables are tender. Cool completely, about 20 minutes.
  • In small bowl, mix dressing, parsley, horseradish and mustard with whisk. In large bowl, gently toss roasted vegetables with desired amount of dressing. Serve at room temperature or chilled over arugula with any remaining dressing.

1/2 roasted shallot
1/2 head romaine lettuce, chopped
1/2 head radicchio, chopped

1 small acorn squash, peeled, seeded, and cut into 6 wedges
1 small celery root, peeled and cut into 6 wedges
1 small yam, peeled and cut into 6 wedges
1 large golden beet, peeled and cut into 6 wedges, leaves reserved for garnish
1 turnip, peeled and cut into 6 wedges
1 medium parsnip, peeled and cut into 6 wedges
2 medium shallots, peeled and cut into 3 pieces each
1/4 cup extra-virgin olive oil
Sea salt and freshly ground black pepper
1/4 cup Marcona almonds
1 1/2 tablespoons sherry vinegar
Sage-Garlic Brown Butter, warm
Zest of 1/2 lemon

Steps:

  • Preheat oven to 375 degrees.
  • Place both squashes, celery root, yam, beet, turnip, parsnip, and shallots in a large bowl. Drizzle with olive oil and season with salt and pepper; toss to combine.
  • Evenly spread vegetables in a roasting pan or large rimmed baking sheet. Transfer to oven and roast until squash and parsnips are tender, about 30 minutes. Remove squash, celery root, yam, and parsnip from roasting pan and set aside on a platter; cover with parchment-paper-lined aluminum foil. Continue roasting beet and turnip 20 minutes more; transfer to platter and cover with foil.
  • Place almonds on a baking sheet and toast until golden brown, about 5 minutes. Remove from oven and let cool slightly. Coarsely chop and transfer to a medium bowl with vinegar and brown butter; stir to combine.
  • Uncover vegetables and drizzle with almond mixture. Garnish with reserved beet leaves and lemon zest.

6 -8 fresh beets (without greens attached)
3 -4 peeled carrots
3 -4 peeled parsnips
1 purple onion, sliced in very thin slices
3 teaspoons olive oil
2 cups fat-free Italian salad dressing

Steps:

  • Cut beets, carrots, and parsnips into small bite-size pieces.
  • Wrap beets tightly in foil that has been coated in nonstick spray, and put in baking pan.
  • Bake 45 minutes in a preheated 425 degree oven.
  • Place carrots and parsnips in large baking dish. Add oil; toss to coat.
  • Add to oven after the first 15 minute of the beet baking time.
  • Toss all vegetables together and allow to cool in refrigerator.
  • Add thinly sliced raw onion.
  • Add Italian dressing and toss. Serve cold or room temperature.

1 1/2 cup (300 g) wheat berries or farro
one bay leaf
2 pounds (1kg) assorted root vegetables; carrots, rutabagas, butternut squash, celery root, parsnips, and salsify, peeled and cut into thumbnail-sized cubes
1 large red onion, peeled and diced
1/3 cup (80 ml) plus 2 tablespoons olive oil
10 or so branches of fresh thyme
salt and freshly-ground black pepper
1/2 cup (60 g) dried cranberries or cherries, coarsely chopped

Steps:

  • Preheat the oven to 425ºF (220ºC). 1. Bring about 2 quarts (2l) of well-salted water to a boil, then add the wheat berries and bay leaf. Cook until tender, but still chewy. Depending on the variety, they'll take between 40-60 minutes to cook. 2. While the wheat berries are cooking, toss the diced vegetables on a baking sheet with the onion and 2 tablespoons of olive oil and thyme, seasoning with salt and pepper. 3. Roast the vegetables in the bottom third of the oven, stirring once midway during baking, for 20 minutes, or until cooked through and browned on the outside. 4. Once the wheat berries are cooked, drain them well, plucking out the bay leaf. Transfer the wheat berries to a bowl and mix in 1/3 cup (80 ml) of olive oil and the dried fruits, stirring well. Taste, seasoning with more salt if necessary 5. Stir in the root vegetables (I don't mind the thyme branches in there, but you can remove them if you want) and do a final check for seasoning and add more salt, a few grinds of black pepper, and additional olive oil, if desired. You might want a splash of acid, like some vinegar in there, or check some of the additions below. Serve warm or at room temperature. Storage: Can be made up to three days in advance, and refrigerated. Let come to room temperature before serving. Here are some possible additions to add to the finished salad: •Toasted and coarsely chopped pecans, hazelnuts, or walnuts •Diced dried apricots in place of the cranberries or cherries •Cubes of feta or bleu cheese strewn over the top •A big squeeze of fresh lemon or tangerine juice, or some zest •Sautéed mushrooms tossed in with the root vegetables •Wilted greens, cooked with garlic, coarsely chopped •A generous handful of spicy arugula or flat-leaf parsley, coarsely chopped
