Steps:
- Put a 4 sides sheet pan in lower third of oven and preheat oven to 450.
- Stir cumin, oregano, and 3/4 tsp salt into oil a large bowl. Add potatoes and toss. Arrange potatoes, cut sides down, in 1 layer in a hot pan and roast, turning once, until golden, about 40 minutes.
- Stir together mayonnaise, sour cream, cilantro, and lime zest and juice, and 1/4 teaspoon salt into small serving bowl.
- Serve potatoes with mayonnaise.

- Preheat the oven to 475 degrees F.
- Toss the potato wedges with the olive oil, garlic powder, salt and pepper in a bowl. Lay the potatoes on a baking sheet and cook until golden brown on each side, flipping halfway through, about 12 minutes per side. When both sides are golden and the potatoes can be pierced easily with a fork, the taters are done.
