1 medium head cauliflower, cut into 1-inch pieces
1 teaspoon sea salt, divided
4 ounces cream cheese, softened
1/2 cup shredded Asiago cheese
2 tablespoons unsalted butter
2 tablespoons coarsely chopped fresh parsley
1/4 teaspoon pepper

Steps:

  • Place cauliflower and 1/2 teaspoon sea salt in a large saucepan; add water to cover. Bring to a boil. Cook, covered, until very tender, 12-15 minutes. Drain; cool slightly., Transfer to a food processor. Add the cream cheese, Asiago cheese, butter, parsley, pepper and remaining sea salt. Process until blended.

1 medium head cauliflower
2 tablespoons unsalted butter
1 tablespoon extra virgin olive oil
1-1/2 teaspoons garlic-herb seasoning blend
1/2 cup finely grated Asiago cheese

Steps:

  • Using a food processor fitted with the steel blade, or a box grater, finely shred cauliflower (there should be about 6 cups). In a large cast-iron or other heavy skillet, heat butter, oil and seasoning blend over medium-high heat. When butter is melted, stir in cauliflower, working in batches if necessary. Cook, uncovered, until tender, 10-15 minutes, stirring occasionally (there should be about 4 cups cauliflower "rice"). Add cheese; stir until well combined.

2 medium heads cauliflower, cut into florets (9 to 10 cups)
2 medium shallots, sliced
1/3 cup olive oil
1 teaspoon salt
1/2 teaspoon ground pepper
1 tablespoon chopped fresh thyme leaves
2 teaspoons shredded orange peel
1/4 cup toasted pine nuts, if desired

Steps:

  • Heat oven to 400°F. Spray 18x13-inch rimmed pan with cooking spray.
  • In large bowl, mix cauliflower, shallots, olive oil, salt and pepper. Spread in pan. Roast 35 minutes; stir. Roast 15 to 20 minutes longer or until browned and tender.

3 (14 ounce) cans low-sodium chicken broth
1 head cauliflower, cut into 1-inch pieces
¼ cup dry white wine
2 bay leaves
1 clove garlic, diced
1 (8 ounce) package cream cheese, softened
4 ounces diced Asiago cheese, or more to taste
salt and ground black pepper to taste
1 tablespoon chopped fresh rosemary
2 teaspoons fresh thyme leaves

Steps:

  • Bring chicken broth to a boil in a large pot. Cook cauliflower, white wine, and bay leaves in the boiling broth over medium-high heat until cauliflower is tender, 10 to 15 minutes.
  • Mix garlic, cream cheese, and Asiago cheese together in a bowl.
  • Strain cauliflower from broth with a slotted spoon and add to the cheese mixture. Remove bay leaves from stock and discard.
  • Mash cauliflower and cream cheese mixture with a potato masher until well mixed; season with salt and black pepper.
  • Stir cauliflower mixture into the broth until smooth. Season with rosemary, thyme, salt, and black pepper.
