12 thin slices prosciutto
2 pounds fresh asparagus, cut into 1-inch pieces
5-1/2 to 6 cups reduced-sodium chicken broth
1 shallot, chopped
2 garlic cloves, minced
2 teaspoons olive oil
2 cups uncooked arborio rice
1/2 cup white wine
1/2 teaspoon pepper
1 cup grated Parmesan cheese

Steps:

  • Place asparagus in an ungreased 15x10x1-in. baking sheet. Bake, uncovered at 400° until crisp- tender, stirring occasionally, 20-25 minutes., Meanwhile, place prosciutto in another ungreased baking pan. Bake at 400° until crisp, 10-12 minutes. Crumble prosciutto; set aside prosciutto and asparagus., In a large saucepan, heat broth and keep warm. In a large skillet, saute shallot and garlic in oil until tender. Add rice; cook and stir for 2-3 minutes. Reduce heat; stir in the wine, pepper and salt. Cook and stir until all the liquid is absorbed., Add heated broth, 1/2 cup at a time, stirring constantly. Allow the liquid to absorb between additions. Cook until risotto is creamy and rice is almost tender, 20 minutes., Add the asparagus, prosciutto and cheese; cook and stir until heated through. Serve immediately.

From the April/14/2006 Life Magazine. A bit of a pain to make, but very good. I used one can of Broth and 3 cups of chicken bouillon. If you need more just add water.

12 stalks asparagus
4 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon ground black pepper
5 cups chicken stock or 5 cups water
1/2 teaspoon saffron, large pinch
1 small Spanish onion, finely chopped
1 garlic clove, finely chopped, I used more
1 cup arborio rice, uncooked
1 cup dry white wine
1/4 cup parmesan cheese, Freshly Grated

Steps:

  • Asparagus:.
  • Preheat Oven to 425 degrees.
  • Put Asparagus on foil lined, rimmed baking sheet.
  • Toss with some of the oil.
  • Salt and pepper spread out on sheet.
  • Roast for 6 to 8 minutes.
  • Cut roasted Asparagus into ½ inch pieces on bias, set aside.
  • Rice:.
  • In Medium pot Heat Stock to a simmer over high heat.
  • When bubbles form reduce heat till barely bubbling.
  • Add Saffron and stir every 5 minutes or so.
  • In a large high sided sauté pan, sauté Onion for 4 to 5 minutes.
  • Add Garlic and sauté for 1 minute.
  • Add Rice to pan stirring to keep it from sticking for 2 minutes.
  • Add Wine to pan and stir until absorbed.
  • Add one Cup of stock stir until absorbed then add another cup.
  • Keep adding Stock one Cup at a time until you use all of it.
  • This will take 20 to 30 minutes.
  • The rice may not look done until most of the liquid is gone. The final product should be thick and creamy.
  • Stir in Asparagus and Cheese and cook for a few minutes.
  • Season with salt and Pepper to taste.
  • Serve immediately.

4 1/2 to 5 cups canned low-salt chicken broth
3 teaspoons olive oil (preferably extra virgin)
1/3 cup chopped onion
1-1/4 cups arborio rice or medium-grain white rice
1/2 cup dry white wine
1 pound asparagus, tough ends trimmed
1 large garlic clove, thinly sliced
1/4 cup finely chopped toasted walnuts
2 tablespoons freshly grated Parmesan cheese

Steps:

  • Preheat oven to 450°F. Bring broth to simmer in medium saucepan. Cover and remove from heat. Heat 1-1/2 teaspoons olive oil in heavy medium saucepan over medium-high heat. Add onion and sauté until light golden, about 4 minutes. Add rice and stir 1 minute. Add wine and stir until wine evaporates, about 2 minutes. Add 1/2 cup hot broth and cook until liquid is absorbed, stirring frequently. Continue adding more broth, 1/2 cupful at a time, until rice is tender and creamy, stirring frequently and allowing most of broth to be absorbed before adding more, about 25 minutes.
  • Meanwhile, place asparagus and garlic in shallow baking dish. Drizzle remaining 1 1/2 teaspoons oil over. Sprinkle with salt and pepper. Toss to coat with oil. Bake asparagus until tender, turning occasionally, about 16 minutes.
  • Mix walnuts and grated Parmesan into risotto. Season with salt and pepper. Arrange roasted asparagus in center of 4 plates. Top with risotto.

4 tablespoons unsalted butter
1/4 cup finely chopped shallot
1 1/2 cups arborio rice
3/4 cup sliced shiitake mushroom
4 teaspoons roasted garlic
1/2 cup dry white wine
5 -6 cups vegetable stock or 5 -6 cups chicken stock, heated
1/4 cup freshly grated parmesan cheese or 1/4 cup asiago cheese
2 teaspoons grated lemons, zest of
3/4 cup young tender asparagus, sliced in 1/2 inch pieces
1/4 cup finely chopped chives
salt
fresh ground pepper
chopped chives
shaved parmesan cheese

Steps:

  • Melt 3 Tbsp butter in saucepan over medium heat.
  • Add shallots and cook until soft, but not brown.
  • Stir in rice and mushrooms and cook, stirring occasionally until liquid is absorbed, about 3 minutes.
  • Add garlic, wine and 1/2 cup of hot stock and cook, stirring constantly, until the liquid is absorbed.
  • Continue adding small amounts of stock and cook in this manner, stirring constantly, until the rice is creamy, yet the kernels are firm at the centre, about 18 minutes.
  • When done, stir in remaining butter, cheese, lemon zest, asparagus and chives.
  • Season with salt and pepper.
  • Serve in warm bowls, sprinked with garnish.
  • (To roast the garlic, cut off top of bulb, revealing tops of cloves inside. Drizzle with olive oil, season lightly. Seal bulb in foil and roast in 350 oven for 25 to 30 minutes or until garlic is soft when squeezed.).

6 asparagus spears
1 large red bell pepper
6 T. butter, divided
1 small onion, finely diced
1 1/2 c. arborio rice
5 - 6 c. chicken stock, hot
1-2 threads saffron
1/4 c. grated parmesan cheese
salt & pepper to taste

Steps:

  • Roast whole red pepper on baking sheet or foil in pre-heated 375 oven for 1 hour. Place pepper in a bowl and cover with plastic wrap until cooled. Peel pepper and remove seeds.(Quick and easy option, drain & dry 1 whole pepper or 1/2 of a 12 oz. jar of roasted red peppers.) Dice roasted pepper. While pepper is cooling, blanch and shock asparagus. Cut into 1" pieces, reserving tips for garnish. Saute the onion in 4 T. butter over low heat. Add the rice and stir well. Dissolve saffron threads in stock. Add the hot stock to rice 1 cup at a time, stirring constantly. Add more stock as each addition is absorbed. When rice is firm, but not chalky, remove from heat. Add additional 2 T. butter, parmesan cheese, roasted pepper and asparagus. Garnish top with asparagus tips. Serve immediately.

Really creamy. The taste can be altered depending on what Champagne you use or just use white wine no matter what it is good.

2 large red bell pepper
1 lb asparagus trimmed and cut into pieces
3 Tbsp olive oil
1/2 tsp lemon zest
3 c vegetable stock
1 c water
1 Tbsp better than bouillon chicken bouillon
1 medium onion chopped
1 small shallot chopped
6 clove garlic minced
salt to taste
1 c arborio rice
1 c champagne
4 oz goat cheese
1/4 c chopped cilantro for garnish

Steps:

  • 1. Preheat broiler to high. Cut bell peppers in half and discard seeds and membranes. Place skin sides up on baking sheet. Flatten with hand. Combine asparagus with 1 tbsp oil. Add to baking sheet. Broil 5 minutes. remove asparagus. Broil pepper an additional 5 minutes until blackened. Place peppers in a paper bag and close tightly. Let stand 10 minutes. Peel and chop peppers and mix with asparagus and lemon zest and set aside.
  • 2. Bring broth, water and chicken bouillon to a boil and reduce to low to keep warm.
  • 3. Heat a large saucepan to hot and add oil. When oil is hot add onion and saute a couple of minutes. Add shallots and saute 1 minute. Add garlic and salt cook 30 seconds. Add rice and cook 1 minute. Add champagne and cook until almost all evaporated.
  • 4. Remove 1/4 cup broth and mix with goat cheese and set aside.
  • 5. Add remaining broth 1/2 cup at a time stirring until absorbed and rice is cooked.
  • 6. Stir in Asparagus and red pepper mixture. Add goat cheese mixture and heat through.

PHEASANT WITH RISOTTO, GRILLED ASPARAGUS, AND ROASTED CAULIFLOWER

For the pheasant:
1 large pheasant
1/2 teaspoon ground sumac
1 teaspoon fine sea salt
1/2 teaspoon freshly ground black pepper
2 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
3 fresh sage leaves
For the risotto:
6 cups pheasant or chicken stock or low-sodium chicken broth
2 tablespoons olive oil
1/2 cup diced fennel (reserve the fronds for garnish, if desired)
1/2 cup diced leek
1/2 cup white wine
2 cups arborio rice
2 tablespoons unsalted butter
1 tablespoon fine sea salt
1/2 tablespoon freshly ground black pepper
For the asparagus:
1 bunch asparagus, ends trimmed
2 tablespoons extra-virgin olive oil
1 tablespoon fine sea salt
1/2 teaspoon freshly ground black pepper
For the cauliflower:
1 head cauliflower, cut into florets
4 tablespoons extra-virgin olive oil
1/2 tablespoon fine sea salt
1 teaspoon freshly ground black pepper

Steps:

  • Prep the pheasant:
  • Remove both breasts from the pheasant and season all over with sumac, salt, and pepper. Cover and refrigerate the breasts while you make the risotto and vegetables. If desired, use the rest of the pheasant to make stock to cook the risotto in.
  • Make the risotto:
  • In a medium saucepan over moderate heat, warm the stock. Keep hot.
  • In a second medium saucepan over moderate heat, warm the oil. Add the fennel and leek and sauté until tender. Add the wine and simmer the mixture until nearly dry. Add the rice and sauté, stirring, until lightly toasted. Add about 1 ladle's worth of hot stock and cook, stirring frequently, until absorbed. Continue adding the stock, 1 ladle's worth at a time, and cook, stirring frequently, until all the stock is absorbed and the risotto is creamy and tender but still al dente. Stir in the butter, season with salt and pepper, and keep warm.
  • Grill the asparagus:
  • In a medium bowl, toss together the asparagus, oil, salt, and pepper. Heat a grill pan over moderate heat then add the asparagus and grill until tender. Alternatively, toss the asparagus, oil, salt, and pepper together on a large baking sheet and roast in a 500°F oven until tender.
  • Roast the cauliflower:
  • Preheat the oven to 500°F.
  • On a large baking sheet, toss together the cauliflower, oil, salt, and pepper. Roast until tender and caramelized.
  • Finish the pheasant:
  • In a large sauté pan over moderate heat, warm the oil. Add the pheasant and sear, flipping once, until both sides develop a rich brown color. Add the butter and sage and once the butter melts, use it to baste the breasts. Continue cooking until an instant read thermometer inserted into the thickest part of the pheasant (do not touch the bone) registers 165°F. Let the pheasant rest briefly then cut each breast in half.
  • To serve:
  • Divide the risotto, asparagus, and cauliflower among 4 plates. Top each with 1/2 pheasant breast and garnish with the reserved fennel fronds, if desired.

Instant pot is great this dish would of been 25 minutes and instead was done in 15 and no standing over the stove stirring the risotto constantly.

2 Tbsp olive oil
salt
5 Tbsp butter
3 shallots chopped
5 clove garlic minced
1/2 c dry white wine
4 c chicken stock
2 c arborio rice
1/4 c heavy cream
1 c parmesan cheese

Steps:

  • 1. Preheat oven 400 degrees. Place the asparagus on foil lined baking sheets. Drizzle with olive oil and season with salt. Roast for 10 minutes
  • 2. Select saute on instant pot. Add the butter and let it melt and brown. Add the shallots and saute until translucent. Add the garlic and saute 30 seconds. Add the wine and cook for 3 minutes. Add the broth and rice and stir add some salt. Select manual and cook for 8 minutes.
  • 3. Release with quick release. Remove lid and stir in heavy cream and Parmesan cheese. Serve with roasted asparagus on top.

7-8 cups canned chicken stock
(2 32oz boxes)
3 cups Arborio rice
3 Tablespoons olive oil
1/2 cup chopped onion
4 cloves minced garlic
1 cup dry wine at room temp.
(pinot grigio)
1 pound asparagus trimmed of
woody bottom part and cut
into 2 inch pieces
2 cups Roasted chicken cut into
bit-sized pieces
1 Tablespoon unsalted butter
1/2 cup crumbled Roquefort
cheese
1/4 cup grated parmesan cheese
plus extra for garnish
chopped parsely for garnish
salt and pepper to taste

Steps:

  • In a medium sauce pan over medium heat, bring stock to a simmer. Make sure to reserve 1/4 cup of heated stock for the end. Parboil trimmed asparagus in salted water for about 1-2 minutes until tender, then plunge in ice water to stop cooking. Drain and set aside. You can also quick steam in a microwave steamer for about 2 minutes. In a large heavy sauce pan over medium heat saute onion and garlic in oil until softened, about 3-4 minutes. Add rice. Stir until well coated with oil, onion and garlic (about 3 minutes). Add wine and stir until wine is almost completely absorbed. Start adding stock one ladleful at a time. Wait until stock is almost absorbed before adding another ladleful. Continue stirring rice until it has a creamy consistency and rice is almost tender (al dente), about 20 minutes. Add chicken and asparagus and another ladle of stock. Cook about 2-3 more minutes. Remove from heat. Add butter, cheeses and reserved stock. Salt and pepper to taste. Garnish with parsley and parmesan cheese. Serve immediately.
