1 cup part-skim ricotta cheese
1/2 cup heavy whipping cream
1/4 cup honey
2 cups fresh blueberries
2 cups fresh raspberries
1/2 cup chopped hazelnuts, toasted

Steps:

  • In a large bowl, beat ricotta, cream and honey until combined. Divide berries among 6 dessert dishes. Top with cream and hazelnuts. Refrigerate until serving.

1 c ricotta cheese
1/2 tsp vanilla extract
3 Tbsp honey
3 Tbsp balsamic vinegar
2 Tbsp sugar
1 lb strawberries (hulled and diced)
2 Tbsp basil, fresh (chiffonade)

Steps:

  • 1. In a food processer add first 3 ingredients and mix for 1 minute. Transfer to a bowl and refrigerate for 1 hour (minimum).
  • 2. Bring vinegar and sugar to a boil in a small pot; reduce to simmer for 2 minutes, stirring constantly. Cool completely.
  • 3. Toss basil and berries with balsamic sauce.
  • 4. To plate, place cheese on bottom of a glass, spoon berries on top. Place a little fresh basil as garnish and half a strawberry on rim of glass. You may also wet the rim of glass ahead of time with a lemon wedge and dip rim in sugar for decoration.

1 c heavy cream
1 lb whole milk ricotta cheese
8 oz mascarpone cheese
3/4 c granulated sugar
zest of one lemon
2 lb strawberries, cleaned, hulled, cut into quarters
1/4 c balsamic vinegar, or to taste

Steps:

  • 1. Begin by preparing your mousse. Beat cream in a bowl until it reaches the soft peak stage... then stop! Set aside.
  • 2. In a separate bowl, add the lemon zest and 1/2 cup sugar to your ricotta and mascarpone. Whip with mixer until smooth. (Yum!)
  • 3. Next, take the cream you've whipped and begin folding it into the cheese mixture. Take your time and go slowly.
  • 4. You want a smooth texture. When complete, cover and chill for an hour or two.
  • 5. When you're getting near serving time, begin preparing your berries. Place them in a bowl and add in the remaining sugar and all of the vinegar.
  • 6. Toss quickly and serve promptly over your chilled mousse.

1 cup part-skim ricotta cheese
2 tablespoons honey
1/2 teaspoon vanilla extract
3 tablespoons balsamic vinegar
2 tablespoons sugar
1 (16-ounce) container strawberries, hulled and quartered
2 tablespoons fresh basil leaves, cut into ribbons

Steps:

  • Put the ricotta cheese, honey and vanilla extract into the small bowl of a food processor and process until smooth, about 1 minute. Transfer to a small bowl and refrigerate for at least 2 hours.
  • In a small saucepan combine the vinegar and sugar and bring to a boil. Simmer over medium heat for 2 minutes, stirring occasionally. Allow to cool completely.
  • In a medium bowl, toss the berries with the basil and the balsamic syrup.
  • Divide the cream among 4 cocktail glasses, top with the berry mixture and serve.

Steps:

  • Combine first 3 ingredients in small bowl. (Can be made 8 hours ahead; chill)
  • Combine remaining ingredients in medium bowl. Let stand 30 minutes. Divide cheese mixture among 4 small bowls. Top with berry mixture.
