ARTICHOKE RICE SALAD

The perfect picnic or potluck salad - this artichoke rice salad combines Rice a Roni, bacon, artichoke hearts, and green olives in a crunchy, flavorful summer salad.

Number Of Ingredients 10

1 box Rice-A-Roni (chicken flavored) (prepared)
3 oz. pimento stuffed green olives (sliced)
6 oz. marinated artichoke hearts (drained and chopped)
1 cup celery (chopped)
1 cup green bell pepper (chopped)
1/2 cup green onions or chives (sliced)
1/2 lb. bacon (cooked and crumbled)
1 teaspoon parsley (chopped)
1 cup mayonnaise
1 tbsp apple cider vinegar

Steps:

  • Prepare Rice-a-Roni according to the instructions on the box. Cool completely.
  • Cook and crumble bacon.
  • Chop all veggies.
  • Mix together all ingredients. Cover and chill for 1 hour before serving.

I have been making this delicious rice salad for years. The pages to my little community cookbook where I found this recipe is starting to fall apart from so much use. Anyway, this recipe is one of my favorites. I hope you enjoy it, too.

1 pkg chicken flavored rice-a-roni, cooked as directed
2 jar(s) marinated artichoke hearts, cut up
1/3 c mayonnaise
1/4 tsp curry powder
8 pimento stuffed olives, sliced
2 green onions, (scallions) sliced

Steps:

  • 1. Drain artichokes, saving marinade. Add artichokes to cooked rice. Mix the mayonnaise and curry powder. Add to marinade and mix well. Add remaining ingredients. Toss together. Chill.

2 cups cooked brown rice
1 cup quartered cherry tomatoes
1/3 cup chopped red onion
1 can (2-1/4 ounces) sliced ripe olives, drained
3 tablespoons cider vinegar
2 tablespoons canola oil
2 tablespoons minced fresh parsley
1/2 teaspoon sugar
1/2 teaspoon salt
Leaf lettuce, optional

Steps:

  • In a large bowl, combine rice, tomatoes, onion and olives. In a small bowl, combine vinegar, oil, parsley, sugar and salt; mix well. Pour over rice mixture and toss to coat. Cover and chill for at least 2 hours. Serve in a lettuce-lined bowl if desired.

1 (4 1/3 ounce) package chicken rice-a-roni
5 green onions, sliced thin including part of the tops
1/2 cup red bell pepper, diced
1/4 cup black olives, sliced
1 (6 ounce) jar marinated artichoke hearts, drained, chopped (reserve the marinade)
1/2 cup plain yogurt
1/2 teaspoon curry powder
1/2 teaspoon cajun seasoning
1/4 teaspoon garlic powder
1/4 teaspoon black pepper

Steps:

  • Prepare Rice A Roni according to directions omitting butter. Let cool completely.
  • Combine drained marinade, curry powder, mayonnaise and spices. Whisk until smooth with a fork or small whisk.
  • Mix cooled Rice A Roni in a 2-quart bowl with marinade dressing and chopped vegetables.
  • Chill.

My grandma has been making this (and now all the women in the family as well) for years and years as long as I can remember. I checked the other recipes similar to this on the site and I guess compared to those, this one is much more simple and a fewer ingredients than the others but in my opinion, this is a great salad!

1 (10 3/4 ounce) box chicken rice-a-roni
1/2 cup mayonnaise
1 (6 1/2 ounce) jar marinated artichoke hearts, chopped & drained to a cup (reserve 1 tablespoon artichoke heart juice)
1 teaspoon curry powder

Steps:

  • Cook rice roni according to directions on the box, put in refrigerator and let cool completely (I do overnight).
  • In a bowl mix mayo, artichoke hearts, juice and curry powder.
  • Mix with the rice, refrigerate to cool again (about an hour).

1 package (6.9 ounces) chicken-flavored rice and vermicelli mix
1 teaspoon canola oil
12 pimiento-stuffed olives, sliced
4 green onions, thinly sliced
1/2 medium green pepper, chopped
2 jars (6-1/2 ounces each) marinated artichoke hearts, marinade drained and reserved
1/3 cup mayonnaise
1/2 to 3/4 teaspoon curry powder

Steps:

  • Prepare rice mix according to package directions, except substitute 1 teaspoon oil for butter called for. Cool. , Add the olives, green onions and green pepper; toss to mix. Cut the artichokes into quarters and add to rice mixture; set aside. In a small bowl, combine the mayonnaise, curry powder and reserved marinade; blend well. Pour over rice mixture; toss to mix. Cover and chill for at least 2 hours.
