2 envelopes unflavored gelatin
1/4 cup cold water
3 cups whole milk
1/2 cup uncooked long-grain rice
1/2 cup sugar
1/2 teaspoon salt
1 cup heavy whipping cream
Fresh or thawed frozen sweetened strawberries

Steps:

  • In a small bowl, sprinkle gelatin over cold water; set aside. In a small heavy saucepan, combine milk, rice, sugar and salt; bring to a boil, stirring occasionally. Reduce heat; simmer, covered, 15-20 minutes until rice is tender. Remove from heat; stir in gelatin mixture until completely dissolved. Refrigerate, covered, until partially set., In a bowl, beat cream until stiff peaks form. Fold into chilled rice mixture. Spoon into a 6-cup ring mold coated with cooking spray; refrigerate until firm, about 3 hours. Unmold onto a serving platter. Serve with strawberries.

RICE AND MUSHROOM RING

Number Of Ingredients 6

1/2 cup long-grain rice
1/2 pound mushrooms
1 tablespoon unsalted butter
2 cups frozen peas
1/8 teaspoon salt
Freshly ground black pepper to taste

Steps:

  • Combine the rice and 1 cup of water in a heavy-bottomed pot; bring to boil; reduce heat and simmer rice, cooking for 17 minutes, until it is tender.
  • Rinse the mushrooms, and remove bottom of stems. In a food processor, process the mushrooms until they are in very small pieces.
  • Heat the butter in a small nonstick pan, and saute the mushrooms over medium-low heat for a couple of minutes, until they release their juices. Remove from heat.
  • Steam peas over hot water just a few minutes, until they are heated through.
  • When rice is cooked, combine well with mushrooms, and season with salt and a little pepper. Place in small ring mold, and press down; then, turn out onto serving plate. Fill the center with peas. Or spoon the rice-mushroom mixture into a mound, make a depression in the center, and fill the depression with peas.

RING OF WILD RICE WITH A MUSHROOM SAUCE



Ring of Wild Rice With a Mushroom Sauce image

Sounds fancy and it is, but it is actually easy to make. This is not an every night side dish but it is great to serve for a dinner party. It is nothing more than wild rice and a mushroom sauce, but the presentation is just unique. You can make the mold ahead and just cook it the night of your party. The sauce I recommend making when you bake the rice, but it doesn't take more than a few minutes to put together. This is a wonderful side dish as the sauce can also be used to top grilled or roast chicken, cornish hens, pork chops or a pork roast. It simply takes regular wild rice and makes in to a gorgeous side dish for entertaining.

6 cups wild rice, cooked (cook according to package directions)
1/3 cup butter, melted (no margarine)
5 chicken bouillon cubes (5 teaspoons chicken bouillon)
3 scallions, fine chopped (white and green parts)
2 tablespoons flour
1/2 cup hot water
2 cups milk
2 tablespoons butter
2 tablespoons flour
2 chicken bouillon cubes (2 teaspoons bouillon)
1 1/2 cups cremini mushrooms, sliced
1/2 teaspoon fresh rosemary, fine chopped
salt
pepper

Steps:

  • Rice -- Cook the rice according to package directions.
  • Base -- Melt the butter over medium heat and add in the flour and stir until well combined. Slowly mix the hot water with the bouillon until well combined and then add to the butter and flour mixture. Add in the rice and turn off the heat and stir well and let it cook for about 1 minute. Remove from the heat and let cool slightly.
  • Ring -- I like to use a 6-7" ring or mold. Spray well with a non-stick spray. Press the rice mixture into the mold and press it down good - You would the mixture well packed. I like to make this the day before and then I just have to bake it. Make sure to cover well with saran or plastic wrap and keep in the refrigerator if you are not immediately cooking it.
  • Bake -- Oven to 350, middle shelf. And here's the trick - fill a 13x9 pan with hot water and put on the bottom shelf, then the rice mold on the middle shelf. This will cause steam and therefore the rice doesn't burn. About 40-50 minutes un-covered. Remove from the oven and cover with foil to let it rest as you make the mushroom sauce.
  • Sauce -- In a small sauce pan, add the butter and melt on medium heat. Add the mushrooms and saute for 3-4 for minutes until they are tender. Then whisk in the flour and cook just a minute to get rid of the flour taste. Add the chicken bouillon and milk and bring to medium heat until the sauce thickens. Season with the rosemary, salt and pepper.
  • Serve -- Put the serving tray on top of the rice ring and then flip over. The rice mold should pop right out. I like to drizzle a little of the mushroom sauce over the rice, maybe a few rosemary sprigs in the middle and then a small dish of the mushroom sauce on the side for people to help themselves. The rice mold will cut nicely into wedges. You can serve a little of the sauce over each wedge.
  • ENJOY a unique side dish!
  • Cooking and prep time is a mix of cooking the rice and then baking.

This is from a recipe clipping that my grandmother kept--I'm not sure exactly which magazine it is from, but it looks like it is from "Country" or "Taste of Home". It looks very pretty in the picture. Seems easy to make too. Original recipe from Lori Jeane Schlect of Wimbledon, ND.

2 (3 ounce) envelopes unflavored gelatin
1/4 cup cold water
1/2 cup uncooked long-grain rice
3 cups milk
1/2 cup sugar
1/2 teaspoon salt
1 cup whipping cream
3 cups sweetened strawberries, to garnish (fresh or frozen) or 3 cups fruit, of your choice to garnish

Steps:

  • Soften gelatin in water; set aside.
  • In a heavy 2-quart saucepan, bring rice, milk, sugar and salt to a boil, stirring occasionally. Reduce heat and cover; cook over low heat until rice is tender, about 15--20 minutes.
  • Remove from heat; add gelatin, stirring until dissolved. Cover; chill until partially set.
  • In a chilled bowl, whip cream until stiff; fold into the chilled rice mixture.
  • Spoon into a 6-cup decorative or ring mold. Cover and chill until set, about 3 hours.
  • To unmold, loosen edges with a spatuala and invert onto a serving platter. Serve with sweetened strawberries.

2 rolls breakfast sausage, mild
1/2 pound lean ground beef
1 cup chopped onions
1/2 cup chopped green bell pepper
1 cup sliced fresh mushrooms
1 teaspoon garlic salt
2 tablespoons dark brown sugar
2 cups cooked rice, medium grain (cooked in chicken broth)
2 cans refrigerated crescent rolls
2 cups shredded cheese, Mexican style with jalapenos
1 package Canadian bacon

Steps:

  • In a heavy skillet, add breakfast sausage, beef, onions, bell peppers, and mushrooms. Cook over medium heat on stove until the meat is no longer pink and the vegetables are tender. Add salt, brown sugar, and rice, and mix well. Remove from heat and add 1 cup shredded cheese and mix well.
  • Preheat oven to 375 degrees F.
  • On a round baking stone arrange crescent dough triangles in a circle with wide bases overlapping to form a circle in the center of the stone. The crescent roll points should be hanging over the edges. Place a scoop of rice and meat mixture evenly on wide edges of crescent roll. Sprinkle 1/2 cup shredded cheese evenly over meat and rice mixture. Bring points up over filling and tuck under center bases. The filling will not be completely covered with crescent rolls. Slice Canadian bacon in half and place slices over mixture between rolls. Bake for 13 to 15 minutes or until golden brown. Remove from oven and sprinkle remaining shredded cheese on top of dish.
  • Optional garnish: Cut top off medium bell pepper. Remove seeds and membrane. Fill with breakfast syrup. Place pepper in center of ring with arranged shredded lettuce around. Slice and drizzle syrup for a special added flavor!

¼ cup slivered almonds
½ cup raisins
6 cups of hot cooked rice
shredded coconut

Steps:

  • In skillet, melt ¼ cup butter; cook ½ cup chopped onion and ¼ cup slivered almonds till golden. Add ½ cup raisins; heat until plump. Add to 6 cups of hot cooked rice; mix gently. Press mixture into greased mold. Unmold at once on platter. Top with shredded coconut.

You can cook meats night before then assemble the ring in the morning. My coworkers' request this instead of a cake for their birthdays!!!! It's great for breakfast, showers, or brunch. I will use edible grass and center a ceramic egg filled with syrup for Easter Morning!!!!

3 cups cooked long-grain white rice
1/2 cup KRAFT Mexican Style Shredded Four Cheese with a TOUCH OF PHILADELPHIA

Steps:

  • Heat 1-1/2 tsp. oil in large skillet. Add peppers; cook 6 min. or until crisp-tender, stirring occasionally. Spoon half into 6-cup ring mold sprayed with cooking spray. Spoon remaining peppers into bowl; cover to keep warm.
  • Heat remaining oil in same skillet. Add onions and garlic; cook and stir 2 min. Add wieners and corn; cook 5 min. or until wieners are lightly browned, stirring occasionally. Stir in rice and remaining peppers; cook 3 min. or until heated through, stirring frequently.

My Creamed Chicken in Rice Ring image

This is comfort food personified. I've been making this for as long as I can remember. No one has ever NOT liked it, and I never have any left over for another meal!

2 whole chicken breasts, with skin and bones
4 large carrots, cut in 1 1/2-inch pieces
6 stalks celery & leaves, cut in 2-inch pieces
salt & pepper
4 tablespoons butter
4 tablespoons flour
2 cups chicken broth, from cooked chicken
2 cups raw rice
4 cups cold water
1/4 cup butter
salt

Steps:

  • NOTE: MAKE RICE WHILE CHICKEN COOKS OR MAKE CREAMED CHICKEN WHILE RICE COOKS.
  • Put breasts in deep pot with carrots and celery.
  • Cover with COLD water.
  • Add salt and pepper.
  • Bring all to a boil and reduce heat to simmer.
  • Cover and simmer for at least an hour. Until meat appears to be falling off bones.
  • Remove chicken and cool.
  • When cool enough to handle, remove bones and skin and discard.
  • Cut chicken into bite-size pieces, not too small.
  • Remove 2 cups of broth from pot.
  • Melt butter in pan and whisk in flour until smooth.
  • Remove from heat and add 1/2 cup broth, whisking to keep it smooth.
  • Add another 1/2 cup and whisk again. Try to keep it from lumping.
  • Return to heat and add last cup of broth. Keep heat low-medium and keep whisking until sauce thickens.
  • Should be like very heavy cream or slightly thicker, not runny.
  • Add chicken pieces, keep warm until rice is done.
  • I usually add canned lima beans to the sauce, but this is optional. You could also add some celery and/or carrots from the pot.
  • RICE RING.
  • You can make the rice as you usually do to get 4 cups cooked rice OR use my method.
  • Put rice and cold water in pot. Add salt.
  • Bring water to a boil and stir rice ONCE with wooden spoon.
  • Cover tightly and simmer for 18 minutes.
  • When done, remove from heat and fluff rice with a fork.
  • Add butter and stir gently until all melted and blended inches.
  • Pack rice into buttered ring mold and tamp down so it is packed, not loose.
  • Put serving plate over top of mold and flip over.
  • Tap gently to loosen rice ring.
  • Fill center of ring with creamed chicken, decorate as desired and serve.
  • NOTE: Putting veggies in creamed chicken is an option. You could serve them as a side dish.
  • Use the rest of the broth with carrots and celery for soup or another recipe.
