RICE AND BEANS CASSEROLE

1 cup dried borlotti or cannellini beans
1 tablespoon EVOO, plus some to drizzle
2 ribs celery, chopped
2 cloves garlic, chopped
1 carrot, chopped
1 onion, chopped

1 1/2 cups long grain white rice
2 3/4 cups chicken stock/poaching liquid from Poached Chicken, recipe follows
1/2 cup fresh parsley leaves, finely chopped, plus more to garnish
2 tablespoons fresh thyme leaves, finely chopped
1 tablespoon fresh rosemary leaves, finely chopped
2 tablespoons butter, plus more for greasing
1 pound hot or sweet Italian sausage, casing removed
1 cup grated Parmigiano-Reggiano, plus more to pass
Finely chopped red onion, for garnish
1 whole chicken, 4 to 5 pounds
1 teaspoon whole black peppercorns
2 ribs celery, coarsely chopped
2 cloves garlic, crushed
1 large fresh bay leaf
1 carrot, peeled and coarsely chopped
1 lemon, sliced
1 onion, peeled and quartered
Herb bundle of parsley, rosemary and thyme

Steps:

  • Soak the beans 4 hours or overnight.
  • Rinse the beans after soaking. Place the rinsed beans in a pot with 1 tablespoon of the EVOO, the celery, garlic onions and some salt and pepper. Add enough water to cover, about 1 quart, and bring to a low boil. Cook until tender, adding a bit more water if necessary, about 30 minutes. Puree half of the mixture, reserve.
  • Meanwhile heat the stock to a boil, then add the rice and stir. Cover and reduce the heat to low. Simmer for 16 minutes, then stir in the herbs and butter. Cook 1 minute more and remove from the heat, fluff the rice with a fork.
  • Brown and crumble the sausage in a skillet with a drizzle of EVOO over medium-high heat.
  • Grease a large casserole dish. Combine the rice with half of the cheese, the pureed beans, whole beans, vegetables and sausage. Top with remaining cheese. Cool and cover, then store in the fridge until ready to eat.
  • Preheat an oven to 350 degrees F. Bring the casserole to room temperature.
  • Bake until heated through, top with an extra drizzle of oil, the reserved parsley and raw onions before serving. Pass the cheese at the table.
  • Place the chicken in a large stockpot. Add the peppercorns, celery, garlic, bay leaf, carrot, lemon, onions and the herb bundle tied with string. Sprinkle with salt. Cover the chicken with water and bring to a boil. Reduce the heat to low, a rolling simmer. Simmer 1 hour to 1 hour 15 minutes. Then cool chicken in its stock. Strain the stock, discarding the vegetables. Remove the chicken in large pieces from skin and bones. Reserve the meat for another use.

1 medium onion, chopped
1/2 medium green pepper, chopped
2 garlic cloves, minced
1 (8 ounce) can red kidney beans, drained and rinsed
1 (8 ounce) can great northern beans, drained and rinsed
10 beef hot dogs, cut into 1/4 inch thick slices
2 1/2 cups instant rice, cooked following package directions
1/2 cup vegetable broth
1/2 cup ketchup
1/2 cup brown sugar
2 tablespoons dark molasses
2 tablespoons Dijon mustard

Steps:

  • Preheat oven to 350 degrees. Spray 9 x 13 baking dish with nonstick cooking spray. Heat oil in pan over medium high heat until hot. Add onion, pepper and garlic; cook and stir 2 minutes or until onion is tender. Add beans, hot dogs, cooked rice, broth, ketchup, sugar, molasses and mustard to vegetables; stir to combine. Pour into prepared dish. Cover tightly with foil and bake 30 minutes.

1 box uncle ben rice and black bean soup
1 cup cooked long grain white rice
1/2 package Little Smokies sausage, cut in half
2 -3 tablespoons goya recaito
1/2 cup chopped green bell pepper
1/2 cup chopped onion
hot sauce
1/2 cup shredded monterey jack cheese

Steps:

  • Cook Uncle Ben's Soup Mix as directed.
  • Saute green bell pepper, onion and Lil Smokies sausages until vegetables are soft and sausages are slightly brown.
  • Add cooked rice, soup mix, green pepper,onion, sausages, and Goya Recaito to Uncle Ben's mix.
  • Pour into a 2 quart casserole dish, top with Monterey Jack cheese and place in 350 degree oven until cheese is melted.

A different kind of chicken and rice casserole! It was very good. It does take some time to make, but it can be made and frozen ahead of time. The only concern I had with this recipe is that the rice-to-liquid ratio seemed off, and it made the rice really creamy, which tasted fine, but just know that you will have really creamy rice, insead of the regular singular grain rice taste. This is from The Best Make Ahead Recipe Cookbook from Cooks Illustrated.

6 ounces corn tortilla chips
2 tablespoons unsalted butter
2 tablespoons minced fresh parsley
salt and pepper
4 tablespoons unsalted butter
2 medium red bell peppers, stemmed, seeded and chopped medium
2 medium jalapeno chiles, seeds and ribs removed, minced
salt
3 medium garlic cloves, minced
1 teaspoon ground cumin
1/4 cup flour
6 cups chicken broth
1 cup heavy cream
2 lbs chicken breasts, trimmed (about 5 breasts)
1 1/2 cups long grain white rice
8 ounces monterey jack pepper cheese, shredded (about 2 cups)
1 (15 ounce) can black beans, rinsed and drained
1 1/2 cups frozen corn, thawed and drained
2 tablespoons fresh lime juice
ground black pepper
1/4 cup minced fresh cilantro leaves

Steps:

  • Make the topping and set aside*.
  • Melt the butter in a Dutch oven over medium heat. Add the bell peppers, onions, jalapeños, and 1 t. salt and cook until softened, about 5 - 7 minutes.
  • Stir in the garlic and cumin and cook until fragrant, about 30 seconds. Stir in the flour and cook, stirring constantly, until golden, about 1 minute.
  • Slowly whisk in the broth and the cream.
  • Add the chicken breasts, partially cover, and bring to a simmer. Reduce the heat to low, cover completely, and cook until the chicken is done, 10 to 15 minutes. Remove the chicken and set aside to cool.
  • Stir the rice into the pot, cover and continue to cook over low heat, stirring often, until the rice has absorbed 25 minutes.
  • When the chicken is cool enough to handle, shred into bite-size pieces.
  • Remove the pot from the heat and stir in the shredded chicken, cheese, black beans, corn and lime juice and season with salt and pepper to taste.
  • Pour the mixture into a 9 x 13 that has been sprayed and sprinkle wit crumb topping.
  • 8Bake the casserole in a 400 degree oven, uncovered, until the sauce is bubbling and and the crumbs are crisp, 25 to 35 minutes. Sprinkle with cilantro before serving. Serves 8.
  • Corn Chip Topping: Combine 6 oz. of corn tortilla chips or Frito corn chips with 2 T. unsalted butter, melted in a food processor. Pulse to make coarse crumbs, about 10 pulses. Toss crumbs with 2 T. fresh minced parsley and season with pepper. Set aside.
  • To store: Wrap the dish with plastic wrap and then foil and refrigerate up to two days or freeze up to one month (if frozen, the casserole must be thawed completely in the refrigerator, about 24 hours. To serve: Heat oven to 400. Unwrap the dish and cover tightly with foil. Bake until the casserole is bubbly and hot throughout, about 1 hour. Remove the foil and continue to bake until the crumbs are crisp, 25 to 35 minutes. Sprinkle with cilantro before serving.

1 cup frozen corn
1 can (15 oz) spicy chili beans in sauce, undrained
1 can (14 oz) vegetable broth
1 can (14.5 oz) diced tomatoes with green chiles, undrained
1 chipotle chile in adobo sauce (from 7-oz can), chopped
1 cup chili cheese-flavored corn chips
1 cup shredded Monterey Jack cheese (4 oz)

Steps:

  • Heat oven to 350°F. Spray 2-quart casserole or 8-inch square (2-quart) glass baking dish with cooking spray. In baking dish, mix rice, corn, beans, broth, tomatoes and chile.
  • Cover with lid or foil; bake 1 hour. Uncover; stir well. Sprinkle with chips and cheese. Bake uncovered 10 to 15 minutes longer or until bubbly and rice is tender.
