Number Of Ingredients 9

1 lb ground beef
1 cup soft breadcrumbs
1/2 cup thousand island dressing
1 egg
1/2 teaspoon caraway seed
1/4 teaspoon pepper
8 ounces sauerkraut
1 ounce corned beef, chopped (from can)
1/2 cup swiss cheese, shredded

Steps:

  • Combine all ingredients except last 3 in medium bowl.
  • Press 1/2 of mixture in bottom of loaf pan.
  • Make slight indentation, lengthwise down center of meatloaf.
  • Combine all the filling mixture and put in indentation.
  • Top with remaining meat mixture, pressing to enclose filling and sealing edges.
  • Bake at 350 degrees for approximately 1 hour.
  • Let stand for 5 minutes.

This is one of my husband's favorite meals--he loves Reuben sandwiches! He found this recipe years ago. It makes a large meatloaf and is very filling.

1 egg, beaten
1 onion, chopped
1/4 cup sweet pickle relish
1 tablespoon Worcestershire sauce
1 cup soft rye breadcrumbs
1/2 teaspoon salt
1/4 teaspoon pepper
2 lbs ground beef
1/4 cup thousand island dressing
1 cup sauerkraut, drained
1 cup shredded swiss cheese

Steps:

  • In a large bowl, combine first seven ingredients--mix well.
  • Crumble beef over mixture. On foil, pat meat mixture into 14 x 10 rectangle.
  • Spread with dressing, top with sauerkraut and 1/2 cup of the swiss cheese.
  • Roll up into a log lengthwise--seal the seams.
  • Place into a large baking pan.
  • Bake at 350 degrees for 50-55 minutes--near end of baking top with remaining 1/2 cup of swiss cheese and bake until melted.

This reuben-stylized meatloaf can also be formed into patties and grilled or pan-fried or divided and baked in muffin tins for 25 to 30 minutes to save time.

1 lb ground beef
1 lb ground pork
1 cup sauerkraut or 1 cup shredded cabbage
1 cup finely chopped onion
2 eggs
1 1/2 tablespoons caraway seeds
2 teaspoons celery seeds
2 tablespoons coarse ground dry mustard
1/2 teaspoon black pepper
1 1/2 teaspoons salt

Steps:

  • Mix all the ingredients together until thoroughly blended.
  • Free-form into a loaf shape in a casserole dish and bake and 350°F until done, about 1 1/4 hours.
  • This can be served with a low carb Russian or Thousand Island dressing.

•1 large yellow onion, cut into 2-inch pieces
•1 large carrot, cut into 2-inch pieces
•1 tablespoon extra-virgin olive oil, or canola oil
•2 cups sauerkraut, drained and squeezed dry
•1 cup diced Swiss cheese
•4 tablespoons ketchup, divided
•1 tablespoon caraway seeds
•1/4 teaspoon salt
•1 large egg, lightly beaten
•3/4 cup fresh breadcrumbs, preferably from Jewish rye bread (see Tip)
•2 pounds lean (90% or leaner) ground beef
•3 tablespoons low-fat mayonnaise
•1/2 cup chopped dill pickles

Steps:

  • Directions 1.Prepare through Step 3, cover and refrigerate for up to 1 day. Let stand at room temperature while oven preheats; bake until an instant-read thermometer registers 165°F, about 1 hour. 2.10 servings 3.Preheat oven to 375°F. Coat a large rimmed baking sheet with cooking spray (or see Loaf Pan Variation). 4.Pulse onion and carrot in a food processor until finely chopped. (Or finely chop them with a knife.) 5.Heat oil in a large nonstick skillet over medium-high heat. Add the vegetables and cook, stirring occasionally, until tender and most of the liquid has evaporated, 5 to 10 minutes. Transfer to a large bowl and let cool for 10 minutes. 6.Add sauerkraut, cheese, 2 tablespoons ketchup, caraway seeds and salt to the vegetables; stir to combine. Stir in egg and breadcrumbs. Combine the remaining 2 tablespoons ketchup and mayonnaise in a small bowl. Spread on the loaf. 7.Bake the meatloaf until an instant-read thermometer inserted in the center registers 165°F, about 45 minutes. Sprinkle with chopped pickles. Let rest for 10 minutes before slicing.

I am not a huge fan of sauerkraut but this is very tasty and you don't even know it has sauerkraut in it. I love this meatloaf!!!

1 1/2 lb ground beef
3/4 c oatmeal
2 eggs, beaten
1 medium onion, chopped
1 1/2 tsp salt
1/2 tsp pepper
1 c milk
1 can(s) (small) sauerkraut, drained
2 c grated swiss cheese
little caraway seed, if desired

Steps:

  • 1. Combine all ingredients except kraut and cheese. Put 2/3 of the meat mixture into 7 x 11" baking dish. Cover bottom and sides of dish. Layer kraut, then top with grated cheese. Pat remaining meat mixture on top and seal edges of meat. Bake one hour at 350 degrees. ENJOY!!!

I've made this meatloaf for years but I didn't have it written down anywhere so I had to wait til I made it again tonight to measure the ingredients. I'm not usually a huge fan of sauerkraut but my husband likes it so I combined a couple of different recipes to come up with this.

1 1/2 lbs ground beef
1 cup rye breadcrumbs
1/2 cup Russian salad dressing or 1/2 cup thousand island dressing
1 egg
1/4 teaspoon pepper
1 (8 ounce) can sauerkraut, rinsed and drained
1/2 cup swiss cheese, shredded

Steps:

  • Combine ground beef, bread crumbs, dressing, egg and pepper.
  • Pat into approximately a 10x12 rectangle on a piece of waxed paper.
  • Top with sauerkraut and Swiss cheese, and roll up like a jelly roll.
  • Seal ends and place seam side down into a meatloaf pan.
  • Bake at 350 for 45 minutes or until done.
  • I usually sprinkle a little more cheese on top and put it back into the oven to melt it.
