3 cups chicken breast (shredded or chopped )
3/4 cup mayonnaise
1 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
1 cup celery (finely chopped)
1/2 cup yellow onion (finely chopped)
1 red bell pepper (finely chopped)
1/2 cup cilantro (chopped )
Juice of 1 lime

Steps:

  • Combine the mayonnaise, with the garlic, salt, pepper, and lime juice and mix.
  • In a large bowl, stir the chicken, celery, onion, bell pepper, and cilantro with the mayo mixture until everything is coated.
  • Chill for 1 hour for flavors to meld.

2 pounds skinless, boneless chicken breasts, or more to taste, cut into bite-sized pieces
1 teaspoon garlic powder, plus more to taste
kosher salt and ground black pepper to taste
1 pinch poultry seasoning, or more to taste
1 cup chopped celery
1 cup red onion, chopped
¼ cup slivered almonds, or to taste
3 tablespoons mayonnaise, or to taste
2 squeezes lime juice, or to taste
1 teaspoon ground cumin
1 teaspoon chili powder
1 tablespoon chopped fresh cilantro, or more to taste
