This recipe originated in the caribbean. It is not for the meek. Be careful handling the peppers. Wear rubber gloves and keep your hands away from your eyes! Move over Tobasco!

24 small hot red peppers, seeded and sliced lengthwise
2 medium onions, chopped
2 garlic cloves, halved
1 tablespoon dry mustard
2 teaspoons salt
2 whole cloves
1 1/2 cups white vinegar

Steps:

  • Combine hot peppers, onions and garlic in the bowl of a food processor or blender and puree.
  • Add dry mustard, salt, cloves and vinegar and combine.
  • Transfer to a small nonaluminum saucepan and simmer over medium low heat 3 to 4 minutes.
  • Pour into warm sterilized jars and seal.

2 to 6 chili peppers, depending upon their hotness
1 teaspoon kosher or coarse salt
1 cup olive oil
1/3 cup cider vinegar

Steps:

  • Stem the peppers and coarsely chop (include the seeds); place in a 1-pint shaker jar along with the salt, olive oil, and vinegar. Cover tight, shake well, then store at room termperature. The sauce will keep well for about a month. Shake the sauce every time you use it. Note: For mellower flavor, roast the peppers uncovered for 15 minutes at low oven heat (300 degrees F.), cool until easy to handle, then slip off the skins. Otherwise, prepare as directed.

Coarse salt
1/4 cup extra-virgin olive oil, plus more for drizzling
4 garlic cloves, smashed
1/2 teaspoon dried oregano
Red-pepper flakes
1 can (14 ounces) whole plum tomatoes, chopped, plus 1/2 cup juice
2 cans (6.5 ounces each) chopped clams, drained, reserving 1 cup clam juice
1 tablespoon capers (preferably salt-packed), rinsed and drained
3/4 pound bucatini (perciatelli) or other long pasta
Coarse sea salt, for sprinkling

Steps:

  • While bringing a large pot of salted water to a boil, heat oil with garlic, oregano, and a large pinch of red-pepper flakes in a large skillet over medium-high heat. Cook until fragrant and garlic is golden, about 2 minutes.
  • Stir in tomatoes and their juice, and the reserved clam juice. Bring to a simmer, and cook until sauce is slightly thickened, about 7 minutes. Reduce heat to low. Stir in clams and capers, and cook until heated through.
  • When water boils, add pasta to boiling water, and cook until almost al dente, about 10 minutes (do not drain water). Transfer pasta to skillet using a strainer. Gradually stir in 1 cup pasta water, about 1/2 cup at a time, and cook over low heat, tossing, until pasta has absorbed some sauce and is well coated, 2 to 3 minutes.
  • Divide among 4 bowls. Drizzle with oil, and sprinkle with red-pepper flakes and coarse sea salt.

Onion Sauce:
2 T canola oil
2 Lg onions, halved & thinly sliced
2 t ancho chile powder
1/2 t ground cinnamon
1/2 C ketchup
1/4 t hot sauce
1/2 t kosher salt
1/4 t ground black pepper
Grilled Pepper Relish:
6 cloves roasted garlic, coarsely chopped
3 grilled red peppers, peeled, seeded & diced
3 T extra-virgin olive oil
2 T red wine vinegar
3 T finely chopped fresh flat leaf parsley, plus leaves for garnish
Kosher salt & freshly ground pepper
Grilled Hot Dogs:
8 all beef kosher hot dogs
canola oil
freshly ground black pepper
Soft poppy seed or regular hot dog buns
Dijon mustard

Steps:

  • For the onion sauce: Heat the oil in a medium saucepan over medium heat. Add the onions and cook until soft, about 5 minutes. Stir in the chile powder and cinnamon and cook for 1 minute. Add 1 Cup water, the ketchup, hot sauce, salt & pepper and bring to a simmer. Cook until thickened and the onions are very soft, adding more water if needed, about 25 minutes. Transfer to a bowl and let cool to room temperature before serving. For the grilled pepper relish: Combine the garlic, peppers, oil, vinegar & parsley in a bowl and season with salt & pepper. Cover & let sit at room temperature for at least 30 minutes before serving. For the hot dogs: Heat a grill to high for direct grilling. Brush the hot dogs with oil and sprinkle with pepper. Grill until slightly charred and golden brown on all sides, about 6 minutes. Put the hot dogs in the buns and top with mustard, onion sauce and grilled pepper relish.

4 tablespoons extra-virgin olive oil
2 large sweet red peppers, cored, seeded and chopped
1 jalapeno or other hot green chili, seeded and minced
1/2 cup finely chopped onion
2 cloves garlic, minced
2 cups water
1 tablespoon fresh lime juice
6 red snapper fillets, each about 6 ounces, skin on
Salt and freshly ground black pepper
1/4 teaspoon paprika
Sprigs of fresh coriander

Steps:

  • Heat one tablespoon of the oil in a heavy saucepan. Add the red peppers, green chili and onion and saute over low heat until soft, but not brown. Stir in the garlic, cook a few seconds longer, then add the water. Allow to simmer about 20 minutes, until the peppers are very tender.
  • Meanwhile, preheat a grill or broiler and oil the rack. Mix the lime juice with two tablespoons of the olive oil and brush over the fish. Allow to marinate until ready to cook the fish.
  • When the peppers are tender, puree the contents of the saucepan in a food processor or blender. Season with the paprika and to taste with salt and pepper. Stir the last tablespoon of the olive oil. Return to saucepan and simmer, then cover to keep warm.
  • To grill the fish, place the fish on the grill skin side up. Cook about six minutes, until the fish is lightly seared. Using a large spatula, turn the fish, cook very briefly on the other side, then transfer to warm plates. To broil the fish, broil it skin side down until the fish is cooked through and lightly seared, six to eight minutes. Do not turn it. Transfer the fish to a warm plate.
  • To serve, spoon some of the pepper sauce over and around the fish and garnish with coriander.

24 hot peppers
12 tomatoes
4 cups vinegar
1 cup sugar
1 tablespoon pickling salt
2 tablespoons pickling spices

Steps:

  • Wash and drain the vegetables.
  • Seed and chop the peppers; core and chop the tomatoes.
  • Put the vegetables in a kettle with 2 cups vinegar, bring to a boil, and boil until vegetables are soft.
  • Press the mixture through a fine sieve.
  • Add the sugar and salt and the spices, tied in a bag, and boil until the sauce is thick.
  • Add the remaining vinegar continue to boil for about 15 minutes or until the sauce is the desired consistency.
  • Discard the spice bag and seal, boiling-hot into hot jars.
