Posted in response to a request, taken from The New Canadian Basics Cookbook. The cookbook states this is a wonderful side dish to serve with pork, poultry and sausages, and I'd have to agree.

2 tablespoons vegetable oil
1 1/2 cups chopped red onions
8 cups thinly sliced red cabbage
2 cloves garlic, minced
2 apples, peeled & cored & chopped
1 cup chicken stock
1/4 cup red wine vinegar
2 tablespoons brown sugar
1 bay leaf
salt and pepper

Steps:

  • In a large heavy saucepan, over medium heat, heat the oil then add onion and cook for 5 minutes or until softened.
  • Stir in cabbage, garlic and apples.
  • Cook, stirring frequently, for 5 minutes or until cabbage begins to wilt.
  • Stir in stock, vinegar, sugar and bay leaf.
  • Reduce heat, cover, and simmer, stirring occasionally, for 45 minutes or until cabbage is soft and liquid has evaporated.
  • Remove bay leaf and season with salt and pepper to taste.

2 tablespoons olive oil
1 large onion
2 apples, cored and diced
1 cup vegetable stock
1/2 cup red wine (or additional stock)
1/3 cup red wine vinegar
1/3 cup brown sugar, packed
1 bay leaf
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon pepper
1 pinch ground cloves
1 medium red cabbage, finely shredded (about 10 cups)
1 1/2 teaspoons cornstarch
1 tablespoon cold water

Steps:

  • In a large saucepan, heat olive oil over medium heat.
  • Add onions and apples and cook for 5 minutes until softened, stirring often.
  • Add remaining ingredients, except cabbage and corn starch and water, and bring to a boil.
  • Add cabbage; cover and simmer over medium heat for 45 minutes or until cabbage is tender, stirring occasionally.
  • Blend cornstarch and water together and add to cabbage mixture. Cook until slightly thickened and then remove bay leaf.
  • To Freeze: Cool completely. Freeze up to 3 months in a freezer bag or freezer container, being sure to label contents before freezing.
  • To serve: thaw overnight int he fridge and then heat on stovetop or in microwave.

1 large clove garlic
12 ounces whole red cabbage or shredded red cabbage
2 teaspoons Oriental sesame oil
2 Granny Smith or other tart apples (about 1 pound)
1/4 cup apple-cider vinegar
1 tablespoon reduced-sodium soy sauce
1 tablespoon honey
1/2 teaspoon ground ginger
Freshly ground black pepper to taste

Steps:

  • Mince garlic. If using a food processor to grate the cabbage, use it to mince the garlic; otherwise mince by hand.
  • Grate whole cabbage.
  • Heat oil in nonstick pan, and add garlic and cabbage. Saute over medium heat.
  • Meanwhile wash, core and cut apples into bite-size chunks. Add to cabbage mixture, and stir well.
  • Add remaining ingredients. Cover, and cook over low heat, until apples are tender, about 7 minutes.

4 tablespoons rendered bacon fat
2 tablespoons sugar
1 small yellow onion, chopped
4 cups shredded red cabbage (about 1/2 of a medium-sized head)
2 tart apples, cored and sliced thin, but not peeled (i.e. Jonathans)
1/2 teaspoon caraway seed
2 tablespoons cider vinegar
1 -1 1/2 lb bratwurst (or German style smoked sausage links)
1 lb new potato
salt and pepper
1 cup beer (not to drink, it's for the recipe)

Steps:

  • Melt the bacon fat in a large skillet over medium heat. Add the sugar and cook, stirring often, until sugar browns (about 4 minutes).
  • Reduce the heat to medium low, add the onion, and saute it until golden.
  • Add cabbage, apples, vinegar and caraway seeds. Stir to blend.
  • Place sausage links and potatoes on top of cabbage mixture.
  • Season with salt and pepper, then pour beer all over.
  • Bring to a boil over medium high heat, then reduce to a simmer. Cover and simmer for 45 minutes.
  • Taste to adjust seasonings.

1 tablespoon brown sugar
1 small onion, chopped
1 lb red cabbage, coarsely shredded
1 tart apple, cored and thinly sliced
1 tablespoon apple cider vinegar
1 pinch cayenne
1/4 cup dry red wine
1/4 cup water
salt and pepper

Steps:

  • Melt butter in a large skillet; add sugar and cook and stir 2 minutes.
  • Add onion; cook slowly until light colored.
  • Stir in cabbage, apples, vinegar, cayenne and wine.
  • Cook, covered, 10 minutes.
  • Add water and cook, with lid askew, stirring occasionally, for 30-40 minutes more.
  • Salt and pepper to taste.

Mustard-Thyme butter:
4 TBSPs unsalted butter, room temperature
2 TBSPs Dijon mustard
2 tsps fresh thyme leaves
1/8 tsp freshly ground black pepper
2 tsps lemon juice
Pork and Cabbage
4 rib cut pork chops, 1 inch thick
1 TBSP olive oil
1/2 tsp salt
Freshly ground black pepper to taste
1/4 cup finely diced onion
1/4 cup finely diced carrot
1/4 cup finely diced celery
1 small head red cabbage, quartered, cored and sliced 1/4 inch thick
2 medium cooking apples, peeled, cored and diced
1 clove garlic unpeeled
6 sprigs fresh thyme or 1/4 tsp dried
1 small bay leaf
1/2 cup dry white wine
1/2 cup chicken broth
2 TSBP balsamic vinegar

Steps:

  • To prepare the mustard-thyme butter: Whisk together the butter, mustard, thyme, pepper and lemon juice until blended. Refrigerate. To prepare the pork and cabbage: Trim excess fat from outside edge of the chops, leaving about 1/8 inch. Heat olive oil in a heavy skillet over medium heat and brown chops well on both sides. Remove and season with some of the salt and pepper. Saute onion, carrot and celery in the pork drippings for 5 minutes. Add cabbage, apples, garlic, thyme and bay leaf. Saute for another 5 minutes or until the cabbage has wilted slightly. Season with the remaining salt and pepper; add wine, broth and vinegar. Arrange chops in the pan, basting with the cabbage and juices. Reduce heat, cover and cook slowly for about 45 minutes, turning and basting once or twice, until chops are tender and cooked through. Arrange cabbage on hot serving plates, removing the garlic clove. Place a pork chop on each plate and top with the mustard-thyme butter. Note: The mustard butter can be omitted from this recipe if desired. The braised cabbage will provide plenty of moisture for the pork chops.

Nonstick vegetable cooking spray
1 bone-in center-cut pork loin roast, (about 5 pounds, 6 ribs), rib ends frenched and chine bone removed
Coarse salt and freshly ground black pepper
1 white onion
1 tablespoon fresh thyme leaves
Extra-virgin olive oil
3 baking apples, such as Gala or Jonagold, halved horizontally
3 teaspoon unsalted butter
Easy Braised Red Cabbage

Steps:

  • Preheat oven to 400 degrees. Line a roasting pan with parchment paper. Place a roasting rack inside pan and spray with cooking spray.
  • Generously season the pork with salt and pepper. Transfer to roasting rack, bone side down. Grate the onion on the large holes of a box grater. Press onion evenly over the pork, covering as much of the meat as possible. Sprinkle thyme over pork and generously drizzle with oil; roast for 1 hour.
  • Place apples, cut side up, around the pork, on the rack. Top each apple with 1/2 teaspoon butter, and season with salt. Return to oven; roast until a meat thermometer inserted in the center of the pork registers 140 degrees. about 45 minutes. Remove pork, and let stand 20 minutes before carving.
  • Slice the pork evenly between the rib bones, and serve with cabbage and roasted apples.

Steps:

  • Melt butter in nonstick medium skillet over medium-high heat. Add pecans and stir 1 minute. Add brown sugar, Worcestershire sauce, and cayenne; stir until nuts are coated, about 1 minute. Transfer nuts to foil sheet and cool.
  • Whisk both vinegars and mustard in small bowl. Gradually whisk in oil. Season dressing to taste with salt and pepper. Do ahead Spiced pecans and dressing can be made 1 day ahead. Store pecans airtight at room temperature. Cover and chill dressing; bring to room temperature and rewhisk before using.

1 (8 ounce) package tempeh
1 tablespoon low sodium soy sauce
2 large sweet-tart apples, peeled, cored and chopped (such as Gala or Idared)
1 large red onion, chopped
2 lbs red cabbage, cored, quartered, and thinly sliced (8 cups)
1/2 cup sweet apple cider
1/3 cup balsamic vinegar
3 1/2 tablespoons brown sugar
1 1/2 cups cooked chestnuts, chopped

Steps:

  • Heat 1 1/2 tsp oil in a skillet over medium heat. Add tempeh, and saute 4 minutes or until brown. Stir in soy sauce and 1/2 cup water. Simmer 5 minutes or until liquid has absorbed, turning occasionally. Cool and cut tempeh into small squares.
  • Heat remaining 1 Tbsp in oil in large skillet over medium heat. Add apples and onion and saute for 12 minutes. Stir in cabbage, sweet cider, vinegar and brown sugar. 1/4 cup chopped pork fat or 1/4 cup chopped bacon
1 large red onion, finely chopped
2 inches fresh ginger, peeled and finely chopped
1/2 cinnamon stick
1 large red cabbage, tough outer leaves removed, quartered, cored, and finely shredded
1 sprig fresh marjoram
1/2 teaspoon garam masala
1/2 cup red wine vinegar
1/2 cup ruby port or 1/2 cup madeira wine
1/2 cup brown sugar or 1/2 cup real maple syrup
1 bay leaf (optional)
1 whole clove (optional)
1 firm apple, chopped (optional)

Steps:

  • Cook the pork fat or bacon in a large skillet or dutch oven over low heat, stirring occasionally until it has rendered its fat, about 20 minutes for the pork fat or 10 minutes for the bacon.
  • Add the onion, ginger, and cinnamon stick, increase the heat to medium, and cook, stirring occasionally for about 5 minutes, until the onion has softened.
  • Add the cabbage, stirring and cooking over medium heat until some of the bits are slightly browned and caramelized, about 10 minutes (I do this in batches). Note: You can skip the browning step if you are in a hurry, but I find that it adds a particularly wonderful caramelized flavor to the finished dish. Now add the marjoram, garam masala, vinegar, and port or Madeira, and stir well. (Note: At this point add the optional bay leaf, whole clove, and chopped apple).
  • Reduce heat to medium-low, cover, and simmer for 1 to 1 1/4 hours, stirring occasionally to make sure the cabbage is not sticking to the bottom of the pan.
  • Remove the lid and cook, stirring frequently, for 15 minutes.
  • Stir in the brown sugar (or maple syrup) and cook for 15 minutes longer, or until most of the liquid has cooked away.
  • Remove the cinnamon stick and bay leaf before serving.
  • NOTE: If you can't find garam masala, use just a small dash each of ground black pepper, rock salt, cinnamon, & cardomom.

1/2 cup dried currants
1/4 cup Madeira
1/4 cup brown sugar
1/4 cup red-wine vinegar
1/2 cup walnut pieces
3 tablespoons plus 1 1/2 teaspoons unsalted butter
3 Granny Smith apples, peeled and cut into 3/4-inch cubes
1 tablespoon granulated sugar
3 cups red-cabbage leaves cut into 1-inch triangles
3 cups green-cabbage leaves cut into 1-inch triangles
Salt and freshly ground black pepper
1/4 teaspoon freshly grated nutmeg

Steps:

  • Combine the currants and Madeira and let stand. Meanwhile, dissolve the brown sugar in the vinegar and set aside. Brown the walnut pieces in 1 tablespoon butter and set aside. Caramelize the apple cubes over low heat with 1 1/2 teaspoons butter and granulated sugar, until soft and golden brown, about 10 minutes. Set aside.
  • Divide remaining butter in separate pans. Saute the cabbages over medium heat, seasoning with salt and pepper to taste, for 5 to 7 minutes, or until cabbage is wilted but has not lost its color. Combine hot cabbages and other ingredients, including the nutmeg, in a large bowl; toss well and serve immediately.

Steps:

  • Melt butter in heavy large pot over medium heat. Add shallots and sauté until tender, about 2 minutes. Add cabbage, onions, apples, vinegar and sugar to pot. Cook until cabbage is limp, stirring frequently, about 15 minutes. Add raspberries. Cook until most of liquid has evaporated, about 25 minutes. Season to taste with salt and pepper. (Can be prepared 2 days ahead. Cover and refrigerate. Rewarm over medium heat before serving.)

PARSNIP PIEROGI WITH PICKLED RED CABBAGE AND SAUTEED APPLES

1/4 cup red-wine vinegar
1 1/2 tablespoons sugar
1 teaspoon caraway seeds, crushed
1/4 small red cabbage, finely shredded
Salt and freshly ground black pepper
1 large egg
1/2 cup milk
1 1/2 tablespoons sour cream
2 1/4 cups all-purpose flour, plus more for dusting
2 1/2 pounds parsnips, peeled
2 shallots
1 teaspoon unsalted butter
Salt and freshly ground black pepper
Freshly grated nutmeg
2 teaspoons freshly grated or prepared horseradish
4 ounces farmer cheese or goat cheese
2 teaspoons unsalted butter
2 apples

Steps:

  • To make red-cabbage slaw, whisk together vinegar, sugar, and caraway seeds in a medium bowl. Toss in cabbage. Season with salt and pepper. Let marinate for at least 1 hour, or overnight.
  • To make pierogi dough, whisk together egg, milk, sour cream, and 1/2 cup water. Stir in flour a little at a time until dough comes together. Turn out onto a lightly floured board, and knead until smooth and elastic, up to 10 minutes. Incorporate more flour if dough is too sticky. Cover dough with plastic wrap, and allow to rest for 1 hour.
  • To make filling, place parsnips in a medium saucepan, and cover with cold, salted water. Bring to a boil, and simmer until tender, 20 to 25 minutes. Drain, and put through a food mill to puree.
  • In a small saute pan, cook shallots in butter until soft, stirring occasionally, 1 to 2 minutes. Stir shallots into puree, and add nutmeg, salt, and pepper to taste. Remove from heat, and let cool slightly, then mix in horseradish and cheese.
  • On a lightly floured board, roll out dough to 1/8 inch. Cut out circles using a 3 3/4-inch-round cutter. Set circles aside on a floured tray. Place a round tablespoon of filling on each circle. Lightly wet edges, fold over, and seal by pinching.
  • To make sauteed apples, heat a medium sautee pan over medium-high heat. Melt butter, add apple slices, and toss to coat. Add sugar and toss again to coat evenly. Cook until brown, about 5 minutes.
  • When ready to serve, bring a pot of salted water to a boil. Add pierogi, and cook for 5 minutes after they float to the surface; drain. Pierogi can be eaten right away or browned in a small amount of butter. Serve with red-cabbage slaw and sauteed apples.

1 pound chestnuts
1 head red cabbage
1/4 pound lean, unsliced bacon
1 medium onion
2 greening or Granny Smith apples
1/2 teaspoon freshly ground black pepper
3 bay leaves
1 clove garlic, crushed
1/2 cup full-bodied red wine (cabernet sauvignon is a good choice)
2 1/2 cups beef stock
2 tablespoons butter

Steps:

  • Preheat oven to 325 degrees.
  • Bring a saucepan of water to the boil. Score the chestnuts and drop them into the boiling water. Let simmer 2 minutes. Turn off heat and leave chestnuts in the water. Extract 2 or 3 at a time and peel them, carefully removing the inner skin that clings to the nutmeats. If the process becomes too difficult, bring the water to the boil again to help loosen the skins. When all the chestnuts are peeled, set aside.
  • Cut the cabbage in quarters, remove any wilted leaves, cut out the core and slice each quarter approximately 1/4 inch thick. Set aside.
  • Remove rind from bacon. Cut into lardons and fry gently until the bacon bits are brown and crisp. Drain the bacon bits and set aside.
  • Chop the onion coarsely and saute in the bacon fat until it starts to brown. Set aside.
  • Peel and core the apples and cut into chunks.
  • In a medium-sized casserole dish, arrange the cabbage, bacon, onion, apples and chestnuts. Bury the bay leaves and the crushed clove of garlic in the center. Sprinkle with freshly ground pepper. Add the wine.
  • Bring the broth to a boil in a separate saucepan and pour broth over the cabbage mixture. Cover the dish with aluminum foil and place in preheated oven. Bake for 1 hour. Remove foil and if there is still a lot of liquid in the dish, raise heat to 400 degrees. Continue baking for another 30 minutes until the top starts to brown. Remove the bay leaves. Serve immediately.

1 granny smith apple, diced

1 large sliced green apple
1 large sliced onion
6 italian sausage, sweet
1 c apple juice

  • 1. First I brown my italian sausage with my sliced onions in tablespoon of butter, just till onions softened and sausage has nice brown sear. Right in same pan add Juice, vinegar, salt and pepper and springs of thyme.Stir set off burner till ready for crockpot.
  • 2. In crockpot set at low, place sliced cabbage then sliced apples. Place sausage on top, pour all juices over. Cover and slow cook 6-8 hours. When done remove springs of thyme. Great to serve at parties with hoagie rolls. Or add Your potatoes for that italian St.Patties Day celebration!

BRATWURST, RED CABBAGE, AND APPLES

1 1/2 pounds bratwurst
1/4 cup apple cider vinegar
1 tablespoon sugar
1 cup beer
1 head red cabbage, quartered, cored, and sliced
2 yellow onions, thinly sliced
1 teaspoon caraway seeds
2 pippin or small Granny Smith apples, cored, quartered and thinly sliced
Salt and freshly ground black pepper

Steps:

  • Place a sauté pan over medium-high heat. Add the bratwurst and cook, turning, for about 15 minutes, until well browned.
  • In a small bowl, combine the vinegar, sugar, and beer and mix until the sugar dissolves.
  • In a large bowl, combine the cabbage, onions, caraway seeds, and apples and toss well with your hands. Season with salt and pepper. Transfer to the slow cooker and pour in the vinegar mixture. Place the bratwurst on top. Cover and cook on low for 4 to 6 hours, until the cabbage is tender to your taste.
  • Divide the bratwurst and vegetables evenly among plates and serve hot.
