8 large red bell peppers
2 tablespoons unsalted butter
1 cup chopped onion
2 cloves minced garlic
1/4 cup tomato paste
6 cups chicken stock
2 cups heavy cream
2 tablespoons chopped fresh cilantro leaves
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 to 2 tablespoons cornstarch
1 cup sweet corn kernels, lightly roasted
Cilantro Lime Sour Cream, recipe follows
1 cup sour cream
1/2 lime, juiced
1 teaspoon finely minced fresh cilantro leaves

Steps:

  • Slice the peppers in half lengthwise; remove stem, seeds and membrane. Place under the broiler skin side up until the skin turns black and blisters. Remove and immediately place in a small paper bag or plastic container with a tight lid. Place in the freezer for 10 minutes; this will loosen the roasted skin. Remove peppers and rub off the black skin with your fingers. Chop skinned peppers and set aside.
  • Saute the butter, onions, and garlic until soft in a heavy bottomed soup pot on medium-low heat. Add the reserved red peppers, tomato paste, and chicken stock. Bring to a low boil, reduce the heat, and then simmer for 10 minutes. Stir in the heavy cream, cilantro, salt, and pepper. Stir in the cornstarch mixed with a little cold water to thicken. Simmer 5 minutes. *Let the soup cool slightly, and then blend in batches in a blender, or use an immersion blender to puree. Sprinkle the roasted corn over the soup before serving and top with a dollop of Cilantro Lime Sour Cream.
  • In a mixing bowl, whisk all ingredients vigorously until light and creamy.

3 red bell peppers
1 onion, chopped
1 tablespoon minced garlic
1 tablespoon olive oil
2 (15 ounce) cans cannellini beans, drained and rinsed
2 (14.5 ounce) cans chicken broth
salt and pepper to taste

Steps:

  • Preheat oven to broil.
  • Place the bell peppers on a baking sheet and broil on the top rack of the oven, using tongs to turn them as each side blackens. Place the blackened peppers in a paper bag, close tightly and allow them to cool for 20 to 30 minutes. Then peel the skin off the peppers and discard the stem and all the seeds. Chop the peppers and set aside.
  • In a large pot over medium heat, saute the onion and garlic in the oil for 5 minutes, or until onion is translucent. Now add the chopped, roasted red bell peppers and saute for 2 to 3 more minutes.
  • Next, add the chicken broth and the beans, stirring well. Using a blender, puree the soup in small batches and return to the pot over low heat for 5 minutes.

2 1/2 pounds red bell peppers
1 tablespoon olive oil
1 cup chopped shallots
2 garlic cloves, minced
1 tablespoon chopped fresh thyme
3 cups (or more) canned vegetable broth
1/2 cup half and half
2 teaspoons red wine vinegar
1/8 teaspoon cayenne pepper
Sliced fresh basil

Steps:

  • Char peppers over gas flame or in broiler until blackened on all sides. Enclose in paper bag and let stand 10 minutes. Peel, seed and slice peppers. Heat oil in heavy large saucepan over medium heat. Add shallots, garlic and thyme and sauté 3 minutes. Add 3 cups broth and all but 4 slices of roasted pepper. Simmer uncovered until peppers are very soft, about 20 minutes.
  • Working in batches, purée soup in blender until smooth. Return to same pot. Add half and half, vinegar and cayenne pepper. Rewarm soup, thinning with additional broth, if desired. Season to taste with salt and pepper. Ladle soup into bowls. Garnish with reserved pepper strips and basil.

2 cups (about) water
4 tablespoons part-skim ricotta cheese, room temperature

Steps:

  • Preheat oven to 450°F. Arrange tomatoes (cut side up), bell peppers, onion and garlic cloves on large baking sheet. Drizzle oil over; sprinkle generously with salt and pepper. Roast vegetables until brown and tender, turning peppers and onion occasionally, about 40 minutes. Remove from oven. Cool.
  • Transfer vegetables and any accumulated juices to processor. Add thyme leaves. Puree soup, gradually adding enough water to thin soup to desired consistency. Chill until cold, about 3 hours. (Can be prepared 1 day ahead. Cover and keep refrigerated. If soup becomes too thick, thin with water to desired consistency.)

I love this recipe because it uses fresh, sweet red bell peppers, as opposed to roasted red peppers. It's full of other fresh vegetables and thyme, too, and it freezes exceptionally well. Rice is used as the thickening agent, rather than cream. If you don't like a lot of spice, reduce the amount of cayenne and red pepper flakes.

2 1 1/2-pound cooked whole crabs, meat removed, shells coarsely broken, meat and shells reserved
10 cups water
1 750-ml bottle of dry white wine
3 cups bottled clam juice
4 celery stalks, chopped
3 carrots, chopped
2 onions, chopped
1 cup chopped fresh parsley
2 fresh thyme sprigs
2 bay leaves
For soup
2 red bell peppers
5 tablespoons butter, room temperature
3 tablespoons all purpose flour
1/2 cup chopped fresh Italian parsley
10 tablespoons crème fraîche or sour cream
Fresh Italian parsley sprigs

Steps:

  • Make broth:
  • Heat 1/4 cup olive oil in heavy large wide pot over medium-high heat. Add crab shells and sauté until fragrant, about 10 minutes. Add 10 cups water and next 8 ingredients; bring to boil. Reduce heat to medium-low. Simmer until broth is reduced to 12 cups, about 30 minutes. Strain broth through sieve lined with cheesecloth. Cool. Spoon fat from top of broth.
  • Make soup:
  • Char red bell peppers over gas flame or in broiler until blackened on all sides. Enclose in paper bag and let stand 10 minutes. Peel and seed peppers. Transfer peppers to blender. Add 2 tablespoons butter. Puree until mixture is smooth.
  • Melt 3 tablespoons butter in heavy large pot over medium heat. Add flour and cook until mixture is golden brown, stirring occasionally, about 2 minutes. Gradually whisk in broth, then red pepper purée. Bring soup to boil. Simmer until flavors blend and soup thickens slightly, about 10 minutes. Season to taste with salt and pepper. (Soup can be made 1 day ahead. Cover and refrigerate.)
  • Add reserved crabmeat and 1/2 cup chopped parsley to soup. Simmer just until crabmeat is heated through, about 2 minutes. Ladle soup into bowls. Spoon dollop of crème fraîche atop each. Garnish with parsley sprigs and serve.

RED BELL PEPPER AND SWEET POTATO SOUP

I came up with this soup last night as a way to use the massive quantity of bell peppers I bought on sale this week. The sweet potato I used was of the pale variety, but I'm sure it would taste delicious with an orange sweet potato.

1 1/2 onions, sliced
8 garlic cloves, minced
3 red bell peppers, sliced
1 sweet potato, peeled and in small cubes
4 cups vegetable broth
3 bay leaves

  • Heat the oil.
  • Saute the onions and garlic for about 10-15 minutes on medium heat, or until the onions are soft and very lightly browned.
  • Add the bell peppers and saute for another 10-15 minutes, until the bell peppers are soft and everything is lightly browned.
  • Add the sweet potato, vegetable broth, bay leaves, salt, and butter and simmer for 10-15 minutes, until the sweet potato is soft.
  • Remove the bay leaves and blend the soup until mostly smooth.

I had bought red bell peppers and cauliflower on sale, and wanted to use them before they died. I searched around on the internet, and made this recipe up using ingredients I had in my kitchen. It was delicious, hearty, and healthy.

4 small red bell peppers, halved and seeded
5 -7 garlic cloves (do not remove outer skin)
1 tablespoon olive oil
1 onion, chopped
1/4 teaspoon cayenne pepper
1 -2 head cauliflower, chopped up
1 quart vegetable broth (I used Imagine boxed vegetable broth, you can use any broth you want)

Steps:

  • Turn on broiler.
  • flatten out the bell pepper halves and arrange them on a baking sheet.
  • Sprinkle a few garlic cloves around in between on the baking sheet, leaving the cloves in the outer rapper
  • very lightly drizzle a tiny bit of olive oil over the peppers and garlic, and rub around a bit with your hands.
  • broil the peppers and garlic on High for about 10-15 minutes, until the pepper skin is black and bubbly.
  • In the meantime, heat about 1 Tbl of olive oil and add the onion. after about a minute, add the cayenne.
  • cook until onions soft, about 3-5 minutes.
  • add chopped cauliflower to the pot of onions, and mix around.
  • add entire box of imagine broth (or 1qt of whatever you are using).
  • bring to boil and then simmer for 20 minutes.
  • take the peppers and garlic out of the oven.
  • peel the peppers after they cool, and slip the garlic out of the skin.
  • chop up the peppers in small to medium pieces. unless you blend it at the end, these wont get much smaller in the soup.
  • add to the pot and simmer for about 10-20 minues more.
  • Mix everything well, mashing up the cauliflower.
  • You can puree this, but I didn't have a cuisinart or pureer, so i just ate it as is. Add crushed black pepper and salt if needed.
  • you can also add a squirt of lemon and olive oil before serving.

1/2 large onion, chopped finely
4 red bell peppers, cored and seeded

Steps:

  • Broil peppers (with oven door partially open) 5 minutes each side or till blistering. Remove from roasting pan, place in dish, cover with clingfilm and leave ten minutes.
  • Meanwhile, melt butter or margarine.
  • Add onions and sauté till soft, but not brown.
  • Remove skin from peppers, chop coarsely and add to onions. Pour in stock and spices plus a squeeze of lemon.
  • Simmer 20-30 minutes uncovered.
  • Remove from heat, allow to cool and then process in batches so that the soup is a little chunky but not puréed.
  • Before serving, add sour cream or half-and-half and heat through.
  • Will keep well in fridge 2-3 days. Can also be frozen.

a 1/2-pound russet (baking) potato
1 cup chopped onion
2 tablespoons vegetable oil
2 cups milk
2 large red bell peppers, roasted and diced
1 teaspoon Worcestershire sauce
1/4 teaspoon Tabasco, or to taste
14 ounces extra-sharp Cheddar, grated coarse
finely chopped fresh coriander for garnish
croutons for garnish if desired

Steps:

  • In a kettle cook the potato, peeled and diced, and the onion in the oil over moderately low heat until the onion is softened, add 1 cup water, and simmer the mixture, covered, for 5 to 10 minutes, or until the potato is tender. Her blog centers on healthful, low-sugar recipes suitable for the South Beach Diet, but her recipes are great for anyone. My husband, not a huge fan of winter squashes, really enjoys this filling soup. We add a squeeze of lime juice at the table. I use packaged butternut squash chunks from Sam's and roast them about half an hour until soft and slightly caramelized. I also use strong homemade chicken or turkey stock instead of vegetable broth and 2 cups of cooked black beans instead of the canned ones.

1 large butternut squash (about 1.5 lbs.)
salt & freshly ground black pepper
2 teaspoons olive oil
2 cups finely chopped onions

Steps:

  • Preheat oven or toasted oven to 400F/200°C Cut butternut squash in half and use a sharp spoon to scoop out seeds. Place squash on a baking sheet and season with salt and fresh ground black pepper. Roast squash until it is soft enough to pierce easily with a fork, and starting to slightly brown, about 50-60 minutes. Let squash cool enough to handle.
  • While squash is roasting, chop onion and celery and mince the garlic. Heat olive oil in large non-stick soup pot and saute onions and celery until they're soft, about 7 minutes. Add minced garlic and cook 2-3 minutes more. Add 2 cups of vegetable broth and simmer the mixture about 10 minutes.
  • As soon as the squash has cooled enough to handle, scrape the flesh away with the skin and mix it with the other 4 cups of broth and the ground cumin. Add this mixture to the soup pot and simmer about 20 minutes; then use an immersion blender to puree the soup.
  • While the soup simmers, rinse the black beans well with cold water and let them drain in a colander. Chop the cilantro and red bell pepper. After you're pureed the soup add the beans, red bell pepper, and cilantro and simmer about 15-20 minutes more, adding a little more stock if you'd like a thinner soup. Stir in the Green Tabasco Sauce to taste and serve hot, garnished with low-fat sour cream or plain Greek yogurt, lime wedges, and tortilla chips if desired.

2 tablespoons lemon juice

2 T butter
2 T olive oil
1 onion, chopped
1 leek, white part only, chopped
1 garlic clove, minced
Salt
3 yellow bell peppers, seeded and chopped
1 Bartlett pear, peeled cored and chopped
2 red bell peppers, seeded and chopped
1 tomato, peeled, seeded and chopped
1 qt chicken stock
1 roasted yellow bell pepper,
peeled, seeded and chopped
1 roasted red bell pepper,
peeled, seeded and chopped

Steps:

  • Heat 1 T. Butter and 1 T. oil in medium saucepan over moderate heat. Heat remaining butter and oil in separate medium saucepan. Divide onion and leek between 2 pans and cook until tender, 3-5 minutes. Divide garlic between pans, season w/ salt and cook 1 more minute. Add yellow peppers and pear to one pan, red peppers and tomato to other. Cook until peppers are tender 5-7 minutes. Add 2 cups stock and matching roasted peppers to each. Simmer, covered loosely, for 25 minutes. Puree each mixture separately in food processor and return to clean pan. Adjust seasonings and reheat purees gently. Pour each into pitcher or 4 qt. Pyrex measuring cup. While hot, pour soups into individual bowls simultaneously, pouring each color from the opposite side. Serve immediately.

1/2 c olive oil
1 c chopped onion
1 tbsp dried fennel seed
1/4 tsp dried thyme
1/2 bay leaf, crumbled
1/2 tsp minced garlic
1 tbsp chopped fresh basil
2 tbsp minced jalapeno pepper
1/4 c all-purpose flour
5 c chicken stock
1/2 c peeled, seeded and chopped fresh tomato
1 tsp. tomato paste
6 large red bell peppers halved, seeded and cut into 2-inch chunks
1/2 to 1 c heavy cream
pinch of sugar
salt and freshly ground pepper

Steps:

  • In a 4-quart heavy-bottomed saucepan, heat the oil over medium heat. Add the onion, fennel seed, thyme, bay leaf, garlic, basil and jalapeno pepper. Reduce the heat to low and cook until the onion is translucent, about 10-15 min. Add the flour and cook stirring constantly for 10 min. In a separate pot bring the stock to a boil. Carefully pour the stock over the vegetables, stirring well to incorporate. Add the tomato and tomato paste. Meanwhile, place a large skillet lightly coated with olive oil over high heat. Saute the bell pepper chunks until the sins are blistered and lightly charred. Add the peppers to the soup and simmer, stirring occasionally to make sure nothing sticks to the bottom of the pot, for about 20 min. Remove the soup from the heat and puree in blender/food processor. Strain. Return the soup to the saucepan, bring to a simmer, and add 1/2 c cream and sugar, if spicy add more cream.

4 medium red bell peppers
2 pounds tomatoes
1 sweet onion (1/2 pound), chopped
2 garlic cloves, chopped
4 to 6 fresh habanero chiles, finely chopped (2 to 3 tablespoons), stems and seeds discarded
1/4 cup plus 2 tablespoons extra-virgin olive oil, divided
1 3/4 cups reduced-sodium chicken broth
Accompaniment:
Crackers, flatbread, or bread

Steps:

  • Roast bell peppers on racks of gas burners over high heat (or on a broiler pan about 2 inches from broiler), turning with tongs, until skins are blackened, 10 to 12 minutes. Transfer to a bowl and cover with plastic wrap. Let stand 20 minutes. Peel, then halve lengthwise, discarding stems and seeds.
  • Cut a shallow X in bottom of each tomato, then blanch tomatoes in simmering water 20 seconds and transfer to an ice bath. Peel and coarsely chop, reserving juices.
  • Cook onion, garlic, chiles, 1 teaspoon salt, and 1/4 teaspoon pepper in 2 tablespoons oil in a 3- to 4-quart heavy saucepan over medium heat, stirring occasionally, until softened and pale golden, about 8 minutes. Add tomatoes with juices, bell peppers, broth, and 1/4 teaspoon salt and simmer, covered, until peppers are tender, about 5 minutes.
  • Purée soup in 2 or 3 batches in a blender (use caution when blending hot liquids), drizzling remaining 1/4 cup oil into first batch with motor running. Quick-chill soup in a metal bowl set in an ice bath, stirring often, 10 to 15 minutes. Season with salt.

1 tablespoon extra virgin olive oil
6 red bell peppers, seeded and chopped
2 carrots, chopped
2 yellow onions, chopped
2 ribs celery, chopped
4 cloves garlic, chopped
2 quarts chicken broth
1/2 cup long grain rice
2 tablespoons fresh thyme, chopped
1/4 teaspoon cayenne pepper
1/4 teaspoon crushed red pepper flakes
1 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Heat the olive oil in a large pot over medium-high heat. Stir in the bell peppers, carrots, onions, celery, and garlic. Cook and stir the vegetables until soft, about 10 minutes. Stir in the chicken broth, rice, thyme, cayenne pepper, red pepper flakes, salt and pepper, and bring the mixture to a boil.
  • Reduce heat, cover, and simmer until the rice and vegetables are tender, about 25 minutes. Remove from heat. and cool 30 minutes.
  • Blend the cooled soup until smooth using an hand-held immersion blender directly in the pot. Or use a blender, and blend the soup in batches until smooth.

CHILLED EGGPLANT SOUP WITH RED BELL PEPPER AND OLIVES



Chilled Eggplant Soup with Red Bell Pepper and Olives image

Number Of Ingredients 10

1 large eggplant (about 1 1/4 pounds), cut lengthwise in half
1 large red bell pepper
2 teaspoons ground cumin
2 cups plain low-fat yogurt
1 cup low-fat (1%) milk
1 tablespoon extra-virgin olive oil
2 tablespoons chopped fresh mint
3 garlic cloves, peeled
1 1/2 cups (or more) canned vegetable broth
6 Kalamata olives or other brine-cured black olives, pitted, chopped

Steps:

  • Prepare barbecue (medium heat). Grill eggplant until skin is charred and flesh is soft, about 6 minutes per side. Grill bell pepper until brown in spots, turning frequently, about 10 minutes. Transfer eggplant and pepper to bowl. Cover with foil and let stand 30 minutes. Peel, seed and dice red bell pepper. Set aside.
  • Scoop eggplant from skin and transfer flesh to blender; discard skin. Stir cumin in heavy small skillet over low heat until lightly toasted, about 2 minutes. Add cumin to blender; then add yogurt, milk, olive oil, 1 tablespoon mint and garlic. Blend until very smooth. Season to taste with salt and pepper. Transfer soup to large bowl. Mix in 1 1/2 cups broth. Cover and refrigerate until chilled, about 1 hour. (Bell pepper and soup can be prepared 1 day ahead. Cover separately and refrigerate. Before serving, thin soup with more vegetable broth, if desired.)
  • Mix bell pepper, remaining 1 tablespoon mint and olives in small bowl. Ladle eggplant soup into bowls. Sprinkle with bell pepper mixture; serve.

SMOKED PAPRIKA AND RED BELL PEPPER SOUP



Smoked Paprika and Red Bell Pepper Soup image

I found this very yummy soup whilst looking for recipes to use smoked paprika. I haven't been able to buy it here in town, so I'm pretty excited. The original recipe has more chillies if you wish.Prep time includes blackening, sweating and peeling those peppers! This would be a good vegetarian recipe made with veggie stock, or even vegan if you omit the cream too.

8 fleshy red bell peppers
2 tablespoons olive oil
2 onions, peeled and chopped
2 cloves garlic
2 red chilies, chopped
1 teaspoon smoked paprika
4 cups chicken stock or 4 cups vegetable stock (for a vegetarian version)
3 small potatoes, peeled and diced
3 -5 sprigs parsley
3 -5 sprigs fresh thyme
1 tablespoon chopped fresh thyme, extra
1 tablespoon balsamic vinegar
1/4 cup light cream (optional)

Steps:

  • Peppers:, halved brushed with olive oil, baked in a very hot oven until the skin blisters and blackens.
  • Place in a plastic bag 10 minutes, then remove blackened skin, and chop coarsely.
  • Heat the 2 tablespoons olive oil in a large saucepan over medium heat.
  • Cook the onions, garlic and chillies until soft, but not brown.
  • Add the paprika and cook for 1 more minute.
  • Add the peppers, stock, potatoes, parsley, thyme sprigs and simmer gently for about 20 minutes or until the potatoes are soft.
  • Remove the herb sprigs.
  • Puree in a food processor until smooth adding the thyme, vinegar and cream (if you're using it) just before you finish.
  • Serve hot with garlic bread, or cold garnished with guacomale.
