200g dark chocolate, broken into chunks
100g milk chocolate, broken into chunks
250g pack salted butter
400g soft light brown sugar
4 large eggs
140g plain flour
50g cocoa powder
200g raspberries

Steps:

  • Heat oven to 180C/160C fan/gas 4. Line a 20 x 30cm baking tray tin with baking parchment. Put the chocolate, butter and sugar in a pan and gently melt, stirring occasionally with a wooden spoon. Remove from the heat.
  • Stir the eggs, one by one, into the melted chocolate mixture. Sieve over the flour and cocoa, and stir in. Stir in half the raspberries, scrape into the tray, then scatter over the remaining raspberries. Bake on the middle shelf for 30 mins or, if you prefer a firmer texture, for 5 mins more. Cool before slicing into squares. Store in an airtight container for up to 3 days.

These intensely rich brownie bars are not for the faint of appetite. Each brownie bears a fruity layer of raspberry jam and fresh raspberries that's covered with a truffle-like blanket of chocolate ganache over top. In other words, they're decadence incarnate. If raspberries aren't your favorite, you can always substitute strawberry jam and fresh strawberries--but you'll want to slice them in half rather than leaving them whole. If desired, garnish with a drizzle of melted white chocolate.

½ cup unsalted butter
½ cup semisweet chocolate chips
¾ cup all-purpose flour
⅓ cup unsweetened cocoa powder
½ teaspoon kosher salt
½ teaspoon baking powder
1 cup white sugar
2 large eggs
1 teaspoon vanilla extract
½ cup raspberry jam
1 ½ cups fresh raspberries
2 cups semisweet chocolate chips
1 cup heavy cream
2 tablespoons unsalted butter
1 pinch kosher salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking pan and line the bottom and sides with parchment paper, leaving a 1-inch overhang. Lightly grease parchment.
  • Make the brownies: Melt butter in a small saucepan over medium-low heat; once melted, stir in the chocolate chips. Stir until the chocolate is completely melted and mixture is smooth; set aside and allow the mixture to cool to room temperature.
  • Whisk flour, cocoa powder, salt, and baking powder together in a medium mixing bowl; set aside.
  • Combine sugar and eggs in a large mixing bowl; beat with an electric mixer at medium speed until pale and fluffy. Mix in vanilla. Mix in the cooled, melted chocolate, adding it to the bowl in a slow, steady stream. Mix in the dry ingredients in increments, at low speed, until just combined. Finish incorporating the batter by hand with a rubber spatula if necessary. Scrape the batter into prepared pan.
  • Bake in the preheated oven until brownies begin to pull away from the sides of pan and a toothpick inserted into the center of the brownies tests clean, 30 to 35 minutes. Place the pan on a wire rack and allow brownies to cool completely, 30 to 40 minutes.
  • To prepare the topping, spread the raspberry jam evenly over the brownies in the pan, spreading right to the edge. Arrange the whole raspberries in a single layer over the jam.
  • Place the chocolate chips in a medium, heat-proof mixing bowl. Warm heavy cream and butter in a small saucepan over medium heat, stirring occasionally. When the butter melts and the cream begins steaming and bubbling at the edges, pour the hot cream mixture over the chocolate. Let stand for 3 to 5 minutes to allow chocolate to melt; add salt and whisk until completely smooth. Pour the chocolate ganache over the raspberries. Refrigerate until chocolate is set, about 30 minutes.
  • Carefully pull the brownies from the pan using parchment paper overhang; place on a cutting board and carefully peel the parchment paper from the sides. Slice into 9 squares and serve.

The best brownies are soft in the center and have a crust on the top, oh and they also have chocolate chunks and fresh raspberries in them too! This recipe couldn't be simpler-just measure everything into 1 bowl, mix, add raspberries and bake! No doubt these will be one of the best desserts you have EVER made! I use fresh raspberries out of my garden. I am sure you could use frozen, but perhaps you would need to drain off some of the liquid as to not screw with the proportions of the recipe. TRY not to eat the whole pan at once!

I've been looking for a white chocolate and raspberry cookie recipe for ages... This hits the sweet spot. These are soft and fudgy white brownies, dotted with red raspberries. They can be made up to 3 days ahead and stored in an airtight container at room temperature.

6 ounces good quality white chocolate, coarsely chopped
1 cup all-purpose flour
1/4 teaspoon salt
1/2 cup sugar
1/4 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2/3 cup white chocolate chips
1 cup fresh raspberries or 1 cup frozen unsweetened raspberries, not defrosted

Steps:

  • Preheat oven to 325 degrees F. Butter 8-inch non-stick square baking pan. Stir 6 ounces white chocolate in large metal bowl set over saucepan of simmering water until melted and smooth, or use a microwave. Set aside to cool slightly.
  • Stir flour and salt in small bowl to blend. Set aside. Using electric mixer beat sugar and butter in large bowl to blend. Mix in eggs, vanilla and almond extract. Mix in melted white chocolate. Stir in flour mixture just until blended - do not overmix. Stir in white chocolate chips. Gently stir in raspberries just until distributed evenly. Transfer batter to prepared pan, spreading evenly.
  • Bake until top is golden and tester inserted into center comes out with moist crumbs attached, about 40 minutes if using fresh raspberries or 45 minutes if using frozen raspberries. Cool in pan.

4 (1 ounce) semi-sweet chocolate baking squares

Steps:

  • Heat oven to 350°F Place butter and unsweetened chocolate in medium microwave-safe bowl. Microwave on HIGH (100% power) for 1 minute; stir. Microwave 30 seconds; stir until smooth; set aside.

  • For easy pan removal and cutting, line baking pan with aluminum foil, leaving 1-inch overhang on ends; lightly grease foil. Once brownies are cooled and frosted, remove brownies by lifting foil at edges. Cut into bars.

  • Preheat the oven to 350°F. and butter and flour a 13-by-9 inch baking pan.
  • Make brownie bar:
  • In a metal bowl set over a pan of barely simmering water melt chocolates with butter, stirring, and cool. Whisk in sugar and eggs, 1 at a time, and whisk in vanilla and salt. Whisk in flour until just combined and spread batter evenly in prepared pan.

1 1/2 cups raspberries, fresh or frozen*
If using frozen raspberries there is no need to defrost them first. You can also use fresh or frozen blueberries.

Steps:

  • Preheat the oven to 180°C (355°F). Place the chocolate and butter in a small saucepan over low heat and stir until melted and smooth. Place in a bowl with the sugar and eggs. Sift over the flour, baking powder and cocoa and mix to combine. Pour into a 23 cm (9 inch) greased square cake tin lined with non-stick baking paper. Here's what you need: brownie mix, semi-sweet chocolate chips, heavy cream, fresh raspberry, powdered sugar

1 box brownie mix, prepared according to package instructions
1 cup semi-sweet chocolate chips
¾ cup heavy cream, hot
12 oz fresh raspberry
powdered sugar, for serving

Steps:

  • Preheat the oven to 350°F (180°C).
  • Place 5-inch (10 cm) greased cookie cutters on a greased baking pan. Fill the bottom of each cookie cutter with ½-inch (1 cm) of brownie batter.
  • Bake for 15 minutes, or until cooked through.
  • Remove from the oven and let the brownies cool.
  • In a medium bowl combine chocolate chips and hot heavy cream. Let stand for 1 minute, then stir until the ganache is a smooth, silky consistency.
  • Fill each cookie cutter with a layer of raspberries, then pour the chocolate ganache over the top of the raspberries until it fills in the cookie cutters.
  • Refrigerate for 2 hours, or until the ganache is set.
  • Remove from the fridge and gently push the bottom of the brownies until they pop out of the cookie cutters.
  • Sift powdered sugar over the top and serve.
  • Pairs well with Merlot.

6 tbsp unsalted butter, room temperature, divided, plus more
1/2 cup plus 1 tbsp all-purpose flour, divided, plus more
4 oz bittersweet chocolate, coarsely chopped
3 large eggs, divided
3/4 cup plus 2 tbsp sugar, divided
1/2 tsp baking powder
1/2 tsp salt
1 1/2 tsp vanilla extract, divided
4 oz cream cheese, room temperature
2 tbsp raspberry jam
1/2 cup fresh raspberries

Steps:

  • Preperation:
  • Preheat oven to 350° with rack in upper third. Grease an 8" x 8" pan with butter, line with parchment paper, and grease and flour parchment paper.
  • Put chocolate and 4 Tbsp butter in a heatproof bowl set over a saucepan of 2" simmering water. Melt, stirring occasionally, about 5 minutes. Remove from heat; let cool slightly.
  • In a small bowl, beat 2 eggs. Whisk eggs into chocolate mixture. Add 3/4 cup sugar and beat until combined. Add 1/2 cup flour, baking powder, and salt. Stir well. Stir in 1 tsp vanilla. Spread batter in prepared pan.
  • For the cream cheese layer: In a medium bowl, stir together cream cheese and remaining 2 tbsp butter until smooth and thoroughly combined. Add remaining 2 tbsp sugar, remaining egg, and jam and mix well. Stir in remaining 1 tbsp flour and remaining 1/2 tsp vanilla. Dollop mixture onto batter in pan. Use a butter knife to swirl cream cheese mixture into brownies. Press fresh raspberries into the top.
  • Bake until a wooden pick inserted into center comes out with only a few moist crumbs, 35-40 minutes (check after 30 minutes). Let cool completely before slicing and serving.
  • The brownies will keep, wrapped individually and stored in the refrigerator, up to 4 days.

RASPBERRY SWIRL BROWNIES

1 (19 7/8 ounce) package brownie mix
1/2 cup butter
1/3 cup water
2 eggs
1 teaspoon vanilla
1/2 cup seedless raspberry jam
1/4 cup chocolate chips
1/2 cup finely chopped pecans

Steps:

  • Preheat oven to 350 degrees.
  • Lightly grease a 13 x 9 pan and set aside.
  • Place the first 5 ingredients in a large mixing bowl.
  • Stir for about 50 strokes until batter lightens in texture.
  • Pour into prepared pan, smooth out and drop jam by teaspoonfuls onto the batter.
  • With a knife, swirl jam into the batter.
  • Scatter the chocolate chips and nuts evenly over the top.
  • Bake for about 25 minutes or until done.
  • Remove to wire rack to cool for at least 30 minutes before cutting.

1 ounce unsweetened chocolate
1 large egg
3/4 teaspoon vanilla extract
1/2 cup sugar
1/4 cup all-purpose flour
TOPPING:
1/4 cup semisweet chocolate chips
1/2 ounce unsweetened chocolate
2 tablespoons plus 1/4 cup heavy whipping cream, divided
1-1/2 teaspoons butter
1/2 teaspoon vanilla extract
2 tablespoons confectioners' sugar
1 cup fresh raspberries, divided

Steps:

  • In a small saucepan, melt butter and chocolate over low heat, stirring until smooth. Remove from the heat; cool. Beat in egg and vanilla. Combine sugar and flour; stir into chocolate mixture. , Spread into an 8x4-in. loaf pan coated with cooking spray. Bake at 350° for 15-18 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., For topping, in a small saucepan, combine the chocolate chips, unsweetened chocolate and 2 tablespoons cream. Cook and stir over low heat until melted and smooth. Remove from the heat. Stir in butter and vanilla. Cool. , In a small bowl, beat remaining cream until it begins to thicken. Add confectioners' sugar; beat until stiff peaks form. Fold in chocolate mixture. Mash 1/2 cup raspberries; fold into mousse. Spread over brownies; sprinkle with remaining berries. Refrigerate for 2 hours or until firm.

GHIRARDELLI RASPBERRY BROWNIES

Ghirardelli in anything is an understatement in tasting fabulous. Rich, yummy, and decadent....that pretty much sums these up! I had Peanut butter ghirardelli squares as well and decided to use them too..delish!!

1 box (19 ounce) of brownie mix, baked as directed on box
1 pkg ghirardelli dark chocolate raspberry squares
FROSTING
1 c white fluffy frosting (pillsbury)
2 Tbsp raspberry jam

Steps:

  • 1. Preheat oven at 350 degrees, if using a dark pan preheat only to 325 degrees.
  • 2. Prepare pan by greasing generously, these brownies want to stick easily, if possible line bottom with parchment paper. I used a Brownie/Bar baking pan...specifically for brownies or bar cookies.
  • 3. Make brownies by following directions on your favorite brownie mix box. As shown in the picture here..scoop a tablespoon or more of brownie mixture into the bottom of the pan.
  • 4. Next place a dark chocolate raspberry square in each slot in the pan on top of the brownie batter and then cover with remaining batter over chocolate square covering completely. Bake for 30 minutes; if using the dark pans remember to lower heat to 325 but, then may need more baking time.
  • 5. The brownies need to be crusty around the edge and top, but not HARD...they may seem a little soft when removing from oven..if you like them firmer then bake a few minutes longer. Cool 10-15 before removing from bar pan then place on cooling rack until ready to frost.
  • 6. Frosting: Mix frosting with the Raspberry jam until blended well. Dollop on or use a decorator's bag..top with half or quarter piece of remaining chocolate raspberry squares. Enjoy...
  • 7. To make Peanut butter brownies...use Milk & Peanut Butter chocolate squares..following directions above. For frosting, mix white fluffy frosting with 2 T. peanut butter or add peanut butter to taste.

1 box (16 oz) Betty Crocker™ Supreme original brownie mix
Water, vegetable oil and egg called for on brownie mix box
3/4 cup plus 2 tablespoons semisweet chocolate chips
2/3 cup plus 2 teaspoons whipping cream
2 tablespoons seedless red raspberry jam
1 cup Betty Crocker™ Rich & Creamy cream cheese frosting (from 16-oz container)
Fresh raspberries, if desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom of 8-inch square pan with shortening or cooking spray. Make and bake brownies as directed on box. Cool completely on cooling rack, about 1 1/2 hours.
  • In medium microwavable bowl, place 3/4 cup chocolate chips, 2/3 cup whipping cream and raspberry jelly. Microwave uncovered on High 1 to 2 minutes, stirring once every 30 seconds, until chocolate is melted. Stir until mixture is smooth (there may still be a little undissolved jam). Refrigerate about 30 minutes or until slightly thickened.
  • Add frosting to chocolate mixture. Beat with electric mixer on high speed 1 to 2 minutes or until well blended and fluffy. Spread over cooled brownies, smoothing top.
  • In small microwavable bowl, microwave remaining 2 tablespoons chocolate chips and 2 teaspoons whipping cream uncovered on High 20 to 30 seconds, stirring once, until mixture can be stirred smooth. Place into resealable food-storage plastic bag; partially seal bag. Cut small tip from corner of bag; drizzle over frosting. Refrigerate 1 to 2 hours or until set.
  • Cut into 12 squares; cut each square diagonally in half to make triangles. Garnish with raspberries.
