Egg noodles combine with chicken in a creamy, cheesy, Ranch infused sauce in this home-style casserole topped with butter cracker crumbs.

12 ounces wide egg noodles
4 tablespoons butter
1/2 cup diced onion
2 cloves garlic, minced
1/4 cup flour
1 (1 oz.) package Ranch seasoning mix
4 cups chicken broth
1 cup half-and-half
4 ounces cream cheese, softened and cubed
2 cups chopped cooked chicken
2 cups shredded Colby jack cheese
1/4 cup chopped fresh parsley
Salt and pepper, to taste
2 cups crushed oyster crackers
1/2 cup grated Parmesan cheese
3 tablespoons butter, melted
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees. Grease a 9x13 inch baking dish.
  • In a medium bowl, toss together the ingredients for the topping; set aside.
  • For the casserole, cook noodles in boiling, salted water for 1-2 minutes. rinse with cold water and drain.
  • In a large saute pan or Dutch oven, melt 4 tablespoons butter. Add onion and garlic and saute until soft and fragrant, 3-5 minutes. Stir in flour and ranch seasoning and cook a few minutes longer.
  • Whisk in broth and half and half. Bring to a boil and simmer until thickened. Reduce heat and stir in cream cheese. Cook and stir until cream cheese is melted.
  • Stir in noodles, chicken, shredded cheese and parsley. Season with salt and pepper, to taste. Transfer noodle mixture to the prepared pan.
  • Sprinkle topping over casserole. Bake, uncovered, until golden and bubbly, 25-30 minutes.

4 cups uncooked egg noodles
1/2 cup butter, divided
1/4 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon white pepper
3-1/2 cups 2% milk
4 cups cubed cooked chicken
2 jars (12 ounces each) chicken gravy
1 jar (2 ounces) diced pimientos, drained
1/2 cup cubed process cheese (Velveeta)
1/2 cup dry bread crumbs
4 teaspoons butter, melted

Steps:

  • Cook noodles according to package directions. , Meanwhile, preheat oven to 350°. In a Dutch oven, melt 6 tablespoons butter. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir 1-2 minutes or until thickened. Remove from heat. Stir in chicken, gravy and pimientos., Drain noodles; toss with remaining butter. Stir into chicken mixture. Transfer to a greased 13x9-in. baking dish. , Cover and bake 30-35 minutes or until bubbly. Combine cheese, bread crumbs and melted butter. Sprinkle around edges of casserole. 6 slices bacon
4 boneless skinless chicken breast halves (cut into bite-size pieces)
2 tablespoons all-purpose flour
2 tablespoons dry ranch dressing mix
1 1/4 cups whole milk
3 cups dried medium noodles
1 tablespoon parmesan cheese, finely shredded

Steps:

  • Cut bacon into narrow strips.
  • In large skillet, cook bacon over medium heat until crisp.
  • Drain bacon on paper towels, discard all but 2 T drippings.
  • In same skillet, cook chicken in reserved drippings until tender and no longer pink, turning to brown evenly.
  • Sprinkle flour and salad dressing mix over the chicken in the skillet; stir well.
  • Stir in milk.
  • Cook and stir until thickened and bubbly.
  • Cook and stir for 1 minute more.

12 oz uncooked egg noodles
2 teaspoons oil
1/2 cup diced onion
2 1/2 cups Progresso™ chicken broth (from 32-oz carton)
6 oz cream cheese, softened
3 tablespoons ranch dressing and seasoning mix (from 1-oz package)
2 cups shredded deli rotisserie chicken
5 slices bacon, crisply cooked and crumbled
1 1/2 cups frozen sweet peas
1 tablespoon unsalted butter, melted
1 cup Progresso™ panko crispy bread crumbs
Chopped fresh parsley for garnish, if desired

Steps:

  • Heat oven to 375°F. Lightly grease 13x9-inch (3-quart) baking dish.
  • Cook noodles in salted water as directed on package for minimum cook time. Drain; place noodles in large bowl.
  • Meanwhile, in 10-inch skillet, heat oil until hot. Cook onion in oil until soft and translucent. Season lightly with salt. Add chicken broth; heat to simmering. Stir in cream cheese until melted and combined. Stir in 2 tablespoons plus 2 teaspoons of the ranch dressing mix. Pour mixture over noodles. Fold in chicken, bacon and frozen peas.
