CURRIED LAMB PATTIES WITH RADISH RAITA

Number Of Ingredients 14

For radish raita
1/3 cup plain yogurt
2 tablespoons diced radish
1 teaspoon diced red onion
1 teaspoon fresh lime juice
For lamb patties
3/4 pound ground lamb
3 tablespoons chopped red onion
1 1/2 tablespoons Major Grey's mango chutney
3 tablespoons chopped fresh coriander
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander seeds
1/8 teaspoon paprika
1 tablespoon vegetable oil

Steps:

  • Make raita:
  • In a small bowl stir together all raita ingredients and season with salt and pepper.
  • Make patties:
  • In a large bowl mix together all patty ingredients except oil until combined well and season with salt and pepper. Form mixture into 4 patties about 1 inch thick. In a large heavy skillet oil over moderately high heat until hot but not smoking and cook patties until just cooked through, about 3 1/2 minutes on each side.
  • Serve lamb patties with raita.

CUCUMBER AND RADISH RAITA

This can be spicy or not, depending on what you are serving it with and your taste for heat. Cucumber raita (without the radishes) is a classic accompaniment to curries, but I like it on its own and spooned over grains. It's also very nice with salmon.

2 cups plain low-fat yogurt (not fat-free)
3/4 pound cucumber (1 European or 4 Persian), peeled if waxed, seeded if necessary, and finely diced or shredded
4 to 6 radishes, finely diced
1 teaspoon cumin seeds, lightly toasted and ground
1/2 teaspoon coriander seeds, lightly toasted and ground
Salt to taste
2 to 3 tablespoons finely chopped cilantro, to taste
1 to 2 serrano or bird chilies, finely chopped (optional)

Steps:

  • Combine all the ingredients. Taste and adjust salt and other seasonings. Refrigerate until ready to serve.

4 ounces daikon (Japanese white radish) or white turnip, peeled, shredded (about 1/2 cup)
1/4 English hothouse cucumber, grated (about 1/2 cup)
1 cup plain 2% fat Greek yogurt
2 tablespoons fresh lemon juice
1 tablespoon chopped fresh mint
Pinch of cayenne pepper
Kosher salt, freshly ground pepper
2 tablespoons olive oil, divided
2 garlic cloves, sliced
2 bunches collard greens, center ribs and stems removed, leaves cut into 1" strips (about 14 cups)
4 6-ounce pieces skin-on salmon fillets
2 red radishes, trimmed, thinly sliced
1 tablespoon Sherry vinegar
Ingredient info: Daikon is available at Asian markets and some supermarkets.

Steps:

  • Preheat oven to 350°F. Squeeze excess liquid from daikon and cucumber. Mix with yogurt, lemon juice, mint, and cayenne in a small bowl; season with salt and pepper. Set the raita aside.
  • Heat 1 tablespoon oil in a large heavy pot over medium heat. Add garlic and cook, stirring constantly, just until fragrant, about 1 minute. Add collard greens to pot, reduce heat to low, cover, and cook, tossing occasionally, until tender, 10-15 minutes.
  • Meanwhile, heat 1 tablespoon oil in a large ovenproof skillet over medium heat. Season fish with salt and pepper; cook skin side down until skin is crisp, 5-8 minutes. Transfer to oven (do not turn fish); roast until opaque in the center, about 4 minutes.
  • Add radishes and vinegar to collard greens; season with salt and pepper and toss to combine. Divide greens, salmon, and reserved raita among plates.

From today's Weekend magazine! This raita is good for health and a great summer treat thats packed with alot of nutrients that come from radish and lots of calcium that comes from the yogurt.

1 1/2 cups radishes, grated
1 cup yogurt, beaten (I use low-fat)
2 green chilies, finely chopped
1 tablespoon coriander leaves, finely chopped
salt
pepper
1/4 teaspoon cumin seed, powdered
red chili powder, to taste
1/2 teaspoon sugar, optional

Steps:

  • Sprinkle some salt over the grated radish.
  • Set aside for 30 minutes.
  • Squeeze out excess water from the radish.
  • In a medium size bowl, combine the yougurt and radish with the remaining ingredients.
  • Mix well.
  • Refrigerate until its time to serve.
  • Garnish with corriander leaves before serving.
  • Serve with a spicy curry/veggie and rice.

1/2 of a 32 oz. tub of yogurt - I like to mix a little bit of Greek yogurt in with regular to get a thicker texture
1 radish - grated (prefer the larger shred)
1/2 small plum tomato - cut into small pieces, seeds removed
2 tablespoons fresh grated coconut or thawed out frozen
Vaggarne
2 teaspoons oil
1/2 teaspoon mustard seed
pinch of asafoetida
1 - 2 fresh or dried curry leaf
1 dried red chili - broken into pieces
salt to taste
cilantro

Steps:

  • Combine grated radish, tomato, grated coconut and yogurt into bowl. In small pan, under medium high heat, place 2 tsps of oil. When oil is hot, place asafoetida and mustard seed. Shake the pan up and cover. When mustard seeds start popping turn the heat down to low and place the curry leaf and broken up red chili (be careful to not burn yourself). Mix everything with a spoon until coated with oil and the curry leaf is crunchy but not burned. Pour this oil mixture onto the yogurt. To get all of the oil out, I usually put a spoon or two of the yogurt into the oil pan and pour it back in with the rest of the yogurt. Put salt and mix thoroughly. Garnish with cilantro. Sometimes I add a pinch of chopped ginger too, but this is optional

CUCUMBER AND RADISH RAITA

1 teaspoon Chaat Masala or store-bought
2 cups nonfat plain yogurt, whisked until smooth
2 to 4 seedless cucumbers, grated (peeled or unpeeled)
12 to 15 red radishes, grated and squeezed
1 large firm tomato, finely chopped
1 fresh green chili pepper, such as serrano, minced with seeds
1/2 teaspoon salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste
1/2 teaspoon ground paprika
cilantro or mint leaves

Steps:

  • Prepare the chaat masala. Place the yogurt in a serving bowl. Add the cucumber, radishes, tomato, green chili pepper, chaat masala, salt, and pepper and stir to mix well.
