CHORIZO AND CHEESE LOADED FRIES



Chorizo and Cheese Loaded Fries image

Two 16-ounce bags frozen crinkle-cut fries
1 pound fresh chorizo
1/4 cup sour cream
1 clove garlic, grated
8 ounces manchego cheese, grated
8 ounces mozzarella cheese, grated
One 4-ounce jar chopped pimentos, drained
Chopped fresh flat-leaf parsley, for garnish

Steps:

  • Preheat the oven to 425 degrees F.
  • Evenly spread the frozen fries on a rimmed baking sheet. Bake until lightly browned, 15 to 20 minutes.
  • While the fries are baking, brown the chorizo. Cook the chorizo in a large skillet over medium-high heat, using a wooden spoon to break it up, until browned, 7 to 10 minutes. Transfer to a paper towel lined plate to drain.
  • Make the crema. Whisk together the sour cream, grated garlic and a few teaspoons of water to create a thick sauce.
  • Top the fries with the chorizo, manchego, mozzarella and pimentos. Bake until the fries are golden brown and the cheese is melted and bubbly, 10 to 15 minutes. Drizzle with the crema and top with fresh parsley.

1 tablespoon olive oil
8 ounces fresh chorizo or spicy sausage, casing removed
2 cloves garlic, minced
1/2 sweet onion, diced
1 poblano pepper, minced
2 tablespoons all-purpose flour
1 1/4 cups whole milk
1 Roma tomato, diced
1 (8-ounce) package shredded Monterey Jack cheese
1 (8-ounce) package shredded Pepper Jack cheese
Kosher salt and freshly ground black pepper, to taste.
1 cup chopped fresh cilantro leaves, divided
1/4 cup pickled jalapeno peppers

Steps:

  • Preheat oven to broil on high. Arrange an oven rack 3-inches from the broiler. Heat olive oil in a large oven-proof skillet over medium heat. Add chorizo or sausage and cook until browned, about 5-8 minutes, making sure to crumble the chorizo or sausage as it cooks. Drain excess fat; transfer to a paper towel-lined plate. Add garlic, onion and pepper to the skillet. Cook, stirring frequently, until onions have become translucent, about 3-4 minutes. Whisk in flour until lightly browned, about 1 minute. Reduce heat to low. Gradually whisk in milk and tomato. Cook, whisking constantly, until thickened, about 4-5 minutes. Remove from heat. Gradually stir in cheeses until smooth; season with salt and pepper, to taste. Stir in 1/2 the chorizo or sausage and 1/2 cup cilantro. Place into oven and broil until golden brown, about 2-3 minutes. Serve immediately with remaining chorizo and cilantro, garnished with pickled jalapeno peppers, if desired.

1 cup diced onion
3 cloves minced garlic
2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups milk, or more as needed
1 (12 ounce) bag shredded Mexican cheese blend
1 (4 ounce) can chopped green chilies

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium heat. Cook and stir chorizo in the hot skillet until browned and crumbly, 5 to 7 minutes. Add onion and garlic and cook until transparent, 4 to 5 minutes more.
  • Melt butter in saucepan over medium-high heat until sizzling. Stir in flour and whisk until a paste forms, about 5 minutes. Whisk in milk and continue to cook, whisking, until sauce begins to thicken, about 5 more minutes. Stir in the chorizo mixture, shredded cheese, and green chiles. Continue stirring until smooth and thick.
  • Transfer mixture into a shallow baking dish.
  • Bake in the preheated oven until browned, about 25 minutes.

Queso fundido is a tasty comfort food that originated in northern Mexico as a campfire dish of chorizo, tomatoes, onions, and poblano peppers in a pool of gooey, stringy, melted cheese. The dish is often prepared tableside in restaurants, where it is flambéed and presented bubbling hot in small casserole dishes as an appetizer. In this version, chorizo is sautéed until crisp and golden, then combined with queso Oaxaca for a simple, yet no less delicious, snack. Spoon the queso onto soft tortillas and serve individually, or set the pot between a group of people and dig in.

½ lb ground chorizo
5 flour tortillas, 6 in (15 cm)
6 oz Oaxaca queso
kosher salt, to taste

Steps:

  • Preheat the oven to 450°F (230°C).
  • Crumble the chorizo into a large pan over high heat and cook until the fat has rendered and the chorizo caramelized and cooked through, about 10 minutes. Turn off the heat and arrange the tortillas on top of the chorizo to warm.
  • Meanwhile, tear the cheese by hand into a small baking dish. Season the cheese with salt, if needed. Transfer to the oven and bake until the cheese is melted and bubbly. Top with the chorizo.

6 ounces chorizo or spicy Italian sausage, casings removed
1/4 cup chopped onion
1 large clove garlic, minced
2 cups grated Oaxaca or mozzarella cheese
6 flour tortillas or soft tacos, warmed

Steps:

  • Preheat the oven to 425 degrees F. Oil a 3 or 4 cup ovenproof baking dish.
  • In a dry medium skillet, saute the chorizo over medium-high heat until almost crisp. Remove the chorizo to a plate. Add the onions and garlic to the pan juices and cook until soft, about 5 minutes. Return the chorizo to the skillet with the onions and garlic and stir to combine.
  • Put half of the cheese in the baking dish and sprinkle with half of the chorizo mixture. Repeat with the remaining cheese and chorizo mixture. Bake until the cheese is bubbling, about 20 minutes. Serve with flour tortillas for soft tacos.

2 tablespoons olive oil
1/2 small onion, chopped
1 garlic clove, minced
1 jalapeno, seeded and diced
2 ounces chorizo sausage
4 ounces mozzarella cheese, cubed
4 ounces monterey jack cheese, cubed
3 ounces goat cheese, crumbled
6 small flour tortillas

Steps:

  • Preheat oven to 400 degrees. Place an 8 inch casserole in oven while preparing the fundido.
  • Heat oil in skillet over medium high heat until slightly smoking. Add onion, garlic and pepper and cook for one minute stirring constantly.
  • Add chorizo and break up while coooking for about 10 minutes.
  • Remove the casserole from oven. Spread the cheeses over hot bottom of dish. Return the dish to oven and bake until cheese is just melted, about five minutes.
  • Remove from oven and sprinkle chorizo mixture over top. Return to oven and heat for about three minutes.
  • Serve with warmed tortillas.
