1 pound white American cheese (such as Land O'Lakes®), sliced
1 cup half-and-half, or as needed
½ teaspoon ground cumin
¼ teaspoon ground black pepper
¼ teaspoon salt
¼ teaspoon red pepper flakes, or to taste
2 tablespoons diced jalapeno pepper
⅛ teaspoon chili powder

Steps:

  • Place American cheese and about 1/4 cup half-and-half in a saucepan over low heat; cook and stir until cheese starts to melt, about 5 minutes. Slowly start stirring half-and-half into cheese mixture, about 2 tablespoons at a time, until cheese begins to melt and mixture is smooth, about 5 minutes more. Continue adding more half-and-half.
  • Season cheese mixture with cumin, black pepper, and salt; add red pepper flakes, a little at a time, until desired spiciness is reached.
  • Cook and stir cheese dip until cheese is fully melted, adding more half-and-half if needed to thin it out, 5 to 10 minutes more. Remove from heat and top dip with chili powder.

1/4 cup half-and-half
2 tablespoons onions, chopped fine
2 teaspoons ground cumin

1 tablespoon fresh cilantro, chopped fine (optional)

Steps:

  • Put all ingredients in a double boiler and heat on medium.
  • Cook until melted and well blended, stirring occasionally.

1 1/4 lbs white American cheese, cut into 1-inch cubes
1/4 cup diced green chilis
2 pickled jalapeno peppers, chopped
1 ounce pickled jalapeno juice
2/3 cup whole milk
1/2 cup cold water
cayenne pepper (optional)

Steps:

  • Toss all ingredients into a large microwave-safe bowl. Microwave on high for 5 minutes, stopping to stir after every minute. The mixture might seem watery during the first few stirs, but should come together as a nice runny dip after all the cheese is melted.
  • Serve immediately as a dip with tortilla chips or as a sauce over your favorite Mexican dish.

1 tablespoon pickled jalapeno slices, diced fine

dash of cumin

  • Combine all ingredients in a medium size glass bowl. Microwave for five minutes, pausing to stir after every minute. The dip will be very watery at first, but it will thicken as it finishes cooking. Serve hot, poured over just about anything that you want to make more delicious. Enjoy!

  • Grease bottom of the crockpot with butter.

2 tablespoons butter
1/4 cup finely chopped onion
1/4 teaspoon crushed garlic
2 tablespoon all-purpose flour
1 1/4 to 1 1/2 cups whole milk, for thicker sauce use less
8 ounces finely shredded Monterey Jack cheese

Steps:

  • Melt butter in a medium saucepan over medium-high heat. Add onion and saute until soft about 4 minutes, adding garlic during the last 30 seconds of sauteing. Whisk in flour, and cook stirring constantly, about 30 seconds. Slowly pour milk into mixture, while whisking vigorously. Bring mixture just to a gentle bubble stirring constantly, then reduce heat to low. Allow to rest over low heat 2 minutes, stirring occasionally. Add in finely shredded Monterrey Jack cheese and cook over low heat, stirring constantly until cheese melts (it will take the cheese a minute to melt, at first it may look curdled but that just means the cheese hasn't fully melted yet so continue to cook until completely melted). Stir in optional ingredients. Serve warm with tortilla chips (or serve over tacos etc. Note that it will thicken as it rests so reheat to thin if desired). NOTE: For a smooth cheese sauce without the chunky ingredients, omit the chopped onion and crushed garlic. Replace it with 1/2 teaspoon onion powder and a generous pinch of garlic powder. Since you won't need to saute simply melt the butter then add the flour, garlic powder and onion powder and continue as directed and omit the optional ingredients.
