PULL-APART PORK WITH HONEY CHIPOTLE

Melt-in-the-mouth, tender shredded pork with a sweet and spicy glaze, what's not to like? Serve this simple make-ahead meal with all the trimmings

1.2kg trimmed pork shoulder joint (weight after cutting away the rind - ask your butcher to do this)
75g ketchup , plus 1tbsp
3 tbsp chipotle paste
3 tbsp honey
1 tbsp red wine vinegar

Steps:

  • Up to two days before (and at least 2 hrs ahead), mix together 75g ketchup with 2 tbsp chipotle, 2 tbsp honey and the vinegar. Rub all over the pork and leave in a food bag (or bowl) in the fridge to marinate, turning occasionally.
  • Heat oven to 160C/140C fan/gas 3. Lift the pork into a snug-fitting roasting tin and baste with any excess marinade, plus 100ml water. Cover with foil, ensuring the pork is sealed in but the foil isn't touching it, and bake for 4 hrs.
  • Turn up the oven to 200C/180C fan/gas 6 (or cool and chill the pork, if making ahead). Remove the foil and put the pork back in for 30 mins until crisp and sticky on the outside.
  • Lift the pork from the tin and use two forks to shred the meat. Mix together the extra 1 tbsp ketchup with the remaining chipotle and honey, and stir it through the shredded meat with some seasoning before serving.

3 -4 lbs pork roast (or butt)
3 garlic cloves, crushed
1/2 cup cider vinegar
8 -10 ounces apple juice (or cider)
2 teaspoons ground cloves
1 small onion, sliced
1 teaspoon salt
1/2 teaspoon pepper

  • Place meat into large baking pan.
  • Place all ingredients into baking pan.
  • Cover and bake in oven at 250 degrees for 8 hours.
  • Pull apart meat and serve.

I don't remember if I got it from this site; but I wanted to share it. I hope I am not stealing someone's recipe.

2 1/2 - 4 lb boneless pork shoulder
1 Tbsp brown sugar
2 Tbsp cajun seasoning
1 Tbsp cumin
1 Tbsp salt
1 Tbsp fresh ground pepper
1 Tbsp paprika
1 Tbsp mesquite powder
4 oz frozen apple juice concentrate
4 oz cider vinegar
INGREDIENTS

Steps:

  • 1. Combine Dry Ingredients, Spread over entire roast. Refrigerate in a Ziploc bag for up to 24 hours. *Place apple juice juice & vinegar in a crock-pot; add spiced shoulder, being careful not to lose the Rub. Cook on high 2 hours - reduce to Low for 10 more hours. Remove; let Rest for 30 minutes - Pull apart with 2 forks. (Depending on the size of the roast, you should use your own judgment as to when it is done; you will be able to tell). The last time I made this, I added apples and potatoes, very nice addition.
