A slow cooked beef stew called "carne guisada" is full of Puerto Rican flavor.

¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
2 pounds beef stew meat, cubed
1 tablespoon olive oil, or more as needed
½ tablespoon white sugar
1 pound baby carrots
3 medium potatoes, cut into chunks
2 cups water
½ cup tomato sauce
¼ cup red cooking wine
8 Manzanilla olives
2 tablespoons sofrito
1 (1.41 ounce) package sazon seasoning with achiote (such as Goya®)
½ tablespoon adobo seasoning
½ tablespoon soy sauce
½ tablespoon Worcestershire sauce

Steps:

  • Mix flour, salt, and pepper together in a freezer-size plastic bag. Add beef and shake, coating evenly.
  • Heat enough olive oil to cover the bottom of a large skillet over medium-low heat. Stir in sugar and cook until it turns golden, about 5 minutes. Add meat and cook until browned on all sides, 5 to 7 minutes. Transfer browned beef to the bottom of a slow cooker.
  • Stir carrots, potatoes, water, tomato sauce, wine, olives, sofrito, sazon, adobo seasoning, soy sauce, and Worcestershire sauce into the slow cooker.
  • Cover and cook until meat is no longer pink and vegetables are tender, on High 4 to 6 hours, or Low for 8 to 10 hours.

1 small potato, peeled and cubed
2 tablespoons olive oil
½ cup sweet corn kernels
2 tablespoons sofrito
2 cloves garlic
1 (8 ounce) can tomato sauce
1 teaspoon dried oregano
1 bay leaf
½ cup water
1 (12 ounce) can corned beef
salt and ground black pepper to taste

Steps:

  • Bring a small pot of water to a boil. Add potato and cook uncovered until slightly tender, about 5 minutes. Drain in a colander.
  • Heat oil in a large skillet or Dutch oven over medium-high heat. Add drained potatoes, corn, sofrito, and garlic; cook and stir until fragrant, 2 to 3 minutes. Add tomato sauce, oregano, and bay leaf; cook and stir until flavors combine, 2 to 3 minutes. Add water and bring mixture to a boil. Lower heat to medium-low; stir in corned beef. Cook until heated through, 6 to 8 minutes.

1 1/2 lbs stew meat
1 tablespoon olive oil
3 medium potatoes, quartered
1 sazon goya con culantro y achiote
1 tablespoon adobo seasoning
2 -3 carrots (optional)
6 manzanilla olives
1 teaspoon capers (alcaparrado)
1 large cooking spoon sofrito sauce
1 (8 ounce) can tomato sauce
1 teaspoon oregano, dried, crushed in hand
1 teaspoon cumin, ground
2 bay leaves
salt and pepper
3 cups water
4 small ears of corn (the small NIblets)

Steps:

  • Heat olive oil over medium high heat in deep pot.
  • Season meat with 1/2 tablespoon adobo.
  • Quickly brown meat.
  • Add water and cook for one hour at medium heat.
  • Add potatoes and remaining ingredients.
  • Cook another 30 minutes or until potatoes are tender and sauce has thickened a bit.

Steps:

  • Mix flour, salt and pepper in freezer bag. Add stew beef and coat evenly. Add enough olive oil to cover the bottom of a large skillet over medium-low heat. Add sugar. When sugar caramelizes, add meat and brown on all sides. Remove beef from the skillet and place in the bottom of slow cooker. Add remaining ingredients and cover. 3 tablespoons vegetable oil
1 1/2 pounds stewing beef, cut into 1 1/2-inch pieces
1 large onion, chopped
3 large garlic cloves, chopped
1 tablespoon chopped fresh parsley
4 fresh thyme sprigs or 1 teaspoon dried, crumbled
4 bay leaves
2 tablespoons all purpose-flour
2 14 1/2-ounce cans beef broth
2 cups dry red wine
4 large potatoes, cut lengthwise into quarters
3 large carrots, cut into 3/4-inch pieces
1/2 pound green beans, trimmed, halved
Chopped fresh parsley

Steps:

  • Heat oil in heavy large pot or Dutch oven over high heat. Add beef in batches and brown. Using slotted spoon, transfer beef to bowl. Add onion and garlic to pot and sauté 5 minutes. Add parsley, thyme, bay leaves and flour. Stir 2 minutes. Gradually mix in broth and wine. Return beef to pot and bring mixture to boil. Reduce heat to medium-low and simmer uncovered 45 minutes.
  • Add potatoes and carrots to stew. Simmer until meat and vegetables are tender, stirring occasionally, about 30 minutes. Add green beans and simmer until beans are tender and gravy is slightly thickened, about 10 minutes. Transfer stew to large bowl. Garnish with chopped parsley and serve.

1 tablespoon vegetable oil
2 lbs trimmed beef top round steak, cut into 1 inch chunks
1/4 cup sofrito sauce (or to taste)
6 fresh cilantro leaves
4 cups water (or more)
1 beef bouillon cube
2 tablespoons vinegar
1/2 teaspoon whole dried oregano, crushed
2 bay leaves
1/2 cup tomato sauce
1 tablespoon salt
1/2 lb carrot, cut into rounds
1/2 lb potato, peeled and cubed
5 stalks celery, cut into rounds
salt (to taste)

Steps:

  • In a large caldero or pot, heat oil, add sofrito and culantro leaves.
  • Add meat and stir constantly, cook until meat looses red color. Add water and bouillon cube, bring to a boil. Add vinegar, oregano, bay leaves and tomato sauce. Reduce heat to low and cook.
  • Add carrots, potatoes, celery and salt.
  • Cook for about 2 hours. Taste and adjust seasoning. Boil uncover to thicken sauce.
  • Note: if more seasoning is needed you can add Adobo to taste.
  • Serve with white rice.

1 green pepper, chopped
4 sweet chili peppers, chopped
2 onions, chopped
4 cloves garlic
cilantro
2 Tbsp vinegar
1/2 tsp dried oregano
1/2 cup tomato sauce
2 bay leaves
1 Tbsp salt
1/2 lb carrots, sliced
1 can green peas
1/2 lb potatoes, cubed
12 green olives
1 Tbsp capers
1/4 tsp salt

Steps:

  • Heat oil in skillet. Brown beef. Add next ten ingredients and bring to a boil. Reduce heat, cover and simmer 1 hour. Drain peas and set aside. Reserve liquid. Add liquid to the pot. Simmer for 1 hr. Add potatoes, olives, capers and salt. Simmer for 1 hr. Add peas. Serve over rice.
