Make meat loaf without a loaf pan with this easy and delicious recipe.

Number Of Ingredients 9

1 lb lean (at least 80%) ground beef
1 cup Progresso™ plain bread crumbs
1/4 cup finely chopped onion
1 tablespoon Italian seasoning
2 eggs, beaten
1/2 cup ketchup
1/3 cup milk
1/4 cup ketchup
1 tablespoon chopped fresh Italian (flat-leaf) parsley, if desired

Steps:

  • Heat oven to 350°F. Line rimmed baking sheet with foil; spray with cooking spray.
  • In large bowl, mix Meat Loaf ingredients. Form into 8x4-inch loaf on baking sheet. Bake 40 minutes.
  • Remove from oven. Spread 1/4 cup ketchup evenly over top. Bake 10 to 15 minutes or until meat thermometer inserted in center of loaf reads 160°F. Let stand 10 minutes before serving. Sprinkle with parsley.
  • Serve with mashed potatoes and green beans to round out your traditional American meal.
  • Feel free to swap Italian bread crumbs for the plain bread crumbs and Italian seasoning.

1 lb. lean ground beef
2 eggs
1 cup Progresso™ Italian Style Bread Crumbs
1/4 cup grated Parmesan cheese
1/4 cup finely chopped onion
1/8 teaspoon pepper
1 (14-oz.) jar tomato pasta sauce

Steps:

  • Heat oven to 350°F. In large bowl, combine all ingredients except pasta sauce; mix well. Add 1 cup pasta sauce; mix well. Press mixture into ungreased 8x4-inch loaf pan.
  • Bake at 350°F. for 40 minutes. Pour remaining pasta sauce over meatloaf. Bake an additional 15 to 20 minutes or until thoroughly cooked in center and meat thermometer registers 160°F. Let stand 10 minutes before serving.

1 cup milk
1 tablespoon Worcestershire sauce
2 teaspoons fresh basil leaves, chopped or 1/2 teaspoon basil leaves, dried
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon ground pepper
1 garlic cloves, finely chopped or 1/8 teaspoon garlic powder
1 egg
3/4 cup progresso plain breadcrumbs
1 small onion, chopped (1/4 cup)
1/2 cup red bell peppers or 1/2 cup green bell pepper, chopped
1/4 cup ketchup, chili sauce or 1/4 cup barbecue sauce

Steps:

  • Heat oven to 350. Mix all ingredients except ketchup.
  • Spread mixture in ungreased 8x4 or 9x5-inch loaf pan, or shape into 9x5-inch loaf in ungreased 13x9-inch pan. Spread ketchup over top.
  • Insert ovenproof meat thermometer so tip is in center of loaf. Bake uncovered 1 to 1-1/4 hours or until beef is no longer pink in center and thermometer reads at least 160 degree. Let stand 5 minutes, remove from pan.

2 eggs, beaten
¾ cup dry bread crumbs
¼ cup ketchup
1 teaspoon Italian-style seasoning
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon garlic salt
1 (14.5 ounce) can diced tomatoes, drained
1 ½ cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix together ground beef, eggs, bread crumbs and ketchup. Season with Italian-style seasoning, oregano, basil, garlic salt, diced tomatoes and cheese. Press into a 9x5 inch loaf pan, and cover loosely with foil.

1 1/2 lb extra-lean (at least 90%) ground beef
1/2 cup Progresso™ Italian-style dry bread crumbs
1/2 cup pepperoni-flavored pizza sauce (from 14-oz jar)
1/4 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, finely chopped
1 egg
1/4 cup shredded Italian-style six-cheese blend or mozzarella cheese (1 oz)
Additional pizza sauce, heated, if desired

Steps:

  • Heat oven to 350°F. In large bowl, mix all ingredients except cheese and additional pizza sauce. Press beef mixture into 12 regular-size muffin cups (cups will be very full). Place muffin pan on cookie sheet in oven to catch any spillover.
  • Bake about 30 minutes or until loaves are no longer pink in center and meat thermometer inserted in center of loaves in middle of muffin pan reads 160°F.
  • Sprinkle 1 teaspoon cheese over each loaf. Bake 1 to 2 minutes longer or until cheese is melted. Immediately remove from cups. Serve with pizza sauce.
