2 cups penne pasta
2 teaspoons olive oil
1 pound fresh asparagus, trimmed and cut into 2-inch pieces
3 carrots, cut into strips
2 cups cherry tomatoes, halved
1 clove garlic, minced, or more to taste
1 cup grated Parmesan cheese
1 cup heavy whipping cream
¼ teaspoon ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • Heat olive oil in a large skillet over medium heat-high heat; saute asparagus and carrots until tender yet firm to the bite, about 5 minutes. Add tomatoes and garlic; saute until garlic is fragrant, about 1 minute.
  • Stir Parmesan cheese, cream, and black pepper into vegetable mixture until cheese melts and sauce is smooth, 2 to 3 minutes. Add pasta to sauce and toss to coat.

1 lb penne or 1 lb farfalle pasta
1 lb medium asparagus spear, stems trimmed, cut into 1-1/2-inch lengths
1 large carrot, cut into matchsticks
1 tablespoon extra-virgin olive oil
8 ounces sliced prosciutto, cut into bite-size pieces
1 large shallot, sliced 1/8 inch thick
1 garlic clove, minced
1/2 teaspoon red pepper flakes
1 cup heavy cream
1 cup chicken stock, preferably homemade or 1 cup canned low sodium chicken broth

Steps:

  • Bring a pot of water to a boil, salt it generously, and start cooking the pasta. Three minutes before the pasta is done, add the asparagus and carrots and cook for 3 minutes (for example, for a 9 minute penne, add the veggies at the 6 minute mark, or for a 14 minute penne, add them at the 11 minute mark). Check the pasta and vegetables to make sure they're cooked through but still have texture, then drain.
  • While the pasta is cooking, heat the olive oil in a large sauté pan over medium heat, add the ham and shallot, and cook until lightly browned, 3 minutes or so. Add the garlic and pepper flakes and cook until fragrant, 1 minute. Add the cream, stock, and mustard, and simmer for a minute or two, scraping up any brown bits.
  • Add the pasta and vegetables to the pan. Toss and cook for another 2 minutes, until cooked through and the pasta is coated. Taste for seasoning, add salt if necessary, and serve immediately in warm bowls with grated Parmesan available.

The sauce works best with springy egg pasta, preferably homemade or a good purchased brand. Make sure not to overcook it; you need the chewy bite to stand up to the gently cooked vegetables. If you can't find good fresh English peas, you can substitute frozen peas, but don't add them until the last minute of cooking.

1/2 pound asparagus, ends snapped

1/2 lb asparagus
1/4 cup unsalted butter
1/2 lb button mushroom, sliced
1/4 cup prosciutto, slivered
1 medium carrot, peeled and thinly sliced
1 medium zucchini, diced
8 ounces fettuccine pasta, dried (or use your favorite fresh)
3 green onions, sliced (including tops)
1/2 cup frozen baby peas, thawed
1 teaspoon dried basil
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
1/8 teaspoon white pepper
1 cup whipping cream
1/4 cup parmesan cheese, grated
fresh parsley, chopped (for garnish)
parmesan cheese, grated (for serving)

Steps:

  • Snap of tough ends of the asparagus. Cut spears diagonally into 1-inch lengths, leaving tips whole.
  • Bring a large pot of water to a boil and cook pasta according to package directions for al dente; drain well.
  • Meanwhile, in a large frying pan over medium high heat, melt butter.
  • Add mushrooms, prosciutto, asparagus, carrot and zucchini. Cook, stirring occasionally, for 3 minutes. Cover pan and cook for 1 more minute.
  • To the vegetable mix, add green onions, peas, basil, salt, nutmeg, white pepper and cream. Increase heat to high and cook until liquid boils and forms large, shiny bubbles.
  • Return drained pasta to pan it was cooked in and pour sauce over pasta; lift and mix gently so pasta is coated with sauce thoroughly. Add the 1/4 cup Parmesan and mix gently again.
