INSTANT POT® TERIYAKI BEEF



Instant Pot® Teriyaki Beef image

I make this using a 6-quart Instant Pot® for the meat and a 4-quart pressure cooker for the brown rice.

2 ½ cups water
2 cups uncooked brown rice
1 tablespoon olive oil
1 ½ pounds boneless round steak, sliced into 1/2-inch strips
1 small onion, diced
½ cup water
⅓ cup soy sauce
6 cloves garlic, minced
1 teaspoon grated fresh ginger
2 tablespoons honey
3 tablespoons water
1 tablespoon cornstarch
3 cups broccoli florets
4 each green onions, chopped

Steps:

  • Combine 2 1/2 cups water and brown rice in a 4-quart pressure cooker. Close cooker securely and place pressure regulator over vent according to manufacturer's instructions. Heat until steam escapes in a steady flow and makes a whistling sound. Adjust temperature to a simmer. Cook until rice is tender, about 22 minutes. Let pressure release naturally according to manufacturer's instructions, 5 to 10 minutes. Unlock lid and remove.
  • At the same time, turn on a 6-quart multi-functional pressure cooker (such as Instant Pot®), add oil, and select Saute function. Add steak and onion to hot oil; saute until browned, 3 to 5 minutes.
  • Meanwhile, whisk together 1/2 cup water, soy sauce, garlic, and ginger in a small bowl; add to browned steak. Close and lock the lid and cancel Saute function. Select high pressure according to manufacturer's instructions; set timer for 11 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Stir in honey. Combine 3 tablespoons water and cornstarch in a small bowl; add to the Instant Pot®. Add broccoli.
  • Select Saute function and cook, stirring constantly, until sauce thickens and broccoli is cooked, 3 to 5 minutes. Serve with rice and garnish with green onions.

TERIYAKI PULLED PORK IN THE SLOW COOKER

Asian pulled pork is so much better made with homemade teriyaki sauce rather than the bottled stuff. It's perfect on sandwiches, over rice, in a wrap, quesadillas, burritos, tacos, etc. Also ideal for tailgating or game day snacks.

¾ cup reduced-sodium soy sauce
¼ cup chicken broth
¼ cup pineapple juice
3 tablespoons brown sugar
3 tablespoons dry sherry
1 tablespoon honey
2 teaspoons minced garlic
1 teaspoon sesame oil
1 teaspoon minced fresh ginger
½ teaspoon red pepper flakes, or more to taste
¼ cup cold water
3 teaspoons cornstarch
2 ½ pounds pork shoulder roast
1 teaspoon sesame seeds

Steps:

  • Combine soy sauce, chicken broth, pineapple juice, brown sugar, sherry, honey, garlic, sesame oil, ginger, and red pepper flakes in a saucepan over medium heat. Whisk the cold water and cornstarch in a small bowl until you have a thin slurry, and add to the saucepan, stirring to incorporate.
  • Bring sauce to a boil. Reduce heat and simmer to slightly thicken, stirring occasionally, 3 to 4 minutes. Remove teriyaki sauce from heat.
  • Place pork roast in a slow cooker and pour teriyaki sauce over the top. Cook on Low until the pork is tender and falls apart when pulled with a fork, 6 to 8 hours.
  • Remove the pork from the cooker and let rest for 5 minutes before shredding with 2 forks.
  • Return the shredded meat to the pot, mix with the sauce, and let it warm up for about 5 minutes. Sprinkle with sesame seeds and serve.

Grand Prize winner in a Simple & Delicious contest for crock-pot recipes. . .not my recipe unfortunately, but I had to post it here for safe keeping. They recommend serving it sliced with a side of hot mashed potatoes however I think it's much better atop fluffy white rice!!! This is a fabulous recipe and your end product won't have that "crock pot" flavor!!

1 (3 -4 lb) boneless pork shoulder, trimmed (3 to 4 pounds)
1 cup packed brown sugar
1/3 cup unsweetened apple juice (I have used pineapple juice with fabulous results)
1/3 cup soy sauce (may use low sodium)
1 teaspoon fresh ground ginger
1 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons cornstarch
3 tablespoons cold water

Steps:

  • Cut roast in half; rub with brown sugar. Place in a 5-qt. slow cooker.
  • Mix together apple juice and soy sauce (and garlic and ginger if using) and pour over roast.
  • Sprinkle with salt and pepper.
  • Cover and cook on low for 6 to 6-1/2 hours or until meat is tender.
  • Remove roast; cover and let stand for 15 minutes.
  • Meanwhile, strain cooking juices and return to slow cooker. Increase temp to high.
  • Combine cornstarch and cold water until smooth; gradually stir into juices in slow cooker.
  • Cover and cook on high for 15 minutes or until thickened.
  • Slice pork; serve with gravy.
