LAURA BUSH'S COWBOY COOKIES
A sweet treat fit for a president.

Steps:
- Heat oven to 350°F.
- Mix flour, baking powder, baking soda, cinnamon and salt in bowl.
- In 8-quart bowl, beat butter on medium speed until smooth and creamy, 1 minute. Gradually beat in sugars to combine, 2 minutes. Add eggs, one at a time, beating after each. Beat in vanilla.
- Stir in flour mixture until just combined. Add chocolate chips, oats, coconut and pecans.
- For each cookie, drop 1/4 cup dough onto ungreased baking sheets, spacing 3 inches apart.
- Bake in 350°F oven 17 to 20 minutes, until edges are lightly browned; rotate sheets halfway through. Remove cookies to rack to cool.

When I lived in Suitland, Maryland the White House released this recipe. Made for the first time Christmas 2000, they were great. Through the years I have made them many times, occasionally altering it by using things like white chocolate chips and adding craisins. However, this original is hard to beat!

- Preheat the oven to 350 degrees. Sift flour, soda and salt onto waxed paper. Beat together butter, sugars, eggs and vanilla until fluffy. Stir in flour mixture until blended. Stir in oats and chips. Drop by spoonfulls 2 inches apart onto ungreased cookie sheets. Bake 10-20 minutes or until lightly browned.
