PRAWN & CRAB COCKTAIL LETTUCE CUPS

Serve seafood on a sharing platter and let everyone build their own little prawn cocktail bites for a perfect dinner party starter or canapé

4 tbsp mayonnaise
3 tbsp tomato ketchup
2 tsp Worcestershire sauce
juice and zest 1 lemon
pinch of cayenne
4 tomatoes , deseeded and finely diced
1 small red onion , finely diced
1 ½ tbsp Tabasco
3 Little Gem lettuces , leaves separated
300g cooked and peeled prawns (we used a mixture of king prawns and small North Atlantic prawns)
200g white crabmeat
½ bunch chives , snipped
lemon wedges, to serve (optional)

Steps:

  • Mix together all the ingredients for the Marie Rose sauce and set aside in the fridge. Do the same with the tomato salsa ingredients. These can be chilled for up to 24 hrs.
  • Arrange the lettuce leaves, prawns, crab and chives in separate bowls. Put everything on the table with a pile of lemon wedges.
  • At the table, add some prawns and crab to the lettuce leaves, spoon over some tomato salsa and Marie Rose sauce, and scatter over a few chives. Squeeze over a little lemon juice, if you like.

These retro starters can be made an hour in advance and handed round with drinks before dinner

4-6 Little Gem lettuce hearts
350-400g/12-14oz cooked, peeled prawns
3 tbsp extra-virgin olive oil
2 tbsp lemon juice
4 tbsp coarsely chopped flat-leaf parsley
mustard and cress, to serve
100g mayonnaise
25g tomato ketchup
Tabasco sauce

Steps:

  • To make the Marie Rose sauce, blend the mayonnaise with the ketchup and a couple of shakes of Tabasco in a bowl. Trim the bases of the lettuce hearts, discard the outer leaves and separate the leaves - they need to be about 10cm long and you want about 24 in total. Reserve the tiny hearts for another salad.
  • Wash the prawns and pat dry between double layers of kitchen paper. Toss in a bowl with the olive oil, lemon juice, parsley and a little seasoning.
  • Lay the leaves out on serving plates, cup-side up. Drop several prawns into each. Dollop ½ tsp sauce on top, then scatter over some mustard and cress. These can be prepared 1 hr in advance, in which case cover with cling film and set aside in a cool place.
