2 cups mashed potatoes
1/2 cup sour cream
1 small onion, sliced thin
1 small bell pepper, sliced thin
8 tablespoons butter
1 1/2 cups grated cheddar cheese
4 medium potatoes, cooked
6 slices bacon, cooked crisp
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Steps:

  • Preheat oven to 350 degrees F.
  • Spread mashed potatoes evenly on bottom of casserole dish.
  • Layer sour cream evenly over top.
  • Sprinkle House Seasoning, to taste.
  • Saute onion and bell pepper in butter; evenly layer over top of sour cream.
  • Slice potatoes and layer over onions and bell peppers.
  • Add butter.
  • Sprinkle House seasoning.
  • Finally top with cheese.
  • Bake for 25 to 30 minutes.
  • Remove from oven and crumble bacon over top.
  • Cook's Note: Leftover mashed potatoes work wonderfully in this recipe.
  • House Seasoning:
  • 1 cup salt
  • 1/4 cup black pepper
  • 1/4 cup garlic powder
  • Mix ingredients together and store in an airtight container for up to 6 months.

Twice baked potato casserole is the perfect recipe for leftover mashed potatoes. Just grab a bell pepper, onion, sour cream, cheddar cheese and crispy bacon to put this delicious dish together.

8 tablespoons (1 stick) butter
1 small sliced thin bell pepper
1 small sliced thin onion
to taste Paula Deen's House Seasoning
1/2 cup sour cream
2 cups mashed potatoes
1 1/2 cups grated cheddar cheese
4 medium cooked potatoes
6 slices cooked crisp bacon

Steps:

  • Preheat oven to 350 °F. Spread mashed potatoes evenly on bottom of casserole dish. Layer sour cream evenly over top. (Each time you add a layer, sprinkle on a little House seasoning.) Sauté onion and bell pepper in butter; evenly layer over top of sour cream. Next, layer with 1/2 cup Cheddar cheese. Slice potatoes and layer over cheese until top is completely covered with potatoes. Finally top with remaining 1 cup cheese. Bake for 25-30 minutes. Remove from oven and crumble bacon over top.
  • Leftover mashed potatoes work wonderfully in this recipe.

LOADED BAKED POTATO CASSEROLE

2 (24-ounce) packages refrigerated mashed potatoes, heated according to package directions
½ (8-ounce) package cream cheese, softened
¾ teaspoon ground black pepper
3½ cups shredded rotisserie chicken
2 cups shredded Cheddar cheese
1 (12-ounce) package fresh broccoli florets
¾ cup chopped green onion
6 slices bacon, cooked until crisp and crumbled

Steps:

  • Preheat oven to 375º. Spray a 13x9-inch baking dish with nonstick cooking spray.
  • In a large bowl, stir together potatoes, cream cheese, and pepper until well combined. Stir in half each of chicken, cheese, broccoli, green onion, and bacon. Spread mixture in prepared pan, and layer with remaining chicken, broccoli, green onion, and bacon; sprinkle with remaining cheese.
  • Bake for 30 to 40 minutes or hot and bubbly.

HASH BROWN POTATO CASSEROLE

4 cups grated cheddar cheese
1 (10 oz) can cream of chicken soup
2 cups sour cream
1/2 cup melted butter
1 medium chopped onion
2 teaspoons Paula Deen House Seasoning

Steps:

  • Preheat oven to 400 °F.
  • In a large bowl, combine the diced potatoes, 2 cups of the cheddar, cream of chicken soup, sour cream, butter, onion and House Seasoning.
  • Place in a buttered 9×13-inch pan and bake for 35 minutes. Remove from the oven and top with remaining cheddar. Return to the oven and bake for 10 minutes longer.

1 cup chopped green onion, divided
1 package (12 ounce) fresh broccoli florets, divided
6 slices Smithfield Naturally Hickory Smoked Bacon, cooked, crumbled, and divided

  • Preheat oven to 375º. Grease a 13×9-inch baking dish. Peel back film at corner of each package of potatoes to vent. Microwave on HIGH for 3 minutes. In a large bowl, combine potatoes, cream cheese, and pepper; beat at medium speed with a mixer until combined. Stir in 1¾ cups chicken, 1 cup cheese, 2/3 cup green onion, half of broccoli, and half of crumbled bacon. Spread mixture in prepared dish. Sprinkle with remaining 1¾ cups chicken, remaining broccoli, remaining bacon, and remaining 1 cup cheese. Cover and bake for 45 minutes or until cheese melts and casserole is heated through. Top with remaining 1/3 cup green onion.

4 cups frozen hash browns
7 5/8 ounces instant mashed potatoes with butter and herbs
1/2 cup butter, softened
4 ounces cream cheese, softened
1 cup monterey jack cheese, shredded
1/2 cup sour cream
1/2 teaspoon garlic salt
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups boiling water
2 cups French fried onion rings

Steps:

  • Preheat oven to 350 degrees F.
  • Bring a pot of water to the boil and add the hash browns. Cook for 5 minutes and drain. In a large bowl, mix together the cooked hash browns, mashed potato mix, butter, cream cheese, jack cheese, sour cream, garlic salt, salt and pepper. Stir in the boiling water. Place in a greased 2-quart casserole dish. Bake for 35 to 45 minutes. Sprinkle the onion rings over the casserole and bake for about 5 to 8 minutes longer until onions are golden brown.
