Filling:
1 T Veg oil
4 garlic cloves finely minced
1 t sugar
1/2# ground pork
1 t fish sauce
salt & pepper
1 T toasted long grain rice
Dipping Suace
2 T fresh lime juice
2 T fish sauce
1 T sugar
2 thinly sliced Thai Chiles
1 T water
Serve:
1 thinly sliced Thai Chile
1/4 thinly sliced red onon
1/4 c each torn thai basil, genoa basil, mint

Steps:

  • Filling: in a skillet, heat veg oil. add garlic; cook over moderately low heat, stirring a few times until golden brown (+/- 1 minute). Add sugar, cook for 20 seconds Add pork and cook over moderately high heat until no pink. Add fish sauce, season w salt & pepper Toast Rice: med skillet over moderate heat, shake pan until browned +/- 3 min, cool, grind to a powder Dipping Sauce: combine all ingredients, stir until sugar dissolves Serve: off heat, add "Serve" ingredients to filling, sprinkle with ground rice spoon filling into lettuce leaves, add desired dipping sauce and eat like a taco

16 Boston, bibb or butter lettuce leaves
1 pound ground
1 large onion -- chopped
1/2 Cup pine nuts, chopped (optional)
2 tablespoons minced garlic
1 tablespoon reduced-sodium soy sauce
1/4 cup hoisin sauce
2 teaspoons minced fresh ginger
1 tablespoon rice wine vinegar or red wine vinegar
2 teaspoons Asian chili pepper sauce
1 can (8 ounce size) sliced water chestnuts -- drained, finely chopped
1 bunch green onions -- thinly sliced
2 teaspoons Asian sesame oil

Steps:

  • Rinse lettuce leaves, keeping them whole. Set aside to drain. Cook chicken in a large skillet over medium heat, stirring often to break up the meat. Add onion, garlic, soy sauce, hoisin sauce, ginger, vinegar and chili sauce. Cook until the meat is crumbled and brown. Add water chestnuts, pine nuts and green onions. Cook until onions begin to wilt, about 2 minutes. Stir in sesame oil. Arrange lettuce leaves on the outer edge of a platter. Spoon meat mixture in center. Allow diners to spoon meat mixture into lettuce leaves and eat like a taco.
