30-Minute Pork Chops with Creamy Bourbon Mushroom Sauce are juicy pan seared pork chops topped with a creamy bourbon mushroom sauce!

3 tablespoons extra virgin olive oil (divided)
1½ pounds pork loin chops (seasoned with salt and pepper)
½ cup flour
½ teaspoon salt
¼ teaspoon black pepper
16 ounces mushrooms (stemmed and sliced)
1 medium shallot (peeled and chopped)
1 clove garlic (minced)
½ cup bourbon*
1 cup low sodium chicken stock
1 teaspoon fresh lemon juice
2 tablespoons heavy cream*
1½ teaspoons cornstarch mixed with 1 teaspoon water until smooth*

Steps:

  • Heat 2 tablespoons of the olive oil in a large skillet over medium heat. Place the flour on a dinner plate and toss it gently with salt and pepper. Dredge the pork chops in the flour, shake off the excess, and place in the pan. If all of the chops can't fit in the pan at once without overcrowding it, cook in batches. Cook for 2 minutes per side or until golden brown, then turn and cook another 1-2 minutes. Remove from heat and set aside on a plate.
  • Add the remaining 1 tablespoon of olive oil to the pan and heat over medium. Add the mushrooms, shallots, and garlic, and cook for 5 minutes, or until the mushrooms are softened and the liquid has evaporated, adding more oil to the pan if it becomes dry.
  • Add the bourbon and scrape up the brown bits from the bottom of the pan. Reduce to 2-3 tablespoons. Add the chicken stock and reduce by half.
  • Add the pork chops back to the pan with their juices to continue cooking until the internal temperature reaches 145 degrees, or about 1-2 minutes longer. While the chops cook, add the lemon juice and cream and stir to combine. Add the cornstarch slurry, stirring until incorporated. Cook just long enough for the sauce to thicken, about 1-2 minutes longer. Adjust the seasoning as necessary and remove from heat.
  • Serve and enjoy!

Smothered Pork Chops with Bourbon and Mushrooms image

This is a updated version of my mom's pork chops with cream of mushroom soup. I don't care for the canned soup due to the high sodium. I use cream, mushrooms, onions and bourbon along with beef stock to make a sauce that is out of this world. I like to serve this with mashed potatoes and grilled asparagus.

4 (8 ounce) center-cut pork chops
salt and ground black pepper to taste
2 tablespoons vegetable oil
2 tablespoons butter
2 cups thinly sliced onion
1 (8 ounce) package thinly sliced baby bella mushrooms
1 teaspoon white sugar
¼ cup bourbon
1 ½ cups beef broth
½ cup heavy cream
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Season pork chops with salt and pepper. Heat oil in a frying pan over medium-high heat. Add pork chops; cook until browned, 3 to 4 minutes per side. Place browned chops in a 9x13-inch baking dish. Wipe out any residual oil from the pan.
  • Melt butter in the same pan over medium heat. Add onion, mushrooms, and sugar. Cook and stir for 1 minute. Cover pan and reduce heat to medium-low. Simmer mixture until onions are softened, about 10 minutes. Uncover pan and stir the mixture, scraping up browned bits from the bottom. Continue cooking onions for about 3 minutes more.
  • Pour bourbon into the onion mixture; cook until mostly evaporated, 3 to 4 minutes. Add broth and cream; bring to a simmer. Cook for 10 minutes; pour over the browned chops in the baking dish. Cover with aluminum foil.
  • Bake in the preheated oven until an instant-read thermometer inserted into the pork reads 145 degrees F (63 degrees C), 25 to 30 minutes.

1/2 pound sliced fresh mushrooms
2 tablespoons chopped onion
2 tablespoons olive oil, divided
1 tablespoon butter
1 garlic clove, minced
1/4 cup white wine or reduced-sodium chicken broth

1/2 cup reduced-sodium chicken broth
1/4 cup heavy whipping cream
2 boneless pork loin chops (6 ounces each)

2 pounds boneless pork chops
½ teaspoon paprika
1 pinch kosher salt and ground black pepper to taste
¼ cup butter, divided
1 (8 ounce) package sliced fresh mushrooms
4 cloves garlic, minced

2 tablespoons all-purpose flour
2 cups beef broth

Steps:

  • Season both sides of pork chops with paprika, salt, and pepper.
  • Heat a large skillet over medium-high heat; add 2 tablespoons butter. Sear pork chops until golden brown and no longer pink in the center, 2 to 4 minutes per side. Remove pork chops from the skillet and set aside.

2 tablespoons olive oil
1 lb button mushroom, sliced
1/4 cup chopped onion
2 large garlic cloves, chopped
1/2 cup dry white wine
1 cup chicken stock
1/2 cup heavy cream
1/4 cup bourbon whiskey
coarse salt
fresh ground black pepper
1 large egg
2 tablespoons water
4 center-cut pork chops, about 6 - 7 ounces each
all-purpose flour
2 cups plain dried breadcrumbs
3 tablespoons olive oil
2 tablespoons minced fresh basil

Steps:

  • Saute the mushrooms, garlic and onions in a large skillet with olive oil over medium-high heat. Saute until the mushrooms are browned; about 15 minutes.
  • Add the wine. Turn the heat up to high and boil until the liquid has thickened and becomes the consistency of a glaze; about 4 minutes.
  • Add the stock and bourbon. Boil the mixture until it is reduced by two-thirds.
  • Add the heavy cream and simmer until the sauce thickens; several minutes.
  • In a shallow baking dish, whisk together an egg and 2 tablespoons of water.
  • Sprinkle salt and pepper evenly on both sides of the pork chops.
  • Add flour to a small bowl. To another small bowl, add the breadcrumbs.
  • Dip the pork chops into the flour and coat evenly.
  • Next dip the chop into the egg mixture then into the breadcrumbs, coating evenly.
  • In a large skillet, heat the oil over medium-high heat. Add the pork chops and cook for 4 minutes per side or until browned. Flip the chops over again, cover and lower the heat and cook for another 5 minutes.
  • Bring the sauce to a simmer and add the chopped basil to the skillet. Season to taste with salt and pepper.
  • Serve the sauce drizzled over the pork chops.

4 center-cut, bone-in, rib pork chops (about 3 pounds)
2 teaspoons kosher salt
Freshly ground black pepper
2 tablespoons vegetable oil
2 tablespoons unsalted butter
1/4 cup bourbon
1/2 cup low-sodium chicken broth
1 tablespoon grainy mustard
3 tablespoons heavy cream

Steps:

  • Preheat a large skillet over medium-high heat, for about 1 minute or until the surface of the pan is uniformly hot. Pat the chops dry, and season the chops on one side with salt and pepper. Add the oil and heat until shimmering. Add the chops seasoned side down and cook until the chops are brown, about 3 to 4 minutes. Add the butter and cook for 1 minute more. Season the top side of the chops, and turn the chops over. Continue cooking until firm and an instant-read thermometer registers 140 degrees F, about 4 to 5 minutes more. Transfer the chops to a plate, tent with foil and set aside to rest.
  • Pour off any fat remaining in the skillet. Pull the pan from the heat and carefully add the bourbon. Return the pan to the heat and tip the pan slightly to ignite the alcohol. Cook until reduced by half then add the chicken broth and bring to a simmer, scraping up any browned bits on the bottom of the pan with a wooden spoon. Simmer for 3 minutes, then whisk in the mustard and the cream. Simmer the sauce until it coats the back of a spoon, about 1 to 2 minutes more. Adjust the seasoning with salt and pepper and serve with the pork chops.

1 tablespoon grapeseed oil
2 (1 1/2-inch) pork chops
Salt and coarsely ground black pepper
Madeira Sauce, recipe follows
2 tablespoons butter, divided
1 tablespoon minced shallots
1 tablespoon minced garlic
5 to 6 cremini mushrooms, sliced
1 tablespoon all-purpose flour
1/2 cup Madeira wine
1/4 cup beef broth
1 teaspoon chopped fresh thyme leaves
1 tablespoon chopped fresh parsley leaves

Steps:

  • Preheat oven to 400 degrees F.
  • In a large cast iron skillet over medium-high heat, add the grapeseed oil. Allow the oil to smoke slightly. Season each pork chop with salt and pepper, to taste, and add to the pan. Sear on each side for 2 minutes. Once nicely browned on each side, transfer the chops to a sheet pan with a rack and bake in the oven for an additional 6 to 8 minutes. Remove the chops from the oven to a serving platter. Reserve the pan for the Madeira Sauce.
  • In same skillet that the chops were seared, add 1 tablespoon of the butter, the shallots, garlic, and the mushrooms. Cook over medium-high heat until slightly caramelized. Add flour and mix to a paste. Add the Madeira wine and deglaze the pan. Lower the heat, add the beef broth and simmer for a few minutes. Remove from the heat and mix in the remaining butter and the fresh herbs. Once the butter has melted, pour the sauce over the pork chops and serve.

This originally came from Real Simple Magazine and lends itself well to improvisations. On the night I made it I realized I did not have any mushrooms so I left those out. My husband thought it was wonderful.

1 tablespoon salt
1/4 teaspoon paprika
1/4 teaspoon fresh ground black pepper
4 pork chops (originally called for "pork rib chops" I used boneless center cut chops)
2 tablespoons olive oil
1 tablespoon butter (I actually used Pam spray for oil and butter)
1 lemon, cut into wedges
1 tablespoon butter
1 small onion, diced
2 garlic cloves, minced
1 1/2 lbs button mushrooms, sliced 1/2 inch thick
1 teaspoon fresh thyme
1/2 teaspoonlemon, zest Anjou pear
1/2 cup white wine (had no wine, used sherry)
2 cups chicken broth (I only used about a cup)
1 cup heavy cream (I used about 1/2 cup Land O'Lakes Fat Free Half & Half)
1/2 teaspoon salt (didn't use)
1/2 teaspoon fresh ground black pepper (used a dash of cayenne instead)

Steps:

  • For the chops:.
  • Mix salt, paprika and pepper in a small bowl, rub onto chops.
  • Heat oil& butter (or Pam) in a large skillet over medium-high heat.
  • Brown chops 3 minutes per side.
  • Cover, reduce to medium and cook until inside is just pink and juices run clear when pricked, about 10 mins; flip chops halfway thorough.
  • (Since I was using very thick chops I started them off in the pan as directed and finished them in the microwave.) Serve with Mushroom Sauce and lemon wedges.
  • Mushroom Sauce.
  • Melt butter over medium heat.
  • Add onion and garlic, saute until translucent, about 4 minutes.
  • Add mushrooms and cook until they release their liquid and begin to brown, about 10 minutes.
  • (I had actually planned to use canned mushroom slices and wouldn't have cooked it 10 miutes).
  • Add thyme, zest and wine/sherry, and the broth; simmer until liquid is reduced by half, about 5 minutes.
  • Stir in cream, salt and pepper, simmer until lightly coats back of spoon.
  • (Since the fat free half& half doesn't thicken that well, I used less liquid to begin with, and I always turn off the pan before adding the half& half.) Prep time and cook time is combined for both.
  • Most of the chop cook time was pretty passive, but the sauce was more active.
