SLOW COOKER POOR MAN'S STEW
A delicious stew made from scratch with ground beef instead of stew meat to save money!

Steps:
- Add the cooked ground beef, potatoes, carrots, onions, and garlic to a 5-quart or larger slow cooker.
- In a small bowl whisk together the tomato paste, water, salt, pepper, onion powder and oregano. Pour this mixture over everything in the slow cooker. Stir.
- Cover and cook on LOW for 7 hours, without opening the lid during the cooking time.
- Serve with buttered sandwich bread or rolls and Enjoy!

- Prepare the vegetables, peel and slice the carrots, potatoes and any other vegetables you choose.
- Chop the onion and add to a large pan with a tablespoon of olive oil. Under a medium heat, allow the onions to soften, then add the garlic and ground meat. Stir until evenly browned.
- Add the remaining ingredients except for the liquid cornstarch and broth. Combine everything in a pan and allow to simmer with the lid on for 5 minutes.
- Add the broth and Cornstarch. Stir well then return the lid and allow to simmer for 35 minutes.
- *After this time, if you want more gravy in the pan, just add a little hot water until it's to your liking. Bring everything back to the boil. Season with salt and pepper to taste.
- Serve with some slices of buttered bread and enjoy!

SLOW COOKER POOR MAN'S STEW
A budget friendly meal that costs less than $2 per serving! This recipe is Whole30 and Paleo compatible, and you can make it in the Slow Cooker, Instant Pot, OR Dutch Oven!

- Heat a medium sized skillet over medium heat. Add the beef to the skillet, using a spatula to turn the meat and break it apart as it cooks. Transfer the cooked meat to the slow cooker.
- Dice the carrots, onion, and potatoes. Mince the garlic.
- Add all the recipe ingredients (except peas, if using) to your slow cooker and use a large spoon to mix everything together. Cover and cook on low heat for 4-5 hours or high heat for 2-3 hours. If using frozen peas, add them in the last 30-45 minutes so that they cook through but aren't mushy. Test to make sure the vegetables are cooked through and tender, then season to taste with salt and pepper and serve.
- Set your Instant Pot to Sauté mode. Add the beef and cook for about 5 minutes, breaking it apart and turning with a spatula as it cooks.
- Dice the carrots, onion, and potatoes. Mince the garlic.
- Add all the recipe ingredients (except peas, if using) to your Instant Pot. Cover and turn to High Pressure for 15 minutes. Allow for a Natural Pressure Release (do nothing and allow the pressure to naturally dissipate) for at least 10 minutes, then turn the steam release valve. Carefully open the Instant Pot.
- If using frozen peas, stir them into the stew now. Set the Instant Pot back to Saute mode and cook together, stirring occasionally, for about 10 minutes.
- Season to taste with salt and pepper and serve.
- Place your dutch oven on the stovestop and turn the heat on the burner to medium. Add the ground beef. Cook for about 5-6 minutes, using a spatula to turn the meat and break the pieces apart as it cooks.
- Dice the carrots, onion, and potatoes. Mince the garlic.
- Add all the recipe ingredients (except peas, if using) to your dutch oven. Stir together. Bring to boil, then lower the heat, cover, and simmer for about 45 minutes, opening and stirring occasionally.
- If using frozen peas, stir them into the stew the last 10-15 minutes.
- Season to taste with salt and pepper and serve.

- Brown ground beef in sauce pan.
- Place browned ground beef in large pot with 1 medium onion- diced, bay leafs, soups.
- Add pepper, garlic powder, oregano, sliced carrots and potatoes.
- Simmer ¾- 1 hour.
- Thicken with 2 tbs of corn starch (in some water); gradually.
- Enjoy with fresh bread.
- Edited to add - I made it a few days ago with beef broth and it was just as good :).

A delicious and cheap recipe that I came up with when I needed to use the last potatoes and carrots before they went bad. It's one of my favorites to make.

Steps:
- Boil water in a large pot.
- Add carrots and potatoes and boil 10-15 minutes until tender.
- Drain and set aside.
- Meanwhile, brown meat in a large skillet.
- Drain well.
- Add 3/4 or full can of corn (depending on preferance) to meat.
- In a small pot combine soup and corn juice (use less for thicker stew).
- Heat over med-low until warm.
- Add potato and carrots to meat.
- Pour soup over top and stir gently.
- Heat if neccesary.

POOR MAN'S STEW
I got this recipe from one of my (many) mother-in-laws. She recited it to me over coffee one morning, and I've never forgot it - it's that easy and fast! My kids liked this when they were in elementary school. But later, they liked to make it when they where on their own for the first time. It's also not a bad camp fire recipe.

Steps:
- 1. Brown hamburger in a dutch oven, drain off fat, add tomato soup and 1 can of water, add potatoes and carrots. Bring to a boil, lower heat and simmer until carrots are fork tender.
- 2. If you dice the vegetables smaller it will cook faster - in case everyone is really hungry.
