I used to make this dish when my children were small. It is a fast and simple way to prepare chicken to stretch for more than one meal. Once you try it, you will be hooked, because the flavor is outstanding! This is also an excellent recipe for a ladies luncheon. The cooked chicken can also be served hot and sliced as an entree with butter and lemon, just like crab! Enjoy!

2 - large chicken breasts, skin, bones, fat removed
1 - heaping tablespoon of dry leaf dill
2 - teaspoons chicken base (works better than bouillon)
FILLING FOR ONE SANDWICH:
1/2 - prepared chicken breast, chilled and diced
2 - small ribs of celery, chopped fine
1 - tablespoon red onion, chopped fine
4 - small sweet baby gherkins pickles, snackables, chopped
2 - teaspoons real mayonnaise, using just enough to hold it together
- kosher salt and coarse black pepper to taste
- choice of bread

Steps:

  • COOK THE CHICKEN Prepare the chicken the day before, remove skin, bones and fat. Cut each breast in half. Add water to a medium size sauce pan, a cup to start, then add the chicken soup base and the leaf dill and mix well. Turn the heat on to medium high and add the chicken to the sauce pan, adding more water to just cover the chicken.
  • Bring the chicken to a boil and cover and simmer until tender. (About 20 minutes) The leaf dill is what gives this chicken its wonderful taste, so don't omit. If you are making sandwiches, refrigerate the chicken in the broth overnight, then drain and dice the chicken.
  • FOR SANDWICHES: Dice the chilled prepared chicken breast, add the red onion, celery and baby Gherkins pickles and mayonnaise. Gently mix the salad, together, and add the salt and pepper to your taste.
  • Serve on a toasted bagel, open faced (it is delicious on a toasted gluten-free English muffin) or use your choice of bread. We like it with salt and vinegar potato chips on the side.
  • FOR DINNER: This chicken is delicious served sliced and hot from the sauce pan. Drizzle some melted butter and squeeze a wedge of lemon over it, and serve with your favorite sides. Now you know why it is called "Poor Man's Crab". Enjoy!

0.25 units cabbage
0.25 cups oil
3 tablespoons vinegar
3 tablespoons lemon juice
1 cloves garlic
1 units salt

Steps:

  • Finely shred or chop cabbage in a salad bowl.
  • In a mixing cup add oil, vinegar, lemon juice, and crushed garlic clove. Salt to taste. Mix dressing well and taste test, you may need to adjust with one of the above ingredients.
  • When taste is right pour over cabbage and mix the dressing through. Serve as a side salad with BBQ meats or fish.

32 ounces fruit cocktail, drained
1 cup miniature marshmallow
1 banana, sliced

Steps:

  • Mix all ingredients together and refrigerate several hours. Is best after a day or two.
  • Cooking time includes refrigeration time.

Growing up in the country yrs ago, we made this and loved it; I just made it again and found it is still as good as when I was a kid who didn't realize she was poor because she was happy on the farm....We couldn't afford the ham for it so we used our version of the poor man's steak and ham...good 'ole bologna....Brings back...

2 lb deli bologna cut in a chunk
8 oz block sharp cheddar cheese/or a pkg already shredded
6 eggs, hard boiled
2 medium dill pickles
3/4 c mayonnaise

Steps:

  • 1. take the bologna and shredd it up; usually I use a food processor but this time I used my grater and it worked fine with less clean up...Shred it in a large mixing bowl
  • 2. Shred the Cheese to the mix; or add the pkg. shredded cheese
  • 3. Shred the eggs with the grater; i found this so quick and easy; I use to chop my eggs for egg salad or recipes for chopped eggs but this time they just slid right over the grater and was so fast and easy..shred this into the mix in the bowl
  • 4. Shred the whole dills into mix as well...
  • 5. Add Mayonnaise to the mixture and stir well to blend it all together....adjust the mayo to taste; more or less depending on desired consistency...
  • 6. Taste test to make sure it is good;))) Put in container in fridge to chill and use it for sandwiches... So easy and so delicious....like I said earlier; it is my version of the poor man's ham salad and just as good;))))

When I was growing up, my Grandmother would make wonderful things on a very tight budget. A really great cook can take the cheapest ingredients and make astonishing things with them. I never knew she was using Bologna for this Ham Salad until I was older. I make this now for a group of friends and they call often to let me know...

3 pkg chicken-pork bologna
1~1 1/2 c real mayonaise
2 Tbsp yellow mustard
1/2 bottle sweet pickles
1 small white onion, diced (optional)
2 small jalapeno peppers, chopped (optional)

Steps:

  • 1. You'll need a grinder for this. The old crank type or electric, it you have one. Grind the Bologna through a coarse grind plate.
  • 2. Grind the Sweet Pickles into the ground Bologna, adding some of the juice to make moist. (You certainly can use Sweet Pickle Relish if you like) I've also used "Bread n' Butter" pickles when I was out of Sweet.
  • 3. My figures for the Mayo, Mustard etc. are approximate as I make a much larger batch and do it all by sight and taste. Mix the Mayo in first, then Mustard.
  • 4. I don't add the diced onion, because although it adds texture and taste, you can't hold this long w/ raw onion in it. Instead, I use a Jalapeno Relish that has pickled onion in it. It's available at Mexgrocer.com I add this after finishing for those whom desire a little kick, leave the main batch without.
  • 5. When it's all mixed and to your taste, pack in clean jars or Tupperware. It'll hold in the refrigerator for two weeks and better. If it begins to get a bit dry, just mix a little more Mayo into it.
  • 6. This is great on sandwiches and also works well as a canape or cracker topper, just sprinkle a little Paprika on it to look pretty.
  • 7. My first time to post anything here, so I hope I've been clear and haven't broached any protocols...LOL

Pierogies in a pan! This is a wonderful, rich casserole that tastes just like potato and cheese pierogies (without all the fuss!) Nice, hearty comfort food!! Can be served as a main dish with veggies or a salad, or as a side dish.

9 -12 lasagna noodles
1 1/4 cups butter (no substitutes!)
4 medium onions, sliced
10 -12 medium potatoes, peeled and cubed
1 dash salt and black pepper
1 (1 lb) box Velveeta cheese, cubed
grated parmesan cheese

Steps:

  • Saute onion in 1 stick butter until tender.
  • Cook noodles as directed on box.
  • Boil potatoes, then mash.
  • Add cubed cheese, salt, pepper, and remaining butter to potatoes and mix until well combined.
  • Put layer of noodles in 9x13-inch baking dish.
  • Layer 1/3 of sauteed onions over noodles, then 1/3 of potato mixture.
  • Repeat layers, ending with potatoes on top.
  • Sprinkle with Parmesan cheese.
  • Bake at 350°F for 30-35 minutes.

I don't know why it is called 'Poor-Man Sandwich'. But I do know it is a long time family recipe that tastes GREAT!!. It may sound strange, however you have to try it to understand what it is. Enjoy!!!!

2 slices whole wheat bread
6 slices dill pickle
1 tablespoon thinly sliced onion
2 teaspoons mayonnaise

Steps:

  • Spread peanut butter onto one slice of the bread. Place pickle slices and onion slices onto the peanut butter. Spread mayonnaise onto the other slice of bread, and place on top of the other piece of bread.
